The basil, garlic, pine nuts and Parmesan in the pesto pack a powerhouse of flavor into this easy cheesy appetizer.

6 slices French bread, 1 inch thick
1/3 cup basil pesto
1 small tomato, seeded and chopped (1/2 cup)
1/2 cup shredded mozzarella cheese (2 ounces)

Steps:

  • Heat oven to 375°F. Place bread on ungreased cookie sheet. Spread with pesto. Top with tomato. Sprinkle with cheese.
  • Bake about 8 minutes or until hot and cheese is melted.

  • Top with tomato and sprinkle with cheese.
  • Bake about 8 minutes or til hot and cheese is melted.

  • Arrange the tomatoes in a single layer on the prepared sheet pan. Drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper. Roast for 25-30 minutes until they are wrinkled the edges and are somewhat dried but still juicy in the center. (The tomatoes can be made up to 2 weeks in advance. Store in the refrigerator.)
  • Drizzle the bread with the remaining olive oil. Spread the the pesto on the bread Arrange the tomatoes on top and sprinkle with the chives and Parmesan before serving.
