PERSIAN APRICOT RICE PUDDING
I found this recipe online,anf had to post it here.I really really,really love recipes like this. My dad is from England,so he loves his rice pudding,and this is a really,nice twist on the plaid version! Hopefully,you and your family or guests will enjoy it as well! 8) (Prep time includes refrigerating)

Steps:
- Have a 1qt.
- shallow bowl handy.
- Put the rice in blender,blending until fine.
- Pour into small bowl,add cornstarch& water,stir to dissolve the cornstarch.
- Pour the drained apricots in blender,and blend until smoothy.
- Add just enough milk to total 4 cups (approximately 2 cups milk.).
- Pour into a small saucepan& add sugar& the rice mixture.
- Over medium heat,stir constantly,until it comes to a boil.
- Cook and stir for 5 minutes.
- Remove from heat& stir in extracts.
- Stir to blend.
- Pour pudding into a bow,and allow to cool at room temperature for 1/2 hour,Then chill.
- When pudding is cold,serve.
PERSIAN RICE PUDDING (SHEER BERENJ)
This is my favorite rice pudding. It is nice and creamy but not too heavy. The Persian version of rice pudding is very simplistic, yet beautiful in flavor masha Allah. Sheer Berenj on its own is simply made with rice, water, milk and rosewater. I love it because it is not too sweet you add a sweet topping such as a good honey or a sweet preserve (jam). Steps:
- Wash rice and cook with 2 cups of water and a pinch of salt for about 20 minutes.
- Add half & half and 2% milk and cook on low for 1 hour. Occasionally, stir the pot to make sure that the bottom does not stick.
- After one hour the rice and cream will thicken into a pudding consistency. Add rosewater and let cook for a few more minutes.
- Enjoy warm with a very good quality honey or sweet preserve on top!

Steps:
- In a medium bowl, soak dried apricots in warm water to cover until plump, about 1 hour. Drain well, and set aside.
- In another bowl, soak prunes in 1 cup warm water to cover until plump, about 1/2 an hour. Do not drain (you need to add the soaking water to the batter along with the prunes).
- Preheat oven to 350 degrees F.
- In a large bowl, beat eggs, sugar, cinnamon, and salt until well blended.
- Add matzah meal and potato starch; mix well. Let stand for 30 minutes.
- Add oil, apples, and prunes, along with their soaking water; mix well.
- Grease a 9x13 inch glass baking dish. Pour honey evenly into the bottom of the baking dish, then arrange the drained apricots in the honey.
- Pour the batter over, and bake at 350 for 1 hour, or until a toothpick comes out clean.
- Turn upside down down on a serving platter while still warm. Can be served warm or cold.

- Have a 1 quart shallow bowl ready.
- Place rice in a blender container and blend until fine, about 1 minute. Place in a small bowl and add cornstarch and water. Stir to dissolve cornstarch.
- Place drained apricots in blender container. Blend until smooth. Add enough milk to apricots to total 4 cups. Pour into a small saucepan.
- Add sugar and rice mixture.
- Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue to cook and stir for 5 minutes. Remove from heat and stir in extracts.
- Pour pudding into bowl. Let cool at room temperature for 30 minutes, then chill throughly.
- Note: cooking time does not include chilling time.
