Dippy eggs are soft boiled eggs best served with toasted soldiers that are used to dip into the delicious warm yellow egg yolks! What a treat for brekkie!

1 slice of bread (white or brown)
1 fresh egg
Pinch of salt
Salted Butter

Steps:

  • Toast the slice of bread and when toasted, butter it and slice into strips. The toast should be fairly firm.
  • In the meantime boil a saucepan of water. Add the egg to the boiling water with a spoon the moment it starts to boil. Boil the egg for exactly 5 minutes.
  • Then remove the egg from the water with a spoon and place under a stream of cold water to stop it cooking further.
  • Take the top of the egg (the non-pointy end) off with a knife and teaspoon, and place a pinch of salt on the top of the runny egg yolk.
  • Serve up in an egg cup together with the soldiers on a plate.

2 large eggs
water
salt
pepper
butter or margarine

Steps:

  • Bring 1/2 inch of water to boil in a pot with steamer basket. ( I use my electric kettle to heat the water super fast.).
  • Using tongs, put both eggs in the steamer basket and cover. Set timer for 6 1/2 minutes.
  • When time is up, immediately run cold water on them.
  • Peel, add salt pepper and butter, or use over pasta or an Aussie style burger!

  • Half-fill a small saucepan with water. Put on the hob over a medium heat and bring to the boil. Once boiling, gently lower the egg into the saucepan using a long-handled, slotted spoon. As soon as the water comes back to the boil, set the timer for 4 minutes. This will give you a lovely soft-boiled egg with a runny yolk, which is perfect for dipping your toast soldiers into. If you want the yolk to be slightly firmer, boil the egg for 5 minutes. If you want a hard-boiled egg with a firm yolk you will need to boil it for 7 minutes.
  • Pop the bread into the toaster and toast until golden brown. Put it on a chopping board and spread it with butter, then cut it into long strips to dip into the egg. Serve the egg with salt and pepper pots.
