1 package (17.3 ounces) frozen puff pastry, thawed
1/2 cup prepared pesto
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 400°., Unfold puff pastry sheets on a lightly floured surface. Roll each sheet into a 12-in. square. Spread pesto onto 1 pastry sheet to within 1/4 in. of edges. Sprinkle with cheese. Top with remaining pastry, pressing lightly. Cut into twelve 1-in.-wide strips. Twist each strip 4 times. Place 2 in. apart on parchment-lined baking sheets, pressing down ends., Bake 12-15 minutes or until golden brown. Serve warm.

A delicious pesto with traditional ingredients. This has been booted up with some southern fried kick. You can spray ice cube trays with cooking spray and spoon in pesto, freeze until hard, and store in freezer in a resealable plastic bag.

1 ½ cups firmly packed basil leaves
1 cup firmly packed spinach leaves
½ cup fresh flat-leaf parsley
5 cloves garlic, crushed
½ cup toasted pecans
1 tablespoon lemon zest
½ lemon, juiced
1 cup grated Parmesan cheese
½ cup grated Pecorino Romano cheese
½ teaspoon cayenne pepper
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
1 cup olive oil, or as needed

Steps:

  • Blend the basil, spinach, parsley, garlic, pecans, lemon zest, lemon juice, Parmesan cheese, Pecorino Romano cheese, cayenne pepper, sea salt, and black pepper in a food processor until all ingredients are integrated. With the food processor running, slowly drizzle the olive oil into the mixture until the mixture forms a paste.

After picking my first fresh wild garlic, I had to find a way to use masses of wild garlic. This recipe is super quick and the color and taste will never make you want to use store-bought pesto again! Freezing it works nicely as well!

2 cups wild garlic cloves
1 ½ cups chopped fresh basil
½ cup avocado oil
¼ cup olive oil
¾ cup grated Parmesan cheese
¼ cup pine nuts
salt and ground black pepper to taste

Steps:

  • Pulse garlic, basil, avocado oil, and olive oil in a food processor until garlic and basil are roughly chopped. Add Parmesan cheese and pine nuts; process until a smooth paste forms. Season with salt and black pepper.
