PERFECT STICKY SUSHI RICE
This recipe for Sushi Rice comes from an expert, Reiko Hashimoto..It's the perfect rice and basis for a great sushi dish. Follow the recipe exact and you should have no problems. Don't let the long recipe fool you, it's very easy to make.

- Step 1: RINSE THE RICE. Put the three cups of rice in a large bowl. Lightly rinse the rice by adding enough cold water to half fill the bowl and swirl it around with the rice. Rinse it, swirl it again and drain again and again. Scrunch the rice about in the bowl with your hands while rinsing it -- this should take 3 or 4 attempts. Transfer the rinsed rice into a large saucepan. Pour in 3 and 1/3 cups of water and leave it to soak for at least 30 minutes. As it soaks the rice will become whiter and water clear.
- Step 2. PREPARE THE SUSHI VINEGAR. Put half a cup of rice vinegar, quarter of a cup of sugar, a pinch of salt and a tablespoon of powdered Dashi into the small saucepan. Heat gently and stir to ensure that the sugar and salt dissolve. Don't let the mixture boil as it will impair the flavor. Only heat long enough to dissolve. Let it cool while you prepare the rice.
- Step 3. COOK THE RICE. Put the lid securely on top and turn the heat to high. Avoid lifting the lid at all times through out the cookin process as this will allow the steam to escape. When the rice begins to boil, reduce the heat and leave it to simmer for 15 minutes. After the fifteen minutes are up, turn off the heat and leave the rice to stand for another 15 minutes.
- Step 4. STIR IN THE SUSHI VINEGAR. Transfer rice into a large wooden bowl. *I use a glass one and it works fine* Pour the cooled sushi vinegar over the rice. Use a flat spatula in a cutting motion to fold the mixture into the rice. While you are folding, use your other hand to fan the rice. You want to bring that rice to room temperature while folding.
- Step 5. READY TO SERVE. It's best to use the rice immediately. It should be shiny and sticky, with each grain separated and not mashed together. It should be used at room temperature. If you don't need it straight away, cover the bowl with a damp cloth. This will prevent it from becoming to hard.
- You are now ready to start experimenting with sushi recipes.

- Add the sticky rice to a mixing bowl or other deep container. Fill it with water so that the water level is at least 3 inches above the rice, as the rice will expand when soaking.
- Soak for 6 to 24 hours. Soak it longer if you want your sticky rice to have a softer texture.
- Drain the water (no need to shake off the excess water), and evenly arrange the soaked sticky rice on a heat-proof, rimmed plate or bamboo steamer lined with natural steamer liners or parchment paper.
- Cover and steam for 30-45 minutes. When making larger batch of rice, steam in two batches or steam longer. You can check the rice and increase the steaming time if need be.
- Keep the sticky rice in the steamer or covered to prevent drying out until you serve it or use it in a recipe.

PERFECT SUSHI RICE
Here is my recipe for the perfect sushi rice. You can eat this alone or roll into your favorite sushi roll with ingredients of choice. I use strips of carrots, cucumbers and slices of avocado. You can adjust the amount of vinegar in this recipe to suit your taste.

- Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
- In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools.

PERFECT STICKY RICE EVERYTIME
Here are a few tips to get that perfect sticky rice for your Korean meal.

- Use any cup and fill it up to the brim with rice.
- Then pour the rice into a pot (or your rice-cooker bowl). Rinse the rice in cold water. Then pour out the residual water. Rinse and pour-out the water 4-5 times or until the residual water becomes clear.
- Then re-fill the pot with cold water and let the rice soak for 30 minutes.
- After 30 minutes, pour out the residual water from the pot - try your best not to lose any rice grains as you pour out the water.
- Then use the same cup from Step 1 - and fill it up the brim with water. Carefully pour the water into the pot with the rice (or rice cooker bowl). Now, you should have a 1:1 ratio of water-to-rice in the pot.
- If you have a rice cooker, place the bowl in the cooker and turn it on. Then you're finished.
- If you do not have a rice cooker, simply place a lid on the pot (important!). Then put it on the stove - on high heat and bring it up to a boil.
- When you hear the pot boiling, reduce the heat to a medium. Let it cook for 5 minutes (keep lid on).
- Then reduce heat to a low. Let it cook for 10 more minutes (keep lid on).
- Then turn off the heat. Let it rest for 5 more minutes (keep lid on).
- Total cooking time should be roughly 20-25 minutes.

- The night before you want to cook sticky rice, take your raw sticky rice, place it into a bowl or plastic tub, submerge in water, and allow to soak room temperature overnight. Alternatively, you can soak for at least 4 - 5 hours, but overnight is best.
- Take the sticky rice out of the water (and the grains should be softer and a little swollen), and place into a bamboo steamer, or any type of steamer. Cover the steamer with either a lid, or you can do what I did and cover the basket with a cloth, then a metal lid - just to keep all the steam within the rice.
- Add water to a pot with the steamer over the pot (just make sure the water doesn't touch the sticky rice), and once the water comes to a boil, steam for 15 - 20 minutes (usually 15 minutes for me is perfect) on a medium heat.
- After 15 minutes take off the lid carefully, because it will be very hot, and just grab a taste test of the sticky rice to make sure it's soft and fluffy. If it's still a little crunchy, steam for a few more minutes, but if it's good to go, turn off the heat and either eat immediately, or transfer to some sort of airtight container or basket to hold until you're ready to eat.
- Enjoy Thai sticky rice while it's hot and fresh.
KOREAN STICKY RICE
This recipe makes perfectly sticky and fluffy rice (white and brown) to go with any meal. It cooks on the stove top, no special rice cooker required.

- Know Your Rice. Sticky rice can be purchased at Asian food stores. Also known as glutinous rice or sweet rice, this type of grain sticks together when cooked.
- Measure and Soak. Measure out 2 cups of sweet rice and place it in a pot. Add 3 1/2 cups water, stir and leave to soak for at least half an hour. An ideal soaking time ranges between 30 minutes and 6 hours.
