Baked Ziti image

For an Italian classic, try this Baked Ziti recipe from Food Network Kitchen. Tossed in a zesty tomato sauce and oozing with mozzarella, it couldn't be easier.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 16

Olive oil, for greasing
1 pound ziti
Kosher salt
3 1/2 cups Quick Tomato Sauce, recipe follows
1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced
3/4 cup freshly grated Parmesan
1/2 teaspoon freshly ground black pepper
Pinch crushed red pepper
2 tablespoons extra-virgin olive oil
1 pound sweet and/or spicy Italian sausages, casing removed and sausage crumbled
1/4 medium onion, diced (about 3 tablespoons)
3 cloves garlic, chopped
One 28-ounce can whole peeled tomatoes in puree, roughly chopped
Sprig thyme
Sprig basil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil, salt generously and boil the pasta until al dente (tender but still slightly firm). Drain.
  • Toss the cooked pasta with the quick tomato sauce, cubed mozzarella, half the Parmesan, all of the black pepper and crushed red pepper in a large bowl. Transfer the pasta to the prepared baking dish. Cover the top of the pasta with the sliced mozzarella and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
  • Remove and discard the herb sprigs. Stir in 2 teaspoons salt and season with pepper. Use now or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

THE BEST BAKED ZITI

The Best Baked Ziti image

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

Provided by Chef John

Categories     World Cuisine Recipes     European     Italian

Time 2h20m

Yield 10

Number Of Ingredients 15

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

AUTHENTIC BAKED ZITI

Authentic Baked Ziti image

Baked Ziti is a wonderful dish all its own. When done correctly, it is actually very different from lasagna. If you get good ingredients and follow this recipe, you will end up with a delicious and unique authentic Italian meal that tastes like nothing you've ever had before! A word about the ingredients: fresh mozzarella cheese is not the same thing as part-skim mozarella cheese. Use fresh mozarella in this recipe. Marzano tomatoes are a must for this recipe as well, but in a pinch, Progresso whole Italian tomatoes will do. Fresh herbs can be found in the produce section of most stores, but dried herbs can be substituted.

Categories     One Dish Meal

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 15

1 lb ziti pasta
1 lb fresh mozzarella cheese
3/4 cup freshly grated parmesan cheese
salt
pepper
crushed red pepper flakes
2 tablespoons extra virgin olive oil
1/2 lb sweet Italian sausage
1/2 lb hot Italian sausage
1/2 medium onion, diced
4 garlic cloves, minced
28 ounces whole peeled san marzano tomatoes
6 ounces marzano tomato paste
2 sprigs fresh thyme
1 sprig fresh basil

Steps:

  • SAUCE.
  • Remove the sausage casings and crumble the sausage.
  • Add 2 teaspoons of olive oil to a pan, and brown the sausage.
  • Puree the tomatoes in a blender (not too much).
  • Add onions and garlic to now-browned sausage. Cook for a few more minutes until transparent.
  • Add your tomato puree to the sausage.
  • Add thyme and basil to sauce.
  • Add some salt and pepper to taste.
  • Add a generous pinch of the pepper flakes.
  • Stir this up, heat to near-boil, then let it simmer covered on low for 15 minutes.
  • BUILDING THE DISH.
  • Boil your ziti pasta to not quite al-dente. Don't overboil, pasta will soften while baking.
  • Cut the mozarella, half of it into 1/2 inch cubes, the other half in as thin of slices as you can manage.
  • Remove the herb sprigs from the sauce and discard.
  • Add the can of tomato paste to your sauce to thicken it up and give it a lively red color and more intense flavor.
  • Add the pasta, your sauce, the cubed mozarella and half the parmesan in a baking dish.
  • Top with the sliced mozarella and the remainder of the parmesan.
  • Bake for about 30 minutes until golden.

