5-Ingredient Fix Contest Entry. This recipe is super simple, can be made ahead of time, and tastes great. I first tasted this at a pot-luck lunch at work years ago. Over the years I have added bacon and increased the cheese, making it even better than the original. Multi-purpose dish, can be used as a main dish or side dish. Can also be served at breakfast, brunch, lunch, or even dinner.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
8 large eggs
1 1/2 cups half-and-half
2 cups shredded monterey jack and cheddar cheese blend
1 lb bacon, cooked and crumbled

Steps:

  • Heat oven to 350°F Spray 11x7 glass baking dish with nonstick cooking spray. Add 1 bag Simply Potatoes hashbrowns. Next, layer crumbled bacon on top of potatoes. Crack eggs, 1 at a time and evenly spaced, across top of potatoes and bacon. Poke yokes with a fork. Spread 2 cups grated cheddar cheese evenly over top. Pour 1 1/2 cups half and half over casserole. Cover with foil and bake for 1 hour, remove foil and bake for additional 15 minutes or until cheese begins to bubble and turn lightly brown.
  • Remove from oven, let sit for 5 minutes and serve.

3/4 cup hash brown potatoes (refrigerated or thawed frozen)
1/2 cup shredded monterey jack cheese
1/4 cup finely chopped bell pepper
1/2-1 large fresh jalapeno, seeded and chopped
1/4 cup chopped sweet onion
1 clove garlic, minced
1 egg, lightly beaten
1/4 cup light cream or 1/4 cup half-and-half
salt
pepper

Steps:

  • Prheat oven to 400°F.
  • Drain thawed potatoes and make sure there is no excess water on them.
  • Spray the inside of an 8 ounce casserole dish or ramekin with non-stick cooking spray.
  • Press potatoes into the bottom of the ramekin.
  • Place ramekin on a baking sheet and bake for 20 minutes, or until potatoes are lightly browned around the edges.
  • Remove from oven and allow to cool for 10-12 minutes.
  • Right after removing from oven, reduce oven temp to 350°F.
  • In a small saucepan, saute the peppers, onion, and jalapeno until tender, 5-7 minutes.
  • In a small bowl, mix together the egg and the cream, add the minced garlic and season to taste with salt and pepper.
  • Spray the top of the potatoes and sides of the ramekin again with a little more cooking spray (I like butter-flavored).
  • Place half the cheese on top of the potatoes in the ramekin.
  • Cover this cheese with the sauteed peppers and onion.
  • Pour egg mixture over that.
  • Top with remaining cheese.
  • Carefully place ramekin on a baking sheet in the oven and bake for 25-35 minutes or until set, puffy, and golden.
  • Allow to rest 5-10 minutes after cooking.
  • Then run a knife around the edges of the ramekin, and invert onto a serving plate.
  • Tap lightly, and carefully lift ramekin away from casserole.
  • Serve warm.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
8 eggs
10 ounces spinach, coarse stems discarded
1 cup heavy cream
1 lb crispy bacon

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Line each ramekin with 2 table spoons of Simply diced potatoes with onion.
  • Drain spinach in a colander, pressing to remove excess liquid, then coarsely chop. Divide spinach, then bacon among ramekins, scramble the eggs with 3/4 cup cream reserving 1/4 cup. Spooning the mixture in each ramekin then place 1 tablespoon cream on top of each serving. Bake 15 to 20 minutes, removing from oven as cooked. Serve each person their own personal egg and potatoes in a ramekin.

1 1/2 cups Mashed Potatoes (left-over and reheated)
4 slices bacon (cooked and diced)
6 eggs (poached)
1 1/2 cups Hollandaise Sauce (or Cheese Sauce)
Chopped Chives, paprika or chile powder for garnish

Steps:

  • In a fry pan, fry bacon until just crispy, crumble and keep warm.
  • Prepare Hollandaise or Cheese Sauce. Set aside and keep warm.
  • In a medium sauce pan, heat water and poach eggs. Cook about 5-6 minutes.
  • In the meantime, re-heat mashed potatoes and keep warm.
  • To build, using 6 small ramekins: Place about 1/4 cup mashed potatoes in each ramekin. Divide crumbled bacon evenly over the mashed potatoes. Add a poached egg to each ramekin cup. Then drizzle on 1/4 cup of your sauce. Serve immediately.

