Pescado a La Bilbaína (Seared Fish W/ Sherry Vinegar) image

A dish from Bilbao, Spain. Garlic and chiles are sizzled in olive oil which is sprinkled over the mild white fish of your choice, along with sherry vinegar. This recipe is from the San Francisco Chronicle, 1/10/07. I haven't yet tried it.

2 (6 ounce) white fish fillets, with skin on (two 6 ounce filets of Tai snapper or other mild fish)
kosher salt
2 teaspoons extra virgin olive oil
2 1/2 tablespoons extra virgin olive oil
3 large garlic cloves, sliced
1 small dried red chili, seeds removed, broken into small pieces
2 teaspoons sherry wine vinegar
2 teaspoons minced Italian parsley

Steps:

  • Sprinkle a generous amount of kosher salt on both sides of the fish filets.
  • Heat skillet over medium-high heat. Add 2 teaspoons of olive oil and spread it across the entire skillet. When it's hot, add the fillets with the skin side down.
  • Reduce heat to medium-low and cook fish until it turns from opaque to white (approximately 8-10 minutes for most fillets). You may cover the skillet to complete the cooking process if you need to.
  • When the fish flesh has mostly turned white, pour 2 1/2 tablespoons of olive oil into a small saucepan along with the chile pieces and sliced garlic. Heat on medium-low until the garlic begins to sizzle and become golden in color. Do not let the garlic brown.
  • Transfer the fish fillets carefully to two dinner plates using a spatula. Immediately splash each fillet with 1 teaspoon of sherry vinegar. Then spoon the hot oil/garlic/chile mixture over each piece of fish.
  • Garnish with minced parsley and serve.

1/4 cup tequila
1 cup freshly squeezed lime juice
1/2 cup fresh lemon juice
1/2 cup sugar
1 jalapeno, stemmed, seeded and coarsely chopped
3/4 cup green onion, chopped
1 cup chopped cilantro leaf
1 teaspoon garlic
1/2 teaspoon salt
1 lb large scallop
1 tablespoon olive oil
1 fresh lime, quartered
3 teaspoons fresh cilantro, minced

Steps:

  • Place all the ingredients, except the scallops and olive oil,in a blender or food processor.
  • Puree.
  • Taste the mixture and add more jalapeno as desired.
  • Transfer the mixture to a mixing bowl and set aside.
  • Rinse the scallops in cold water and pat dry.
  • In a non-stick saute pan oer high heat, heat the olive oil just until smoking.
  • Add the scallops to the saute pan and seaar well without stirring or tossing.
  • Add the citrus mixture to the pan and bring to a boil.
  • When the liquid reaches a boil, turn the scallops and cook for 1 minute more.
  • Remove the scallops, cover to keep warm and reduce the sauce to half its original volume over high heat.
  • Divide the scallops among the plates.
  • Pour the liquid from the pan directly over the plates.
  • Garnish with lime wedges and cilantro.
  • Enjoy.

10 medium potatoes (new or red a good choice or Yukon Gold potatoes)
1 lb Mexican blend cheese or 1 lb feta, work well
6 red sweet peppers (use small sweet red and orange Ajies peppers. When using whole ajies, first clean out the seeds)
1/4 small habanero pepper (clean out the seeds or be careful it is very hot)
1 cup evaporated milk
1/2 cup vegetable oil
2 garlic cloves
salt and pepper
lettuce
3 hardboiled egg
black olives

Steps:

  • Boil, peel and cut in slices potatoes (Yukon Gold potatoes).
  • In a blender, mix the cheese, peppers, milk, oil, garlic, salt and pepper. The sauce should be fairly thick; add more cheese and olive oil if not, or add milk is too thick.
  • Lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hard boiled eggs in quarters or halfs and place on top of the potatoes. Add black olives if desired.
  • This dish can be served slightly cold.

1 -2 garlic clove, coarsely chopped

fresh ground black pepper
1 1/2 tablespoons sherry wine vinegar (or aged red wine vinegar)
1 teaspoon Dijon mustard
6 tablespoons extra virgin olive oil

Steps:

  • Pound the garlic with 1/4 teaspoons salt in a mortar and pestle until it breaks down into a puree. If you don't have a mortar and pestle, chop the garlic, then use the side of a large knife and press the garlic with the salt to make a paste.
  • Combine the garlic, vinegar, and mustard in a small bowl, then whisk in the oil and seasoning with pepper.

4 medium red bell peppers
1/2 cup extra virgin olive oil (preferably Spanish)
4 garlic cloves, peeled and thinly sliced
1/4 cup water
2 tablespoons sherry wine vinegar
salt
1 teaspoon flat leaf parsley, chopped

Steps:

  • Heat the oven to 400 F degrees.
  • Brush the peppers with a thin film of the olive oil and place them in a roasting pan.
  • Roast for 30 minutes, turning them over every 10 minutes until all sides are browned. Remove the pan from the oven and allow the peppers to cool.
  • Peel, seed and tear them into strips. Set aside.
  • Heat the remaining oil in a medium saucepan over medium heat. Add the garlic and cook until brown, about 1 minute.
  • Add the peppers and water, cover the pan, and cook on low heat until sauce has a silky texture and becomes emulsified, about 30 minutes.
  • Add the sherry vinegar, salt to taste, and the parsley. Serve at room temperature or allow to cool.
