CREOLE RABBIT - LOUISIANA STYLE

A wonderful baked rabbit recipe. Times include over night marination. Recipe can be adapted to Dutch oven cooking while camping .

3 lbs rabbit, cleaned
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 cup onion, chopped
3 garlic cloves, minced
2 tablespoons white vinegar
1 teaspoon browning sauce, such as Kitchen Bouquet
8 ounces canned mushrooms, drained
1 tablespoon butter or 1 tablespoon margarine, melted
1 tablespoon parsley, minced
2 tablespoons green bell peppers, minced
2 tablespoons green onions, chopped
2/3 cup dry white wine

Steps:

  • Dry rabbit and place in bowl.
  • Combine salt, black pepper, cayenne pepper, onion, garlic and vinegar.
  • Pour over rabbit, turning pieces to coat.
  • Cover bowl and marinade overnight in refrigerator.
  • Transfer rabbit and marinade to well-greased baking dish.
  • Bake in preheated 450°F oven 1 hour.
  • Combine remaining ingredients and pour over rabbit.
  • Bake 30 to 45 minutes longer, until rabbit is fork-tender.
  • Serve warm.

1 -2 rabbit, cut into pieces
2 cups flour
2 cups crushed corn flakes
1 tablespoon salt
1 tablespoon garlic powder
1 1/2 tablespoons onion powder
1 tablespoon sugar
1 tablespoon dry powdered yeast
4 tablespoons paprika
1/4 cup olive oil
1/4 cup cooking oil

Steps:

  • Place flour, corn flakes, salt, garlic powder, onion powder, sugar, yeast and paprika in a food processor and process on high for one minute. Make sure the corn flakes are crushed so you will add enough. After one minute and the mixture is thoroughly mixed slowly add the olive oil while processing for another one minute.
  • Preheat oven to 350'F and grease a baking pan with the cooking oil.
  • Rinse rabbit pieces and drain.
  • Dredge rabbit pieces in prepared coating mix and coat them thoroughly. Make sure rabbit is wet so coating sticks well, but not too wet or the coating will get lumpy and sticky.
  • Place coated rabbit pieces on baking pan with oil.
  • Cook in oven for 50 minutes.
  • Use a spatula to remove stuck pieces after cooking.

1 (3 pound) rabbit, cleaned and cut into pieces
1 ¾ teaspoons salt
1 tablespoon ground black pepper
¼ cup vegetable oil
4 teaspoons white sugar
1 onion, chopped
¾ cup ketchup
1 clove garlic, chopped
1 tablespoon paprika
1 ½ tablespoons Worcestershire sauce
1 cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Season the rabbit with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the rabbit pieces and brown on all sides. Place in a 9x13 inch baking dish. In a medium bowl, combine the sugar, onion, ketchup, garlic, paprika, Worcestershire sauce and water; pour over the rabbit.
  • Bake uncovered for 90 minutes in the preheated oven, basting frequently. Meat should be very tender when done.

I found this recipe on the back of Mayberry Farms rabbit that I bought at bi-lo's grocery store. I like to make it with chicken too.

1/3 cup butter
1/3 cup honey

  • Mix all other ingredients.
  • Baste frequently with mixture while cooking.

My little guy just loves these home baked goodies, but please remember they're treats and meant to be given sparingly. The ideal food for rabbits is a high quality, fresh hay (I use Oxbow Timothy hay), but once a day I give Bunneh either one of these or a tiny piece of fresh fruit. He also gets fresh vegetables or herbs, but again, the main diet should be the hay and plenty of fresh water. Bunnies are easily amused and not prone to getting bored with food like we are, so don't worry about the hay. ;o) As always, I highly recommend that every pet owner consults with their vet about their pets' diet.

1 pear, ripe and soft (can be steamed if not soft)
1 banana, ripe, broken into pieces
1 tablespoon honey
1/3 cup rabbit pellets, ground finely
1/3 cup old fashioned oats, ground finely
2/3 cup Cheerios toasted oat cereal (the plain oat ones)

Steps:

  • Preheat oven to 325 degrees.
  • Mash together pear and bananas with honey until smooth.
  • Grind pellets, oats, and Cheerios using a coffee grinder (use a grinder only used to make rabbit treats). Mix in with pear/banana mixture until well blended together and allow to cool if you've steamed the pears.
  • Place the dough on either a piece of parchment paper or a Silpat (silicone baking) mat. Whichever you use, place it on a baking sheet for stability.
  • Place a piece of plastic wrap over the dough and roll out until it's about 1/4 inch thick.
  • Some folks use a cookie cutter for the next step, but I just score the rolled-out dough with a large knife in any pattern I want. Be very careful you're not cutting the material beneath the dough (either the paper or the Silpat). You only need to SCORE the dough, not cut all the way through. When they're done, they'll easily break apart.
  • Cook for 30 minutes or until brown on bottom. Check at 20 minutes. My guy doesn't like them overdone.
  • Let cool - for a crunchier treat, turn off the oven, leaving the sheet in until it cools.
  • Once cooled, place in sealed container or bag and refrigerate or freeze. I usually keep a weeks' worth in the refrigerator and the rest are divided into weekly portions and go into vacuum-packed bags in the freezer.

2 young rabbits (approximately 3 pounds each)
2 egg yolks, slightly beaten
3 cups milk
1 1/4 cups flour
1 teaspoon salt
1/2 cup butter
salt and pepper, to taste
currant jelly, for garnish
1 tablespoon parsley, minced

Steps:

  • Wash dressed rabbit with water and cut into serving pieces.
  • Combine eggs and one cup of the milk; add one cup flour gradually, then salt and beat until smooth.
  • Dip rabbit pieces into batter and fry in hot butter until golden brown, about 15 minutes.
  • Reduce heat and continue cooking until tender, 30 to 40 minutes, turning frequently.
  • Place on a heated serving platter.
  • To make gravy; add remaining flour to fat in pan, add remaining milk gradually, stirring constantly.
  • Bring to a boil, stirring constantly, and season with salt and pepper.
  • Pour over cooked rabbit pieces and garnish with jelly and a sprinkle of parsley.

2 large onions, sliced
4 -6 garlic cloves, smashed
2 tablespoons olive oil

50 -70 ml water

Steps:

  • sautee onions in oil, in a large shallow casserole, until transparent.
  • toss in garlic, continue until fragrant.
  • place rabbit pieces on top.
  • cook, stirring energetically for 3-5 minutes until meat is browned.
  • toss in the spices, stir to get everything nicely covered.
  • add water.
  • simmer, covered, for about 35-40 minutes or until cooked through.
  • serve with mashed potatoes, rice or buckwheat.