2 cups Simply Potatoes® Shredded Hash Browns
1 cup thick & chunky salsa
8 large eggs
2 cups Mexican blend cheese
8 tablespoons cilantro, chopped

Steps:

  • Heat up a nonstick waffle iron and season according to manufacturers directions.
  • In a medium bowl put potatoes, 1/3 cup of the salsa and 2 beaten eggs. Mix all together until well blended. Spoon mixture into hot waffle iron spreading evenly to edges. Put lid down and cook 15 to 20 minutes or more until potato waffles are brown, done and look crispy.
  • In a medium bowl beat remaining 6 eggs. Add 1/3 cup of salsa and mix until well blended.
  • Heat a nonstick skillet on medium heat. Pour egg mixture into hot skillet and with a spatula mix and stir, scraping bottom of pan to scramble the eggs. Add one cup of the cheese and continue cooking and stirring. Remove from heat when eggs are cooked to desired consistency and cheese looks melty. Do NOT overcook. Evenly sprinkle remaining cup of cheese over top of eggs. Cover and keep warm until potato waffles finish cooking.
  • When waffles are done cut into fours following the compartment lines of waffle maker. Put each quarter waffle on a plate. Put equal portions of the cooked eggs on each waffle with the melted cheese side up.
  • Put a spoonful of Salsa in center of cheese and repeat with other plates. Sprinkle 2 Tablespoons of the chopped fresh cilantro over top of each plate. Serve hot.
  • Makes 4 hearty, delicious servings.
  • If desired pass extra salsa in a bowl.

Official Contest Entry: Simply Potatoes 5Fix. This recipe is a perfect combination of one of my favorite dishes, Sausage Gravy, and one of my husband's favorite side dishes, hash browns. The addition of the runny egg oozing down into the gravy and hash browns makes for one perfect breakfast dish.

20 ounces Simply Potatoes® Shredded Hash Browns
1 lb jimmy dean maple sausage
2 tablespoons flour
3 cups milk, I used whole milk
4 eggs

Steps:

  • Preheat oven to 400°.
  • Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
  • Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
  • Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
  • Add flour and cook, stirring often, for 2 minutes.
  • Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
  • Pour 3/4 cup gravy into each ramekin over the potatoes.
  • Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
  • Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

DUCHESSE POTATOES IN RAMEKINS

This is a make-do recipe that I came up with after finding my pastry tube mysteriously gone. Since I couldn't pipe the potatoes as usual, I had to do something else. Voila, a very attractive side dish and easy to make.They are cooked as for a custard to make sure they do not dry out and they will puff much nicer with the moisture in the oven. I would also put in onion puree and perhaps minced chives for more color and flavor. Using a food processor to mix everything makes the whole process much easier and I like the consistency of the taters better. Since this is so basic, almost any savory seasoning can be used, depending on what your main course will be.

24 ounces potatoes, cooked as for mash
1/3 cup sweet unsalted butter, chunked
1 egg
2 egg yolks
salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Put an oven rack in the middle position in the oven.
  • Cool the potatoes just enough so they can be handled, but still very warm.
  • Mash them well and push them through a fine chinois or sieve.
  • Turn the mash out into a food processor, using the chopping blade.
  • Scatter the chunked butter around on the potatoes.
  • Process for about 5 minutes until the butter is completely incorporated.
  • It helps if the taters are still quite hot.
  • Scrape the sides of the processor bowl, return top.
  • Turn processor on and add eggs, starting with the whole egg.
  • Pour them in very slowly so they incorporate but do not cook.
  • Process until the consistency is similar to a standard souffle mixture.
  • Set mixture aside.
  • Bring water to a boil on the stovetop.
  • Butter ceramic ramekins and fill 3/4 full with potato mixture.
  • Place the ramekins on a 9x13" baking pan, set this in the center of the oven, pour boiling water to within 1/2" of the top of the cups.
  • Bake for 1 hour, or until tops have puffed and are golden brown.
  • Remove from oven and cool slightly on a rack.
  • Serve warm in the ramekins.
  • Paprika or other seasoning can be sprinkled over the top of the mixture before baking.

3 eggs
1 cup half-and-half
salt and pepper
1/4 medium onion, chopped
1/4 lb ground beef, cooked
1 (10 ounce) package frozen hash brown potatoes
1 cup frozen broccoli, steamed
1 slice cheddar cheese, cut into fourths

Steps:

  • Preheat oven to 350 degrees.
  • On roasting pan or cookie sheet, place 4 ramekins.
  • Spray ramekins with canola oil spray.
  • In ramekins, layer frozen shredded potatoes on bottom of cups. Spray again with canola oil spray.
  • Cover with aluminum foil and cook in oven for 15 minutes, or until potatoes are cooked to desirable doneness. (Less for soft potato bottom, more for crispy potato bottom.).
  • Saute chopped onions while potatoes are in the oven.
  • When potatoes are done, put a layer of onions on top of the potatoes in the ramekins, then a layer of cooked ground beef, then a couple of broccoli spears on top.
  • In a mixing bowl, combine eggs, half-and-half, and salt and pepper to taste.
  • Pour over ramekins equally, with a little room at the top.
  • Cook at 350 for 35 minutes. Place a piece on top of each cup, then finish in the oven for 5 minutes.
  • Quiches should be very slightly wiggly in the middle.
