CHUPE (PERUVIAN SHRIMP CHOWDER)



Chupe (Peruvian Shrimp Chowder) image

Chupe is a traditional Peruvian chowder made from zapallo and seafood. Zapallo is a very large, pumpkin-like squash; however, it is brighter and sweeter than a regular pumpkin. Because it is not widely available I've substituted a butternut squash which comes close in sweetness and texture. Some recipes call for cream cheese but I prefer feta, as it balances out the sweetness of the squash very nicely.

2 tablespoons olive oil
1 large red onion, chopped
salt to taste
2 ½ cups cubed butternut squash
3 cloves garlic, minced
ground black pepper to taste
4 cups chicken stock
2 ears fresh corn, each cut into 4 pieces
¼ cup peas
¼ cup white rice
½ pound uncooked medium shrimp, peeled and deveined
1 (6 ounce) package brine-packed feta cheese, crumbled, brine reserved
½ cup milk

Steps:

  • Heat oil in a skillet over low heat; cover bottom evenly with onion. Sprinkle with salt and cook, without stirring, until onion is very tender and fragrant, about 15 minutes. Stir in butternut squash and garlic; season with pepper. Cook until squash begins to soften, about 15 minutes.
  • Increase heat to medium-high. Pour chicken stock into the pan and bring to a boil while scraping any browned bits off the bottom of the pan with a wooden spoon. Reduce heat to low and stir in corn, peas, and rice. Cover and simmer until rice is cooked, 10 to 20 minutes. Add shrimp and simmer until they are bright pink on the outside and opaque, about 5 minutes.
  • Stir in feta cheese, brine, and milk. Let feta melt a bit and serve immediately.

500 grams Shrimps (peeled (heads and shells reserved))
5 cups Water
1/3 cup Flour
1/3 cup Butter
½ Yellow Onion (diced)
1 Red Bell Pepper
2 cloves Garlic (minced)
1 tbsp Tomato Paste
1 Ear Corn (cut into 2" segments)
1 Medium Potato (diced)
½ cup Green Peas
1 cup Heavy Cream
1 tsp Dried Oregano
Salt and Powdered Cayenne to taste

Steps:

  • Combine shrimps heads and shells with two cups of water and half a teaspoon of salt in a pot. Bring to a boil and simmer over medium heat for 15 minutes. Strain out the shells and discard.
  • Heat butter in a pan.
  • Add onions, bell peppers, and garlic. Sweat until onions turn slightly translucent.
  • Add tomato paste and roast for 1-2 minutes.
  • Sprinkle in flour and roast for another minute.
  • Stir in 3 cups water, shrimp stock, and oregano. Bring to a boil.
  • Add corn, potatoes, and peas. Simmer for 15 minutes or until potatoes are tender.
  • Add shrimp.
  • Add heavy cream and bring back to a boil and simmer for another 2 minutes.
  • Season with salt and powdered cayenne to taste.

1 cup chopped onion
½ cup chopped celery
1 teaspoon minced garlic

4 cups frozen corn kernels, thawed
2 cups chicken broth

1 pound fresh peeled and deveined shrimp

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels. Drain excess grease from the skillet.
  • Crumble 4 slices bacon into the skillet. Add onion, celery, garlic, and thyme; cook and stir over medium heat until soft, about 5 minutes.
  • Transfer bacon mixture to a large pot. Add corn and chicken broth. Bring soup to a boil; cook until flavors combine, about 5 minutes.
  • Pour 2 cups of soup into a blender. Cover and hold lid down; puree until smooth.
  • Return pureed soup to the pot. Stir in half-and-half, pepper, and salt. Bring to a boil. Stir in shrimp; cook until shrimp are opaque, 3 to 4 minutes.

