Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
  • Roll puff pastry over a floured surface; cut into 1.5-inch squares. Place on the prepared baking sheets.
  • Bake in the preheated oven until lightly golden and crispy, 15 to 20 minutes.
  • Transfer baked squares to a wire rack and let cool completely, about 5 minutes. Slice each square in half.
  • Spread 2 tablespoons dulce de leche on half of the puff pastry squares; top with the other half of puff pastry square. Dust with confectioners' sugar.

My Mum's recipe for an easy, shortcut Puff Pastry recipe is so fast to make without all the folding like a traditional pastry, but it still yields amazing results.

2 ⅓ cups (11 ½ oz/ 325g) plain flour
14 tablespoons (7 oz/198g) butter ((frozen))
Pinch salt
8-10 tablespoons chilled water
1 tablespoon lemon juice

Steps:

  • Place your butter in the freezer for a minimum of 2 hours, but preferably overnight.
  • In a jug, mix together your water and lemon juice and set aside.
  • In a large bowl mix together the flour and salt. Now I'm going to sound like a home economics book, but you need everything to be cold to yield great pastry, so feel free to put the bowl of flour in the fridge to chill.
  • On the larger side of a grater, grate the frozen butter directly into the flour mix. Stir the butter into the flour in with a knife. Frozen butter is my secret ingredient. The colder the butter the flakier the pastry. So remember, this is a shortcut shortcrust pastry, so we aren't folding and doing that whole process. I'm all for process, but if you get a great result with less work, then I'm all for that too.
  • Add in the liquid, holding a little back just in case you don't need it all. Using your hand, bring your pastry together gently. You want to add just enough water to bring the pastry together. Too much water will not yield you a flakey dough.
  • Bring the dough together to form a ball. Wrap in cling film and place in the fridge for a minimum of 1 hour. You can refrigerate it for up to 3 days or freeze it to use at a later day.
  • Note: Once you put the pastry in the fridge and it relaxes it will get a little wetter so factor that in.
  • To use your pastry: Follow the instructions required by the recipe you are making. Always bake in a HOT oven for best results.

250g strong flour , plus extra for dusting
225g cold butter

Steps:

  • Put the flour and a pinch of salt in the food processor. Turn it on and steadily pour in 150ml of water. When the dough comes together, cover it in cling film and chill for 20 mins.
  • Lightly flour your surface and roll the dough into a 25cm circle. Put the butter in between two pieces of baking parchment and soften it by tapping it with a rolling pin. Cut the butter in half and repeat the process until the butter is pliable but still cold. Reshape to the size roughly of a postcard.
  • Put the butter in the centre of the pastry and fold over the right and left sides of the circle, overlapping in the middle. Press the dough with your rolling pin to make it longer and then lightly mark into thirds. Fold the bottom third up to cover the middle third and the top third down. Seal the dough gently by pressing down on the edges with your rolling pin. Give the dough a quarter turn.
  • Roll the dough out to a long rectangle (roughly 18 x 38cm), keeping the edges square and the sides straight. Mark the dough into thirds again, fold the bottom third up and the top third down. Seal the edges and give the dough a quarter turn. Repeat one more time, cover and chill for 20 mins.

ice cubes
3 cups all-purpose flour, sifted
1 ½ teaspoons salt

½ cup ice water
1 tablespoon ice water

Steps:

  • Place cubed butter in a bowl; lower into a large bowl full of ice to keep cold.
  • Combine flour, salt, and sugar in a food processor; pulse twice. Add 1/4 cup of the butter cubes and pulse 4 times. Repeat with the remaining butter cubes, 1/4 cup at a time. Place mixture into a large, chilled bowl.

