1/2 medium yellow onion, finely diced
1/2 medium red bell pepper, diced

1 small carrot, diced
2 3/4 cups vegetable broth or chicken broth
1 teaspoon fine sea salt

If you see holes in the rice when you lift the lid, it's done.