2 teaspoons unsalted butter
3 stalks celery, thinly sliced
2 bunches scallions, chopped
3 cups frozen diced potatoes
3 cups frozen corn
3 sprigs thyme
2 bay leaves
Kosher salt and freshly ground pepper
2 tablespoons all-purpose flour
1 quart low-fat milk
1 pound medium shrimp, peeled and deveined
Paprika, for sprinkling

Steps:

  • Melt the butter in a Dutch oven or large pot over medium-high heat. Stir in the celery, scallions, potatoes and corn. Add the thyme, bay leaves, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, 3 minutes. Stir in the flour until incorporated, about 2 minutes. Stir in the milk, then cover and bring to a boil. Uncover, reduce the heat to medium low and gently simmer until the vegetables are tender, about 6 minutes. Remove from the heat. Discard the thyme sprigs and bay leaves.
  • Transfer one-third of the mixture to a blender and puree until smooth, then return to the pot. Return to a simmer over medium-high heat. Stir in the shrimp and cook until opaque, about 4 minutes. Season with salt. If the soup is too thick, stir in up to 1 cup water. Divide among bowls and sprinkle with paprika.

2 lbs shrimp with shells and heads
4 cups water (more if necessary)
2 tablespoons olive oil
1/2 small red onion finely chopped
1 clove garlic clove finely chopped
1 tablespoon aji panca chili paste (can substitute tomato paste if necessary)
1 teaspoon aji amarillo chili paste
1 cup peas either fresh or frozen
1/4 cup long-grain white rice
1 ear corn (1-2 ears); cut into 1 1/2-inch chunks
1 lb russet potato peeled and cut into 1 1/2-inch chunks
1 teaspoon salt (to taste)
1/4 cup queso fresco cut into 1/2-inch chunks (1/4 to 1/2c)
1 cup evaporated milk
1 tablespoon Fresh Oregano chopped
3 Eggs

Steps:

  • Remove heads and shells from shrimp, and refrigerate the shrimp. Put shells and heads in a medium saucepan, add water to cover, and bring to a boil over medium-high heat. Reduce the heat and simmer for 15 minutes. While shells are simmering, heat the olive oil in a large flameproof casserole over medium heat. Add onion and garlic, and cook for 2 minutes, stirring. Stir in the aji panca (or tomato paste) and aji amarillo pastes. Reduce heat to medium-low and continue cooking, stirring often, for 10 minutes, or until onion is softened. Puree shrimp shells and cooking liquid. Strain mixture through a fine-mesh strainer into a bowl and reserve the liquid (solids can be discarded). Measure out the liquid and add enough water to make 5 1/2 cups. Add shrimp broth to onion mixture and bring to a boil. Stir in peas, rice and corn chunks. Reduce the heat and simmer for 10 minutes. Add potatoes and salt. Continue cooking until potatoes and rice are just tender (approx 10 minutes more). Add shrimp and queso fresco. Simmer, stirring occasionally, until shrimp is just cooked through, about 4 minutes (shrimp should be pink). Stir in the evaporated milk and oregano. Continue cooking and stirring. When the soup begins boiling again, Crack the eggs into the soup, spacing them so they remain separate in the soup. If you prefer, you can beat the eggs together in a bowl before adding them to the soup instead). When eggs are cooked, soup is finished.

I had a sample of this at the Market one day and decided to make a pot of it a couple of weeks ago (much to a few friends delight). They devoured the whole pot in one sitting.

3 tablespoons cooking oil
1 lb shrimp (medium, uncooked)
3 teaspoons salt
1 onion, chopped
1/4 teaspoon cayenne
1/2 teaspoon paprika

1 dash Tabasco sauce
1 1/2 lbs butternut squash (peeled, halved lengthwise, seeded and cut into 1-inch cubes)
1 1/4 lbs green cabbage, chopped (about 1 quart, 1/2 a small head)
1 lb baking potato, peeled and cut into 1 1/2-inch chunks (about 2)
2 cups whole kernel corn
2 quarts water
1 cup heavy cream (or milk for a lighter version)

Steps:

  • Directions.
  • In a large pot, heat the oil over moderate heat.
  • Add the shrimp and 1 teaspoon of the salt and cook, stirring frequently, until the shrimp are pink and firm, about 5 minutes.
  • Remove with a slotted spoon.
  • When the shrimp are cool enough to handle, peel them and set aside.
  • Add the onion, cayenne, paprika, cumin, and another teaspoon of the salt to the pot. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.
  • Add the Tabasco, squash, cabbage, potatoes, corn, and water to the pot.
  • Cover and bring to a boil.
  • Reduce the heat and simmer, partially covered, until the potatoes are tender, about 15 minutes.
  • Add the cream and simmer for 10 minutes. Stir in the peeled shrimp and the remaining teaspoon of salt.

