BEST SOFT PEANUT BUTTER COOKIES

Steps:
- In a medium bowl, mix together flour, baking soda, salt, baking powder cinnamon. Set aside.
- In the bowl of a standing mixer, or in a large bowl with a hand-held mixer, cream together butter and peanut butter until smooth.
- Add sugars and beat until combined.
- Add eggs, vanilla and milk and beat for 30-60 seconds on medium-high speed until the mixture is light in color and sugar is dissolved.
- Add the dry ingredients and mix on low speed until combined.
- If desired, add chocolate chips or other mix-ins and stir until combined.
- Chill in the refrigerator for at least 60 minutes in an airtight container.
- Preheat oven to 375 degrees Line a baking pan with parchment paper and set aside.
- Use a cookie scoop to measure 1 ½ to 2 TBS dough and roll it into a ball. Repeat until all the dough has been used.
- Place 12 cookies on each large baking sheet.
- Use a fork to gently press a crisscross pattern into the top of each cookie.
- Bake in preheated oven for approximately 9-10 minutes. Take them out when they are just *BARELY* starting to turn brown, puffed and just start to crackle.
- Let the cookies sit on the baking pan for 5 minutes before removing to cooling rack.
- Cool completely on a wire rack before serving or storing.

PERFECT PEANUT BUTTER COOKIES RECIPE

- In the bowl of a stand mixer, combine the sugars, peanut butter, butter and vanilla extract. Beat on high for 2 minutes until light and fluffy. Add the egg and yolk, mix until combined.
- In a separate mixing bowl, whisk together the flour, baking soda, cornstarch and salt.
- With mixing speed on low, gradually add the dry ingredients, mixing just until combined. Cover the bowl with plastic wrap and refrigerate for 15 minutes.
- Meanwhile, preheat oven to 350 degrees. Line two cookie sheets with parchment paper or baking mats, set aside.
- Using a standard size cookie scoop, create equal size balls of dough. Roll in the sugar and drop onto the prepared cookie sheets. Place in the oven and bake for 10-12 minutes, do not overbake! The cookies will look underdone... that's exactly what you want (I promise they won't be as they cool). Remove from the oven and allow to cool on the sheets for 3 minutes before carefully transferring them to a wire rack to cool completely.

- In a bowl, add the butter and brown sugar, and stir to combine.
- Add the egg and mix until fully incorporated.
- Stir in the peanut butter and vanilla.
- Add the flour, salt, and baking soda.
- Gently fold in the peanut butter cups.
- Chill dough for at least 1 hour.
- Preheat oven to 350˚F (180˚C).
- Once dough is chilled, scoop out a ball about 2 inches (5 cm) wide. Place on a parchment paper-lined baking sheet, leaving about 2-inches (5 cm) in between each ball of dough.

HOMEMADE PEANUT BUTTER COOKIE RECIPE
Steps:
- In a large bowl beat together butter and peanut butter for about 30 seconds on medium/high, until light and fluffy.
- Add both sugars, baking soda, baking powder and salt. Beat until combined.
- Beat in egg and vanilla.
- Beat in flour on low until incorporated without over mixing. Cover and chill in the fridge for half an hour.
- Preheat oven to 375F.
- Scoop a small amount of dough out and place on un-greased cookie sheet 2 inches apart. Press down on the scoops of dough ever so slightly, as you want to keep a thick cookie.
- Bake for 9-11 minutes, or until the bottoms are slightly golden brown.
- The cookies will look as though they are not ready but they will firm up as they cool. Remove from the oven. After 3 minutes transfer to a wire cooling rack.

We wanted a super peanut buttery treat but found that store-bought peanut butter made the cookies a bit gummy when we used more than 1 cup. So we ground roasted peanuts ourselves and added that to the batter for an additional boost of flavor. Honey and melted butter add richness and create a soft and chewy cookie with an irresistible crackled exterior. We topped the dough balls with raw sugar for extra crunch and a hit of sweetness that balances the salt of the peanuts.

- Position a rack in the center of the oven and preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
- Process the peanuts in a food processor until very finely ground; it should be the consistency of almond flour. Whisk together the ground peanuts, flour, baking soda and salt in a medium bowl.
