Fresh Southern Peach Cobbler image

I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

Time 1h

Yield 4

Number Of Ingredients 16

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

PERFECT PEACH COBBLER

Perfect Peach Cobbler image

Peach is my mom's original cobbler recipe which was passed down to me and it's perfect just the way it is so I didn't even have to tweak it! It can be made with different fruits to suit your taste, blackberries, blueberries, and even apple or sweetened cherry pie filling.

Categories     Other Desserts

Time 1h15m

Number Of Ingredients 9

1 stick butter
1 c self rising flour
1 c sugar
1 large egg
1 c milk
1 tsp vanilla extract
1 can(s) (29 oz) sliced peaches
half of the remaining peach juice
1 Tbsp ground cinnamon

Steps:

  • 1. Preheat oven to 350* F. Place a stick of butter in a 9 x 11 baking pan, (glass, stainless or disposable aluminum), and put in the oven to melt the butter. Remove from oven as soon as butter is melted and starts to foam, about 5-7 minutes.
  • 2. In a mixing bowl mix flour, 1 cup sugar, egg, milk and vanilla by hand until about smooth. There will be some lumps, that's okay. Remove pan with butter from the oven and pour batter into the hot butter - it will spread out on its own.
  • 3. Using a slotted spoon, scoop out peach slices and place into batter, spreading all around the pan. After all of the peaches have been added drizzle about half of the remaining peach juice over the top of the batter then sprinkle the top with cinnamon. Bake at 350* for 1 hour.
  • 4. The batter will rise up and surround the peaches during the baking process. Serve warm with ice cream or whipped cream if desired. Enjoy!

THE BEST PEACH COBBLER

The Best Peach Cobbler image

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 12

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

This recipe is very easy, and a perfect way to showcase ripe peaches. It's not a typical sweet cobbler, it's milder, almost like a bread pudding. That makes it a perfect pairing with vanilla ice cream or whipped cream! Enjoy.

PERFECT PEACH COBBLER

Perfect Peach Cobbler image

I played with a base recipe and came up with this to take to a friend's pool party. It was such a hit. All the guys said, 'Gosh, I didn't know anyone knew how to use a Dutch oven anymore!' I told them they were my guinea pigs because this was my first attempt with fresh peaches instead of canned. I don't think I can go back now; it was perfect, especially served warm with a scoop of vanilla ice cream. A little extra work but I can't wait to make it again.

OLD FASHIONED PEACH COBBLER

Old Fashioned Peach Cobbler image

This classic old fashioned peach cobbler is the perfect summer time dessert!

Provided by Whitney Wright

Categories     Dessert

Time 58m

Number Of Ingredients 10

4 cups peaches (peeled and sliced)
3/4 cup granulated sugar
2 teaspoons lemon juice
6 tablespoons unsalted butter
1 cup all purpose flour
1 cup granulated sugar
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • (Skip this step if using canned peaches). In a small saucepan add the sliced peaches lemon juice, and ¾ cups of sugar. Place over medium heat for a few minutes, stirring occasionally, just until the sugar has dissolved (we want to bring out the juices of the peaches). Remove from heat and set aside.
  • Preheat oven to 350°F. Place the butter in a 13x9 inch pan and place pan in the preheated oven. Once the butter has melted, remove the pan from the oven.
  • In a medium sized bowl whisk the flour, 1 cup of granulated sugar, baking powder, and salt. Stir in the milk. Stir until just combined, don't overmix. Pour this mixture into the 13x9 inch pan, overtop of the butter. Gently smooth into an even layer.
  • Spoon the peaches mixture over the batter. (Or if using canned peaches**, spoon that over the batter). Sprinkle the top with ground cinnamon, use as much or as little as you'd like. I used about 1/2 to 1 teaspoons worth.
  • Bake at 350°F for 38-44 minutes or until the top is golden brown and baked through.
  • Serve warm with a scoop of vanilla ice cream*, if desired.

  • Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven. This cobbler overflows a bit almost every time I make it. The baking pan will catch the drips and prevent a mess in the oven.
  • In a large bowl, combine the peaches and the lemon juice and then add the rest of the filling ingredients. Stir to coat and then pour into a 9x13 baking dish.
  • Bake the peach mixture in the preheated oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine. Toss the grated butter in the flour mixture. Stir in the boiling water, just until combined, leaving plenty of little lumps of butter.
  • Remove the peaches from the oven and drop the topping over them in spoonfuls. (I like to use my smallest cookie scoop to do this.) Sprinkle the cobbler topping with the cinnamon sugar topping. Bake until the crust is golden and a toothpick inserted into the crust comes out clean, about 28 minutes. Serve warm or at room temperature. Enjoy!

  • Sift the flour, sugar, baking powder, baking soda, and salt into a large mixing bowl. Place the bowl in the freezer to chill for 20 minutes.
  • Add the butter to the dry ingredients and toss to combine. Pinch and smear the pieces of butter between your fingers. Processing the butter like this creates small leaves of butter that layer in the dough, resulting in flakes later. Once all the butter chunks have been pinched, grab small handfuls of flour and butter and rub the two together between the palms of your hands until the mixture resembles uneven pebbles on a sandy beach.
  • Create a well in the center of the mixture and add 1/2 cup of the buttermilk. Using a fork, toss the flour and butter from around the edge of the well into the center. Fluff the buttermilk and flour mixture with the fork five or six times, until shaggy looking.
  • Crumble the ricotta cheese into tablespoon-size chunks over the dough, making sure not to break up the cheese too much. Using your hands with your fingers spread wide open, loosely incorporate the cheese into the dough with a lift-and-gently-squeeze motion. Drizzle the remaining 1/2 cup of buttermilk over the dough while using the fork to bring the mixture together into a loose and shaggy mass.
