Puerto Rican Pernil: Pork Shoulder Roast with Adobo Rub image

This is an amazing traditional pork roast recipe from Puerto Rico that you'll want to make again and again. Pernil Adobo is usually served at Christmas.

7 lb. Pork shoulder with fat cap left on
1/2 - 1 cup Adobo Rub (See below)
1 2/3 cup kosher salt
1 1/8 cup garlic powder
1/2 cup ground cumin
1/2 cup ground coriander
1 1/8 cup onion powder
1 1/2 tbsp coarse ground coriander seeds (use a coffee grinder on whole seeds)
1 tbsp brown sugar
1/2 tbsp ground annatto (achiote powder)

Steps:

  • Mix all ingredients for Adobo Rub and keep in a cool dry place. This makes quite a bit so you will have lots left over to use for other things like chicken or steak!
  • Rub adobo all over the pork; cover with plastic and refrigerate for 12 hours (max. 24 hrs.)
  • Take pork out of the fridge one hour before roasting. Remove excess salt and let it rest at room temperature.
  • Preheat the oven 400°F.
  • Put pork in a roasting pan with fat cap face up and cook for 45 minutes.
  • Turn the oven temperature down to 250°F and cook for 90 to 120 minutes or until the pork reaches 145°F degrees in the center.
  • Carve and pull apart pieces - serve while hot!

1 bone-in, skin on pork shoulder (5 to 6 pounds)
6 cloves garlic
2 tablespoons fresh oregano leaves
1 small bunch fresh cilantro
1 tablespoon ground cumin
4 limes, juiced
2 oranges, juiced
1 chipotle in adobo, plus 1 teaspoon adobo sauce
Kosher salt and black pepper
1 cup extra-virgin olive oil

Steps:

  • Place the pork shoulder, fat-side up, on a cutting board. With a sharp knife, score the skin and fat in a cross-hatch pattern, making diagonal cuts about 1 1/2 inches apart and cutting down to the meat so the marinade can penetrate. Transfer the pork to a large re-sealable plastic bag set over a baking dish or bowl.
  • To a blender, add the garlic, oregano, cilantro, cumin, lime juice, orange juice, chipotle and adobo sauce, 3 tablespoons salt and 1 tablespoon pepper. Drizzle in the olive oil and pulse until you have a nice puree. Pour the marinade all over the pork, being sure to get it into the deep cuts. Zip the bag closed and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Add about a 1/2 inch water to a roasting pan fitted with a roasting rack. Remove the pork from the marinade and place in the center of the rack.
  • Cover with foil and roast until the pork is fork tender and deep brown in color, 4 hours. Check on the pork after 3 1/2 hours; if skin is not deep brown, remove the foil for last 30 minutes. Transfer the pork to cutting board and let rest for 20 minutes before slicing into thick pieces. Spoon any remaining pan juices over the meat to serve.

3 tablespoons white vinegar
10 cloves garlic, or more to taste

5 pounds pork shoulder, trimmed of excess fat

Steps:

  • Combine olive oil, vinegar, garlic, oregano, salt, and black pepper in a mortar and pestle; mash into a paste.
  • Make deep slits into the pork with a small knife. Stuff slits with the paste; rub any remaining paste over the pork.
  • Place pork in a plastic roasting bag and put in a roasting pan with a rack. Let marinate in the refrigerator, 8 to 48 hours.
  • Take pork out of the refrigerator, uncover, and bring to room temperature, 1 to 2 hours.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Roast pork skin-side down in the preheated oven until golden brown, about 2 hours. Flip pork and continue roasting, skin-side up, until juices run clear and an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), 2 to 4 hours more.

1 ½ - 2 heads of Fresh Garlic
1 tbs Dominican Oregano *Regular oregano will also work
3 ½ tbs Salt for a 7lbs Pernil
1 tsp Black Pepper
2 tsp Fresh Thyme
½ tsp Cumin
1 Red Onion
1 Sopita aka Chicken Bouillon Cube
1 Orange
1-2 Limes
¼ cup olive oil
3 cups of water
¼ - ½ cup of white vinegar

Steps:

  • Poke holes all over the pernil using a cross method to get small to medium holes
  • Then place in a large mixing bowl and add 1 cup of water and the vinegar
  • Massage the vinegar and water into the pork and let it sit for 5-10 while you mix the marinade
  • Combine garlic, oregano, salt, sopita, cumin, onion, black pepper, and thyme in a food processor and blend
  • Then add the freshly squeezed orange juice, lime juice, and olive oil. Mix again and set marinade aside
  • Drain the pernil-no worries if you don't every single last drop of vinegar + water
  • Season pernil thoroughly using the marinade. Be sure to massage the marinade into the holes we made earlier. It looks weird at first, but your taste buds will thank you later
  • Cover pernil with saran wrap and let it marinade for a minimum of 4 hours. Best to marinade for a whole day.
  • In a LARGE pot, add pork-skin side up-and add 1-2 cups of water. Be sure to include all of the marinade that in the mixing bowl. Boil for 45 mins to an hour.
  • Switch Pork-skin side up-to a sturdy pan and roast covered for 3 hours at 350 degrees making sure to baste it every hour. The pernil will become light golden brown and juicy during this time.
  • At the 4th hour, take out 50% of the juices and roast uncovered for one more hour
  • **Optional** Once the pernil is done, broil for 5 minutes to get super crispy skin

Pernil or pernil asado is a leg or shoulder of pork marinated and roasted for several hours. In Latin American countries, this dish is a Christmas tradition.

1 tablespoon peppercorns (, crushed)
1 tablespoon oregano
4 cloves garlic (, pressed)
2 limes (, squeezed)
½ cup olive oil
Salt
8 lb pork leg or shoulder ((whole, with bone))
2 tablespoons marinade
2 tablespoons garlic powder
7 cloves garlic
2 tablespoons salt

Steps:

  • Mix all the ingredients and reserve this preparation to season the meat.
  • Place the pork in a baking dish that can be refrigerated.
  • Mix the garlic powder with the salt and season the pork. Add the fresh garlic on top of the meat. Marinate for 3 hours in the refrigerator.
  • Using a small, sharp knife, remove the fat from the meat by letting it stand on one edge and keeping it in one piece.
  • Start at the wide end and go to the narrow end.
  • Leave enough fat on the meat to turn the fat on its side while seasoning the meat.
  • The fat will be added back on the seasoned meat and cooked on the meat.
  • With a little marinade, season the side of the fat that covers the meat. The other side (the top) should only have salt.
  • Make very deep cuts on all over the meat and season with the marinade, ensuring that the seasoning penetrates well into all the cuts.
  • Put the fat on the meat so that it looks the same as before cutting and sprinkle with salt.
  • Cover the meat with a cling film and refrigerate for 12 hours.
  • Remove the meat 1h30 before cooking and let the meat come back to room temperature before cooking.
  • Place the meat in a deep oven dish with the fat side up. There will be a lot of fat, so be sure to use a deep dish.
  • Preheat the oven for 45 minutes at 400 F / 200 C before baking (while the meat comes back to room temperature).
  • Bake at 400 F / 200 C, and covered for 1 hour, then reduce the temperature to 300 F / 150 C, and cook again covered for 3 hours. Do not turn the meat over. Then uncover and cook for an additional hour.
  • When the meat is cooked, poke it on the side with a fork to see if it is falls off from the bone. If the top (cuerito) is not crisp enough, continue cooking at 400 F / 200 C for 15 minutes or until crisp.
  • Remove the meat from the oven and let it rest for 30 minutes before cutting it.
  • To cut it, completely remove the fat (cuerito) and reserve it.
  • Slice the meat then cut the fat (cuerito) into pieces and sprinkle on the meat.
  • Serve the meat with a piece of cuerito.

This Latin inspired pork recipe is a traditional staple in every Latin home. More commonly known as Pernil, this juicy pork meat is the great rival to Turkeys.

12 pounds of picnic pork shoulder
6 teaspoon of minced garlic (about 6-8 cloves)
1 cup of mojo marinade
3 teaspoon of salt
1 teaspoon of pepper
2 teaspoon of oregano
3 teaspoon of olive oil
lime juice (optional)

Steps:

  • Preheat oven to 325 degrees. (Once marinated for desired amount of time.)
  • In a large mixing bowl, with a sharp knife, carefully lift 3/4 of the skin from the meat. Once skin is lifted, gently poke holes throughout meat.
  • Season generously with salt and pepper.
  • Fill holes with garlic.
  • Make a paste with oil and remaining seasonings. Generously rub pork with paste.
  • Cover bowl and refrigerate for at least two hours. After two hours, add in a cup of mojo to bowl, continue to marinate for another hour or overnight in fridge.
  • Into a large roasting pan, add pork, skin side up. Cover with aluminum foil and bake for 5-7 hours. Remove foil and raise heat to 350 degrees for twenty minutes.
  • Remove from heat, let rest for ten minutes. Sprinkle lime juice before serving, if desired.