Provided by Organize Yourself Skinny

Categories     casserole     pasta recipe

Time 1h30m

Number Of Ingredients 12

1 lb dry ziti or penne pasta (whole grain or organic)
1 15- ounce container of part-skim ricotta cheese (drain excess liquid)
1 large egg
½ cup grated parmesan cheese (can also use grated romano cheese)
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
pinch of crushed red pepper
3 - 4 cups spaghetti sauce (homemade or high-quality jarred sauce)
2 cups shredded low-fat mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Bring a 5-6 quart pot of salted water to a boil. Add the pasta and cook for 5 minutes. The pasta should still have a bite to it after it cooks. This helps keep the pasta from getting mushy.
  • Drain the pasta and rinse. Place the pasta into a 9 x13 baking dish.
  • Mix ricotta cheese, egg, romano or parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper in a medium bowl. Stir in the crushed red pepper if you're using it.
  • Mix the ricotta cheese mixture and spaghetti sauce in with the pasta. Start with 3-cups of sauce and add more if you need to. The pasta should be covered with sauce and cheese mixture.
  • Sprinkle mozzarella over the top of the pasta mixture.
  • Cover with foil and bake for 55 minutes. Uncover and bake for another 5 minutes or until cheese is melted and the baked ziti is bubbling on the sides.

BAKED ZITI

Baked Ziti image

Need a dinner to feed the whole family, plus have plenty of leftovers? This easy baked ziti recipe is a classic Italian casserole dish to feed a crowd.

Provided by Jessica Gavin

Categories     Entree

Time 1h35m

Number Of Ingredients 17

4 quarts water
5 teaspoons kosher salt (divided)
1 pound ziti pasta
2 tablespoons extra-virgin olive oil
1 pound Italian sausage (casing removed, mild or spicy)
½ cup finely chopped yellow onion
1 tablespoon minced garlic
2 teaspoons Italian seasoning (divided)
¼ cup tomato paste
28 ounces crushed tomatoes (Cento Brand or San Marzano tomatoes)
14.5 ounces diced tomatoes (do not drain)
½ teaspoon black pepper (divided)
2 cups whole-milk ricotta cheese
2 cups mozzarella cheese (freshly grated)
½ cup grated parmesan cheese (divided)
1 tablespoon chopped Italian parsley
1 large egg

Steps:

  • Preheat the Oven - Set the oven rack to the middle position and the temperature to 375°F (190ºC).
  • Cook the Pasta - In a large dutch oven or pot, bring water to a boil. Add 1 tablespoon of salt and stir to dissolve. Add in the ziti. Cook it according to package directions until al dente, about 9 to 10 minutes. Drain in a colander, and rinse with cool water for about 30 seconds to immediately stop the cooking process. Separate them with a spoon so they do not stick together. Leave some moisture on the surface and set it aside.
  • Brown the Sausage - Heat olive oil in the dutch oven or pot over medium heat. Add the sausage. Break into smaller pieces, and cook until browned, about 4 to 5 minutes.
  • Cook the Aromatics - Reduce the heat to medium-low and add the onion, garlic, and 1 teaspoon of Italian seasoning. Sauté until onions are translucent, about 3 minutes.
  • Add the Tomatoes - Add the tomato paste and cook for 1 minute. Add the crushed tomatoes, diced tomatoes, 1 teaspoon salt, and ¼ teaspoon black pepper. Stir and simmer for 10 minutes. Season with more salt and pepper to taste. Reserve 2 cups of the meat sauce.
  • Sauce the Pasta - Add the ziti to the meat sauce and stir to combine. Set aside.
  • Make the Cheese Mixture - In a medium-sized bowl, stir together ricotta cheese, 1 cup mozzarella cheese, ¼ cup parmesan cheese, 1 teaspoon Italian seasoning, 1 teaspoon salt, ¼ teaspoon pepper, parsley, and egg.
  • Layer the Casserole - In a 13-inch by 9-inch baking dish add half of the pasta. Evenly dollop with half of the ricotta cheese mixture. Spread half of the reserved meat sauce on top. Add the remaining pasta on top, followed by the ricotta cheese mixture and the remaining meat sauce. Evenly sprinkle 1 cup of mozzarella cheese and ¼ cup of parmesan cheese on top.
  • Bake - Loosely cover the baking dish with greased foil so that it does not touch the pasta. Bake for 30 minutes. Remove the foil and bake until the cheese is melted and lightly golden brown, about 15 minutes.
  • Serve - If desired, garnish with chopped parsley and parmesan cheese.
