This is a smooth, mellow soup that can be served hot or cold. If you like, you can add cooked rice or noodles to the finished soup.

1 teaspoon olive oil
1 large leek, chopped, white part only
6 garlic cloves, crushed
5 cups vegetable broth
1 lb carrot, sliced into 1/4 inch slices
1 teaspoon ground cumin
1 bay leaf
2 tablespoons lemon juice
1 tablespoon sugar

Steps:

  • Heat oil in a large saucepan over medium heat. Add leek and garlci.
  • Cook, stirring frequently, 3 minutes.
  • Add small amounts of water if necessary, about a tablespoon at a time, to keep from sticking.
  • Add broth, carrots, cumin and bay leaf. Bring mixture to a boil, then cover and reduce heat to medium-low, and simmer 45 minutes or until carrots are tender. Remove and discard bay leaf.
  • Working in small batches, puree soup, then return to saucepan. Stir in lemon juice and sugar.
  • Serve hot or cold.

PERSIAN-STYLE RED LENTIL AND TOMATO SOUP



Persian-Style Red Lentil and Tomato Soup image

This tangy soup is low-fat, quick and easy to prepare! It is a copycat-of a-copycat recipe from the soup served at Reza's, a Persian restaurant in Chicago (so called because I have never been to Reza's, but once had someone else's imitation of it!). Sumac powder and dried limes can both be found at Middle Eastern groceries or ethnic stores.

2 tablespoons vegetable oil
1 medium onion, chopped finely
1 carrot, chopped finely
1 celery, chopped (optional)
2 -3 garlic cloves, crushed and minced
1 (15 ounce) can chopped tomatoes
4 cups vegetable stock or 4 cups chicken stock
1/2 cup red lentil, rinsed
1 bunch parsley, chopped (or 2tbs dried)
1 tablespoon dried dill
1 -2 tablespoon sumac
1 dried lime (strongly preferred, but can substitute with 1/4 c lime or lemon juice)
1/2 teaspoon turmeric
1/2 teaspoon paprika
1 bay leaf
salt and pepper

Steps:

  • Heat oil in a medium pot over medium heat. Add the onion, celery, carrot and garlic. Cook until the onion is softened.
  • Stir in the turmeric and paprika. Add tomatoes and stock along with the dried lime. Bring to a boil, cover, lower heat and simmer for 20 minutes. If the dried lime is still floating, cut it in half with a knife or kitchen scissors now that it is softened.
  • Add the lentils, return to a simmer. Cover and cook 15-20 minutes or until the lentils are cooked.
  • Using an immersion blender or regular blender, puree half the soup, return to the pot.
  • Add sumac and parsley/other herbs, cook 5 minutes longer.
  • Serve hot with bread and a dollop of yogurt (optional).

TORSHI-HAVIJ (PERSIAN PICKLED CARROTS)

Like Lebanese cuisine, Iranian cuisine includes a plethora of different pickled vegetables - pickled cucumbers, pickled cauliflower, pickled eggplant, pickled garlic, pickled onions and pickled carrots. They're quite strong so serve them as a side dish with a meal - but be warned, they will made your meal incredibly special and very zingy. From Gormandize.

Number Of Ingredients 6

1 bunch baby carrots, trimmed and washed (about 100g)
5 fresh garlic cloves, peeled
1/2 teaspoon dried mint
15 -20 black peppercorns
1/2 teaspoon salt
white wine vinegar (quantity will vary depending on the size of the jar you use)

Steps:

  • Wash the carrots well (there is no need to peel them, but you can if you want to) and boil for about 3 minutes in boiling water. Remove from the water and allow to cool.
  • Once the carrots are cooled, place them in a jar with a good lid or seal. It would be good to use use a tall and thin jar so that you can stand the carrots up in it without needing to use so much vinegar, but any jar will do.
  • Grate the garlic coarsely and add to the carrots in the jar. Add all other ingredients (except the vinegar).
  • Add enough white wine vinegar to the jar to cover the carrots completely. Put the lid on and store in the fridge for at least 3 weeks.

200 g apples, peeled and coarsly grated
60 g almonds, toasted and chopped
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon sugar

Steps:

  • Mix all ingredients together.
  • Don't add salt, it would soak water!
  • Refrigerate at least one hour.
  • Serve and enjoy.

2 teaspoons vegetable oil
4 onions, chopped
3 cloves garlic, minced
1 eggplant, peeled, seeded and diced
2 tablespoons chopped parsley
1 rib celery, chopped
8 large carrots, peeled and chopped
2 potatoes, peeled and chopped
1 1/2 teaspoons salt, plus more to taste
2 teaspoons freshly ground pepper, plus more to taste
2 teaspoons chopped fresh mint

Steps:

  • Heat oil in a large, heavy nonreactive pot over medium heat. Cook onion and garlic for 5 minutes. Stir in eggplant and parsley and cook until softened, about 10 minutes. Add 8 cups water, celery, carrots and potatoes. Simmer for 15 minutes. Stir in salt and pepper and cook over low heat for 30 minutes. Let cool.
  • In batches, puree the soup in a food processor. Refrigerate until cold. Season with salt and pepper to taste, divide among 4 bowls, garnish with mint and serve immediately.