1 green pepper, small dice
1/2 Spanish onion, small dice
4 to 5 cloves garlic, minced
1/2 cup cilantro, chopped
1 pork shoulder with bone and skin left on
Salt and pepper, to taste

Steps:

  • For the marinade: Mix together all ingredients and set aside to let flavors meld together.
  • Procedure for the pernil. Preheat oven to 450 degrees. Wash pork under cold running water and pat dry with paper towels. With a sharp paring knife, pierce the flesh. Season with salt and pepper and rub sofrito all over, covering the entire piece of meat. Let marinate for no less than 2 hours but better if overnight. Place pork on an oven rack and place in roasting pan and add enough water to just cover bottom of pan. Put roasting rack in center of the oven and let cook for 20 minutes. Turn the oven down to 350 degrees and let cook until juices run clear. The pork should be firm to the touch. Take the pork out of the oven and let rest for about 10 to 15 minutes. Peel away the skin when cool enough to touch and save, for this is a traditional Caribbean delicacy. Slice meat into bite-size pieces and serve with arroz con gandules.

1 large 4 or 5 pound pork roast shoulder or fresh ham (ham that is not cured or smoked or cooked)
2 c sour orange or fresh lime or lemon juice
1 large bay leaf
2 tsp dried oregano
2 tsp cumin powder
2 Tbsp salt and 1 teaspoon salt
1/2 tsp black pepper
20 clove fresh garlic peeled, cloves can be left whole
cuban mojo sauce
2 large onions sliced in thin rounds
1/2 c roast pork pan drippings
1/2 c reserved garlic and lime sauce mixture

Steps:

  • 1. Buy a nice large pork shoulder or fresh ham try to buy with the skin on the fresh ham. I am doubtful you will find a pork shoulder with the skin on it but you can try.
  • 2. THE NIGHT BEFORE: Take your pork shoulder or fresh ham and stab it all over making deep stabbings in the meat all over the roast. Next, take your salt and pour about two tablespoons full in your hands and rub deep all over the pork roast or fresh ham sticking your fingers in the deep stabbed holes to penetrate the salt well into the meat. Do this all around the fresh ham. You will need about 2 tablespoons of salt altogether. If it is a very large fresh ham you might need as much as three tablespoons of salt. Rubbing deep into the meat all over and into the holes made with a sharp knife. Please be careful with the knife when stabbing the pork so as to not cut yourself. Make sure your hands are dry as well as the handle of the knife when stapping the pork. You do not want your hand to slide down onto the sharp blade as I have seen happen when stabbing the pork.
  • 3. After salting put the pork to a side. In a blender add the lime/lemon or sour oange juice, garlic cloves, and the seasonings bay leaf, cumin powder, oregano, pepper, 1 teaspoon salt. Blend on high until all is liquified.
  • 4. This is your Cuban Mojo, pour one cup of the mojo in a jar cover and reserve for later.
  • 5. Now take your pork roast and pour the rest of the sauce all over the pork roast rubbing the mojo sauce deep into the pork meat in the slits or holes. The secret is to make sure you rub your pork meat roast or fresh ham with all this lime/garlic sauce making sure it is well introduced into the meat.
  • 6. When done sprinkle a little more oregano, cumin, black pepper over the entire roast again just a little sprinkle. Cover with aluminum foil and refrigerate until the next day for roasting.
  • 7. Next day remove pork from the refrigerator let stand on the counter for at least an hour then put into a preheated 325 degree oven.
  • 8. Depending on how large a roast you have roast about 3 to 4 hours or a little more.
  • 9. Pour a half cup of the reserved mojo and baste your roast every hour with some of the mojo.
  • 10. Roast is done when the juices run clear and the meat is tender. Do not cover with aluminum foil to roast. You can tent the roast with aluminum foil but do not crimp the edges all around. You want to roast your pork meat not steam it. I do not even tent mine.
  • 11. If the roast starts to get too brown on top tent it with the foil. Take a large piece of foil and fold in half then put over the roast leaving the sides open, no crimping. A five pound roast can take as long as five or six hours slow roasting. When done remove roast from the oven take out of the pan put into another pan. Let roast hang out for a bit.
  • 12. In your pan there should be lots of pan drippings. Pour them into a frying pan over medium heat and add the onions and fry them in the drippings.
  • 13. Next, take a half cup of the reserved mojo from the refrigerator and pour into the onions sauteing everything for about five minutes. After about 10 minutes slice all of your roast and pour the mojo with onions all over the meat mixing it well into all of the pork meat. Serve with Cuban black beans and white rice. There is another traditional dish served with the pork, rice, and black beans. It is called Yuca (Casava). It is boiled when tender it is served with the pork, black beans, and rice. It looks like boiled potato only it is long and very starchy. It is served with a mojo sauce that is also pored over it but only lemon or lime juice and fresh garlic are used. But that is another recipe. It is a tradition to also include that dish with the Cuban roast pork dinner. Don't forget the Crispy Cuban bread and the Sangria or wine, For dessert pass a delicious flan. Buen Apetito. Enjoy.
