PERFECT STEAMED RICE EVERY TIME
People always ask why my rice comes out perfectly, even though I don't use a rice cooker. Siu Siu Korzilius, my Chinese cooking teacher, taught me that the secret to flaky rice is in the washing. Rice must always be washed before it's cooked to remove the excess starch which keeps it from being sticky. For brown rice, follow these same instructions but add more water (to several inches over the rice) and cook three times as long.

- WASH THE RICE: Rinse under running water, rubbing the grains together between the palms of your hands; continue this rinsing until the water runs fairly clear. THIS WILL TAKE A COUPLE MINUTES; DON'T RUSH THIS MOST IMPORTANT STEP!
- Place rice in a covered sauce pan; add water to 1/2-inch above the rice; put on high heat. Stay in the area -- don't fall asleep -- PAY ATTENTION!
- As soon as it boils rapidly, reduce heat to medium/low and keep simmering for 10 minutes. DO NOT PEEK. DO NOT OPEN THE LID.
- Remove pot from burner but STILL DO NOT OPEN THE LID; let the rice rest undisturbed for five minutes.
- Fluff the rice with a pair of chopsticks before serving.

- Bring water to a boil in a medium saucepan. Stir in white rice and salt. Return to a boil over medium-high heat.
- Reduce heat, and simmer, covered, until rice is tender and has absorbed all the water, 16 to 18 minutes (check only toward the end of cooking time). The rice will be studded with steam holes when ready.
- Remove from heat, and let stand, covered, for 10 minutes. Fluff with a fork before serving.
PERFECT STEAMED RICE
If you don't have a rice cooker, this is the way to prepare absolutely perfect rice. The liquid cooks down before you cover the pot, so you have more control over how much liquid evaporates; this makes all the difference between mushy and fluffy rice.

- Rinse rice in several changes of cold water until water is clear, then drain well in a large fine-mesh sieve. Bring rice and water (3 3/4 cups) to a boil in a 4-quart wide heavy pot and boil, uncovered, without stirring, until steam holes appear in rice and grains on surface look dry, 5 to 7 minutes. Reduce heat to very low, then cover pot with a tight-fitting lid and simmer 15 minutes. Remove from heat and let stand, covered, 5 minutes. Gently fluff rice with a fork.
STEAMED JASMINE RICE
Steps:
- Wash the rice well by putting it in a bowl and covering it with cool water. Swish the rice around with your hand until the water gets cloudy. Drain and repeat until the water gets only slightly cloudy; usually it takes about three rinses.
- Drain the rice, put it in a small (1-qt) metal bowl, and stir in 1 cup cold water and the salt, if using. Fit a rack or steaming trivet into a pot large enough to accommodate the bowl. Pour about an inch of water into the pot. Put the bowl of rice on the rack (it shouldn't touch the water in the pot), cover the pot, and bring the water in the pot to a boil over high heat. As soon as the water in the pot begins to boil, set a timer for 25 minutes and reduce the heat to maintain a steady amount of steam. When the timer goes off, take the pot off the heat and use tongs or a hot pad to remove the hot bowl from the pot. Fluff the rice with a fork and serve.

- Place jasmine rice in an ovenproof small pot; wash with cold water and drain off the water.
- Add clean cold water into the pot to the depth of the second line of your middle finger while touching the surface of the rice.
- Preheat oven to 375°F
- Bring rice and water to a boil; when the water starts to boil, remove from heat and cover the pot.
- Place into the oven and bake for 18 minutes.
- Remove from oven and serve immediately.

- Perfect Thai Jasmine Rice Every Time. Native to Thailand, jasmine rice gets its name from the fragrant jasmine flower. This long-grain rice has a somewhat buttery aroma, reminiscent of popcorn.
- Measure the Rice. Start with good-quality Thai jasmine rice. You will need about 2 cups of uncooked jasmine rice to make enough to serve four to five people.
- Add Water and Salt. Add 2 1/2 cups water and 1/8 teaspoon salt to your rice pot. This rice can also be made without salt if you are watching your salt intake.
- Bring to a Boil. Bring rice and water to a light boil. You should see bubbles forming on the surface of the water. If you place your ear close to the pot, you will hear it gently boiling.

- Fluff the Jasmine Rice and Serve. When ready to eat, remove the lid and gently fluff rice with chopsticks or a fork. Transfer the rice to a serving bowl.