1 small red onion (thinly sliced)
3 garlic cloves (minced)
2 tablespoons butter
1 pound bone-in and skin-on chicken (such as drumsticks and thighs)
1 ear fresh corn (cut into 1-inch slices)
1/4 cup chopped fresh cilantro (more for garnish)
4 cups chicken broth
1 16-oz. can sweet corn
1 cup milk
2 cups corn tortilla chips (divided)
Juice of 1 lime
1/2 tablespoon salt
1/2 tablespoon black pepper
Feta cheese for serving (optional)
Hot sauce for serving (optional)

Steps:

  • In a Dutch oven or large pot, heat 2 tablespoons of olive oil over medium-high heat. Add sliced red onion and 3 minced garlic cloves. Sauté until the onion is translucent, about 5 minutes.
  • Add two tablespoon of butter, a pound of bone-in chicken, sliced fresh corn, cilantro, and chicken broth. Bring to a boil and cook covered, on medium heat, 20-30 minutes.
  • Transfer the chicken to a plate. Discard the skin and bones. Chop or shred the meat and return it to the pot. Add one can of sweet corn and the canning liquid. Stir in the cup of milk; simmer for 10 minutes.
  • Season the soup with 1/2 tablespoon each salt and pepper. Toss in one cup of corn tortilla chips and stir to combine and soften the chips.
  • Using an immersion blender, puree some of the soup to thicken to a chowder consistency (avoiding the fresh corn). Alternatively, ladle some of the soup into a food processor or standard blender, puree it, and return to the pot.
  • Serve the chowder topped with some of the remaining chips and cilantro. Sprinkle with feta cheese and hot sauce if desired.

Shrimp can be difficult to serve in any kind of soup or stew. It takes only a few minutes of overcooking to turn the shrimp tough. To get around this, this chowder is prepared and then, just before serving, the shrimp are sauteed in very hot butter. The shrimp are added to the chowder as it is served. This all sounds like more work than it is, especially since the shrimp cook in just 3 or 4 minutes. Do-ahead tip: The soup is best the first day, but can be prepared a day in advance if necessary. Freeze for longer storage. The shrimp can be peeled and deveined hours in advance. Refrigerate until ready to cook. As published in The Washington Post, 01-26-2000.

3 1/2 cups chicken broth
1 1/2 lbs fresh corn kernels or 1 1/2 lbs canned corn
1/4 lb thick-sliced bacon, cut 1/2-inch dice

2 large celery ribs, cut 1/2-inch dice
2 lbs russet potatoes, cut 1/2-inch cubes

4 ounces butter, 1 stick
2 1/2 lbs medium shrimp, peeled, deveined

Steps:

  • In a medium pot, combine the chicken broth and 1 pound of the corn.
  • Bring the broth to a boil; immediately remove the pan from the heat.
  • Working in batches, transfer the corn mixture to a blender or food processor and process until the corn is almost pureed but slightly chunky.
  • Set aside.
  • In a 6- to 8-quart pot over medium heat, saute the bacon pieces until the fat has been rendered and the bacon pieces are golden brown.
  • Using a slotted spoon, transfer the bacon pieces to a platter lined with paper towels to drain.
  • Set aside.
  • Heat the skillet with the bacon drippings over medium heat and add the onion, bell pepper and celery.
  • Cook, stirring, until the vegetables have softened, 10 to 12 minutes.
  • Add the pureed corn mixture along with the remaining 1/2 pound corn kernels, the potatoes, milk, heavy cream and salt and pepper to taste.
  • Bring the mixture to a boil, then immediately reduce the heat so the chowder is just barely at a simmer.
  • Simmer the chowder until the potatoes are tender, 10 to 12 minutes.
  • Add hot pepper sauce and additional salt to taste, if needed.
  • Just before serving, in a large skillet over medium-high heat, melt 2 tablespoons of the butter.
  • Add some of the shrimp, being careful not to crowd the pan.
  • Saute until cooked through, 3 to 4 minutes.
  • Transfer the shrimp to a plate.
  • Repeat with the remaining butter and shrimp.
  • Stir the chives and bacon into the hot soup.
  • Ladle the soup into serving bowls and add 5 or 6 shrimp to each bowl.
  • Serve immediately.
  • If serving as a buffet, place the dish of sauteed shrimp next to the soup and let guests serve themselves.
