- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
- Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Steps:
- Combine potatoes and spices with half cup oil.
- Shake so all potatoes are coated.
- Let Marinate in the fridge 4 hours.
- Heat oven to 350 degrees F.
- In glass baking dish, pour 2 tbsp Olive and spread around bottom of dish.
- Spread marinated potatoes on bottom of dish in a single row.
- Bake 1 hour, flip potatoes half way through cooking.

- Boil the potatoes with the garlic in salted water until tender. Drain the potatoes, reserving a half cup of the water.
- In a deep pot, heat some oil then add the green onion, parsley, spices, lemon juice, and 1/4 cup of the water. Saute just until the green onions are tender.