  • Roll chilled dough out into a square. Place whipped butter in the center of the dough and smooth outward, leaving a 1/2-inch edge. Fold dough in half; pinch edges and seal. Wrap in plastic wrap and chill for another 30 minutes.
  • Roll dough out into a rectangle. Fold 1/3 of the dough into the center. Fold the other side toward the center to overlap the first fold. Rotate dough 90 degrees. Roll out into a rectangle again. Repeat folding. Make 2 indents in the top of the dough with your finger to show you've completed 2 folds. Wrap dough again and chill for 30 minutes.
  • Repeat folding and rolling 4 more times, marking the dough before chilling every time. Cut in half after the sixth fold; wrap each half and chill.

2.1 oz unsalted butter (grated and frozen )
7 oz unsalted butter (grated and frozen (weigh the butter after grating it))
12.3 oz AP flour (that has been kept in the freezer for a couple of hours)
8-10 tbsp ice cold water (I used about 9.5 tbsp (142mL))
1 tsp salt
1/2 tsp lemon / lime juice ((or white vinegar))

Steps:

  • In a bowl, combine the flour, salt and the 60 g / 2.1 oz of butter. With your fingers quickly rub the butter into the flour.
  • Add the lemon and water, a tablespoon at a time, while mixing with a wooden spoon or your finger tips to bring the dough together.
  • Add enough water to form a firm dough (that is not tacky or too wet).
  • Knead the dough on a floured surface for about a minute, and leave it to rest for about 5 minutes (in the fridge).
  • Roll the dough out into a long rectangle (about 6 - 7 inches wide, and 15 - 16 inches long).
  • Sprinkle 100 g / 3.5 oz of grated butter on 2/3rds of the area of this rectangle.
  • Fold over the portion without butter, towards the middle.
  • Then fold over the other end, over the first fold. You completed one fold (while laminating butter).
  • Turn the dough 90 degrees and roll it out to form another long rectangle (about 5 - 6 inches wide, and 15 - 16 inches long).
  • Repeat with the rest of the butter and fold over, (completed 2nd fold with second lamination) and turn 90 degrees. Now you have incorporated all the butter in two folds.
  • Complete 3 more folds so you have folded the dough about 5 times. You shouldn't need to refrigerate between folds, if you work quickly, HOWEVER if it's a hot day and the butter starts to seep through, keep the dough in the freezer for about 10 minutes to harden the butter and continue.
  • After the fifth and final folding, wrap the dough in plastic wrap and store it in the fridge until needed.
  • Let it rest for at least 2 hours before using. (I prefer to leave it longer, even overnight for best results.)
  • If you're not using it right away, cut the dough in half, wrap individual pieces in plastic wrap and store in the freezer.

1 pound sifted all-purpose flour
1 pound (4 sticks) cold unsalted butter, cut into small pieces
1 teaspoon salt
1 cup heavy cream

Steps:

  • In a food processor or using the flat paddle on an electric mixer, mix 1/2 cup flour with the butter until very smooth. Shape into a flat square 1 inch thick, wrap in plastic, and chill for at least 30 minutes.
  • In a large mixing bowl, combine salt with the remaining flour and add the cream. Mix dough well by hand or with an electric mixer; the dough will not be completely smooth, but it should not be sticky. Shape it into a flat square 1 1/2 inches thick, wrap in plastic, and chill for at least 30 minutes in the refrigerator or 15 minutes in the freezer.
  • Remove flour dough from the refrigerator. On a lightly floured board, roll the dough into a rectangle twice as long as the butter dough. Place butter dough in the center, fold up ends to encase it completely, and seal edges by pinching together. Wrap well in plastic and chill for at least 30 minutes so that dough achieves the same temperature throughout.
  • Remove dough from the refrigerator and, on a lightly floured board, roll it out into a large rectangle about 1/2 inch thick. Fold into thirds, aligning edges carefully and brushing off excess flour. The object is to ensure that the butter is evenly distributed so that the pastry will puff evenly when baked. Wrap dough and chill for at least 30 minutes. This completes 1 turn.
  • Repeat this process 5 more times; classic puff pastry gets 6 turns, creating hundreds of layers of butter between layers of the flour dough (729, to be exact). Use as little flour as possible when rolling out the dough, and always brush off any excess. Remember to let the dough rest and chill between turns. This chilling makes the rolling out much easier and keeps the layers of butter of equal thickness.
  • By the sixth and final turn, the dough should be very smooth, with no lumps of butter visible. Wrap the pastry in plastic and refrigerate until ready to use (up to 2 days), or freeze for future use. (It's convenient to divide the dough into 1-pound pieces and freeze it that way.)

