PETER'S GARLIC GINGER PORK CHOPS

Hubby cooks on the weekends so he tries to come up with something different each time. The sour cream in this helps to keep the pork moist and tender. Measurements are a guess as he didn't keep track of how much he used.

Number Of Ingredients 7

4 pork chops (with bone, about an inch thick)
salt and black pepper
1/2 cup sour cream
1 1/2 teaspoons fresh ginger, grated
3 garlic cloves (finely minced or grated)
2 teaspoons prepared mustard (we used wholegrain)
1 tablespoon tomato puree (or paste)

Steps:

  • Preheat the grill/broiler.
  • Line your grill pan with foil (for easy clean-up) and sit the rack on the foil.
  • Season the chops with salt and pepper and set on the rack.
  • In a small bowl, combine the sour cream, ginger, garlic, mustard and tomato puree.
  • Brush half of the mixture on chops.
  • Cook under the grill for about 5-7 minutes. Remove pan and flip over the chops. Brush with remaining mixture and grill for another 5-7 minutes until pork is no longer pink inside.
  • Serve.

4 pork chops, 1 inch thick
1 cup soy sauce (low sodium is ok)
1 piece fresh ginger, peeled and thinly sliced
4 cloves garlic, thinly sliced
1 teaspoon fresh ground black pepper
1 cup dried breadcrumbs
2 tablespoons sesame seeds
cooking spray

Steps:

  • Place pork chops, soy sauce, ginger garlic and black pepperinto a large resealable plastic bag.
  • Shake well to combine flavors.
  • Refrigerate for at least two hours, longer if possible.
  • Heat oven to 350 degrees.
  • In shallow dish combine breadcrumbs and sesame seeds, coat chops on all sides.
  • Place on a baking sheet, sprayed with cooking spray, and bake approximately 45 mins.

A pleasant combination of honey, soy sauce and ginger glazes these tender pork chops and makes them seem special. Serve with buttered green beans and instant mashed potatoes as shown in the photo above right. Or complete the meal with peas and scalloped potatoes from a boxed mix.

2 bone-in pork loin chops (3/4 inch thick)
1 teaspoon cornstarch
2 tablespoons soy sauce
1/4 cup honey
1 garlic clove, minced
3/4 tablespoon grated fresh gingerroot
1 tablespoon sliced green onion

Steps:

  • Broil pork chops 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving., Meanwhile, in a small saucepan, combine cornstarch and soy sauce until smooth. stir in the honey, garlic and ginger. Bring to a boil; cook and stir for 1 minute or until thickened. Drizzle over the pork chops. Sprinkle with green onion.

4 4oz Pork Loins boneless
2 T Brown Sugar
2 t Paprika ( used hot Hungarian because that's how I roll)
2 t Coriander ground
1/2 t Crushed Red Pepper
1 T Ginger minced
2 t Garlic cloves minced
Green Onion for garnish ( optional)
S&P to taste

Steps:

  • Lightly score a diamond pattern on both sides of pork. Combine the rest of the ingredient's, except green onion, into a small bowl and mix. Rub evenly over pork. Heat a large non stick skillet over medium high heat. Add oil. Add pork. Cook on each side until done. About 5 mins each side. Garnish with green onion.
