TURKEY PESTO MEATLOAF

Turkey Pesto Meatloaf image

Number Of Ingredients 15

4 cups loose basil leaves
1/4th cup raw almonds
Juice from half a lemon
1/4th cup freshly grated parmesan cheese
3 cloves garlic
1/3 cup extra-virgin olive oil (maybe a little more if you prefer)
Salt and pepper
2 pounds ground turkey (I used 1 & 1/2 pounds in these photos, but craved a little more)
1 medium yellow onion, diced
3 cloves garlic, minced
1 Tbs. extra-virgin olive oil
1/2 cup panko
Parmesan for garnish
1 jar favorite marinara
1 head broccoli, boiled or steamed, then served with a pinch of salt and lemon wedges

Steps:

  • Preheat oven to 350.
  • In a food processor, combine the basil, almonds, lemon juice, parmesan cheese, garlic, and a pinch of salt. With the motor running, add the oil in a thin stream, until it becomes a pesto consistency.
  • Heat the other Tbs. of oil in a large sauté pan. Add the diced onion and sauté for 3-4 minutes, or until the onions soften and begin to brown. Add the minced garlic and sauté another 30 seconds, until fragrant. Season with a pinch of salt.
  • In a large bowl, combine the ground turkey, most of the pesto (reserve about 1/4 cup), panko and the onion/garlic mixture. Using your bands, press and combine everything together until well incorporated. Make a loaf shape with your hands, either on a baking sheet or a loaf pan. Bake for 30 minutes, then remove from the oven and brush the remaining pesto over the top. Bake for 30 more minutes.
  • In the meantime, simmer your favorite marinara (homemade or store-bought) and drizzle it over the meatloaf slices when serving.
  • Serve with steamed lemon broccoli, extra lemon wedges and freshly grated parmesan. SO LIGHT! SO GOOD! Sorry to scream.
  • Serves 4.

PESTO MEAT LOAF

MEAT LOAF

Meat Loaf image

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

BISON MEAT LOAF #1 (BUFFALO)

Bison Meat Loaf #1 (Buffalo) image

Whenever possible, I buy grass fed Bison instead of ground beef. The flavor is much sweeter and because of the higher protein content, smaller portions are more satisfying. No antibiotics, no pesticides in the feed, no preservatives and no growth hormones. Even better, less fat, cholesterol and calories PLUS more iron, protein and B-12 than ground beef! A richer flavor and completely HEALTHY! I hope you enjoy this yummy recipe as much as we do.

  • Pre-heat your oven to 350 degrees. Making meat loaf is pretty simple, everything goes in the bowl and you mix it up. Use half the pesto and half the Parmesan in the loaf the rest is going on top. Some people like the veggies diced really small and will use the food processor; I just give a good chop with the knife. Don’t over work the meat when you are mixing.
  • Next get your baking sheet ready by lining it with parchment paper, be sure to us a pan with an edge all the way around like a jelly roll pan so you don’t have any liquid dripping into your oven. Using the pesto in this recipe will result in quite a bit of olive oil rendering out of the loaf as it bakes, so an edge on the pan is important. Form the meat into a loaf either with your hands or using a loaf pan as a mold.
  • Place the meat on the baking sheet and into the oven for 35-40 minutes, then top the loaf with the reaming pesto and Parmesan. Then return to the oven for about 20 minutes or until internal temperature is a least 155 degrees.