  • Coarsely dice remaining 4 tablespoons (1/2 stick) butter. Place flour in work bowl of food processor fitted with metal blade; add 4 tablespoons butter and pulse until butter is absorbed -- about ten to twelve 1-second pulses.
  • Add remaining butter and pulse once or twice to distribute. Add water and pulse 3 or 4 times, just until dough forms a rough ball. Do not over-process.
  • Flour work surface and scrape dough from work bowl. Shape dough into a rough rectangle and place between 2 pieces of plastic wrap. Press dough with rolling pin to flatten, then roll back and forth several times with rolling pin to make a 12 by 18 inch rectangle of dough.
  • Peel away plastic wrap and invert dough to floured work surface. Peel away second piece of wrap. Fold dough in thirds in the width, folding the top third down and the bottom third up, to make a 6 by 18-inch rectangle, then roll up the dough from one of the 6-inch ends, making sure to roll end under dough. Press the dough into a square, wrap in plastic and refrigerate 1 hour, or until firm.

2 cups unsalted butter, at room temperature

Steps:

  • Mix the flour and salt together in a large bowl or in the bowl of a stand mixer that is fitted with a dough hook. Gradually stir in water until the dough holds together enough to clean the sides of the bowl. You may not need the full amount of water. Shape into a flat ball, and allow to rest for at least 10 minutes.
  • Place the butter between two pieces of plastic wrap and pound into a flat disc using a rolling pin or other heavy object. Refrigerate until firm, about 20 minutes.

  • Repeat this rolling, folding and turning two more times, then refrigerate until firm. Repeat two more times for a total of 6 ''turns''. Wrap and refrigerate. The dough is now ready to roll out and use in any recipe calling for puff pastry. Roll the dough out as thin as 1/4 inch to make pastries. Bake in a preheated oven of at least 400 degrees F (200 degrees C) to get the maximum puff from your pastry.

  • To begin making the Quick Puff Pastry Recipe Sheet for making puffs, measure all the ingredients and keep them ready.
  • Add flour and salt to a large mixing bowl and give a quick stir to combine it. Add the large cubes of butter into the flour mixture.
  • Ensure each piece of butter is coated fully into flour. When it is coated in flour it will be less likely to melt and also less likely to melt out of the dough later when we roll to make the sheets.
  • This process of covering the butter with flour is called lamination of the butter with flour. If it is not laminated well, the butter will melt out of the dough and you will end up with a puff that is not flaky.
  • Next, squish up the cubes of butter coated with flour by pressing between your fingers. Like shown in the image below.
  • Once all the pieces are squished, just toss them in flour once again. You need to ensure all the butter pieces are well coated with flour.
  • Make a well in the center and add little ice water at a time. Starting with 1/3 cup and then adding more if required a tablespoon at a time. Because every single brand of flour absorbs moisture differently, we need to ensure we add that water little at a time.
  • To mix the water in, toss the flour into the water and it helps the water get incorporated to form the dough without kneading. Do not knead the dough, as it can activate too much gluten.
  • When it gets to a stage where the puff pastry dough forms large clumps, you can knead a little to understand how much more moisture is needed to bring the dough together without breaking those butter shingles.
  • It is important to get the dough to the right hydration level. If it becomes too wet, then the dough will become sticky and might not be the best thing for puff pastry.

  • Slowly add 100ml of ice-cold water and mix it until you have a smooth dough (add extra water if needs be) – do not overwork.
