A unique pie recipe from an old Amish cookbook. This Amish Pineapple Pie is a creamy, cool sweet treat that won't heat up your kitchen!

1 cup crushed pineapple (undrained)
1 cup cold water
1/2 cup white sugar
1/8 teaspoon salt
3 tablespoons cornstarch
2 large eggs (separated)
1 baked pie crust (or graham cracker crust)
Cool Whip (8 ounces)

Steps:

  • In a medium saucepan over medium heat, cook the pineapple, water, sugar, salt, cornstarch and egg yolks, stirring constantly.
  • Once the mixture starts to boil, reduce the heat slightly and let the mixture cook until it has thickened. It should be about the texture of a very soft pudding.
  • In a small bowl, beat the egg whites until they are frothy and thick.
  • Add the egg whites to the pineapple mixture while it is hot. Fold it in to mix.
  • Pour the pie filling into the baked pie shell.
  • Refrigerate the pie for at least 4 hours.
  • Before serving, top the pie with Cool Whip.
  • Slice and serve cold.

2½ cups of flour (300 grams)
1/3 cup of white sugar (68 grams)
A pinch of salt
1½ sticks of cold butter (170 grams) (cut into small cubes)
3 large eggs
About 1 or 2 tablespoons of cold milk (if needed, to knead the dough.)
1 beaten egg yolk (to varnish the pie crust before baking)
5 cups of fresh pineapple (about 800 grams) (cut into cubes (about 1 large pineapple))
5 tablespoons of cornstarch ( 50 grams)
1 cup of water ( 250 ml)
1 cinnamon stick (about 2½ inches long)
1 cup of sugar * (200 grams)

Steps:

  • Combine the flour, sugar, and salt in a large bowl. Add the butter to the flour mixture. With the help of a fork, mix until the texture resembles coarse cornmeal, then add the eggs one by one and continue mixing with the fork or a pastry cutter.
  • Place the dough on a work surface (that is lightly dusted with flour) where you can knead it with your hands. If the dough is very dry, add the two tablespoons of cold milk little by little.
  • Divide the dough into two pieces, then press down on them to form two disks. Cover them with plastic wrap and place in the refrigerator for at least a half hour. Remove from the fridge when you're ready to bake, and the filling is completely cold.
  • To roll the dough, use a rolling pin to flatten each disk on a floured surface. Flatten each piece out to form a circle about 12 inches in diameter and 1/8 of an inch thick. Line your pie dish with the first one and use the other to cover the pie after you've added the filling.
  • Place the pineapple (chopped into large cubes), sugar, and cinnamon stick in a large pot. Turn the heat to low.
  • In a small bowl, mix the cornstarch with the cup of water until it has completely dissolved, then pour this mixture into the pot with the pineapples and stir.
  • Keep cooking the pineapple mixture for about 10 more minutes, after which it will begin to thicken, like if you were making a gruel. Once it thickens and changes into a more transparent color, keep cooking for 5 more minutes, then remove it from the heat and allow to cool and discard cinnamon stick. The filling needs to be completely cool when added to the pie crust.
  • Line the pie dish with the first disk of dough and pour the pineapple filling over it. Put the other disk of dough over the filling and cut a small vent on the top. Trim the excess dough from the edge of the pie and press down on it to form a seal between the top and bottom halves. Crimp the edge of the dough with your fingers, then brush the top surface of the pie with the beaten egg yolk.
  • Bake the pie in a preheated oven at 350ºF for 50 to 60 minutes. When the pie is ready, it will have a golden crust and the filling will be bubbling.

Steps:

  • Preheat oven to 300 F
  • Combine cornstarch, 1/4 cup sugar, and salt in a saucepan
  • Add pineapple (including liquid)
  • Cook over medium heat, stirring, until clear and thickened
  • Beat egg yolks with 1/4 cup sugar and add to pineapple mixture
  • Cook 1 minute
  • Cool
  • Add lemon juice and pour into pie crust
  • Make meringue by beating 2 egg whites until stiff, gradually add the remaining 1/4 cup sugar
  • Top pie with meringue and bake for 30 minutes

6 cups cut-up pineapple (2 medium)
1 cup sugar
2 tablespoons rum
2 cups all-purpose flour
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 6 tablespoons cold water
1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon butter or margarine
1 package (8 oz) cream cheese, softened

Steps:

  • In large glass or plastic bowl, stir pineapple, 1 cup sugar and the rum until mixed. Cover and refrigerate at least 4 hours.
  • In medium bowl, mix 2 cups flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide in half; shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425ºF. With floured rolling pin, roll 1 pastry round into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
  • Drain pineapple, reserving juice. Spoon pineapple into pastry-lined pie plate. In 1-quart saucepan, mix 1/2 cup sugar, 1/2 cup flour, the cinnamon and nutmeg. Stir in 1/2 cup of the reserved juice (reserve remaining juice). Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in butter. Pour over pineapple. Trim overhanging edge of pastry 1 inch from rim of pie plate.
  • Roll other round of pastry into 10-inch round. Cut round into 1/2-inch strips. Place 6 strips across filling. To make lattice top, weave a cross-strip through center by first folding back every other strip going the other way. Continue weaving lattice, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends of strips. Fold trimmed edge of bottom crust over ends of strips, building up a high edge; seal and flute. Cover edge with 3-inch strip of foil to prevent excessive browning during baking.
  • Bake 35 to 45 minutes or until crust is brown and filling is bubbly, removing foil for last 15 minutes of baking.
  • In medium bowl, beat cream cheese with electric mixer on medium speed, gradually adding 1/4 cup plus 2 tablespoons reserved pineapple juice until smooth and creamy. Serve with pie.

2 cups all-purpose flour
2 tablespoon granulated sugar
½ teaspoon salt
12 tablespoons (1 1/2 sticks; 6 ounces) cold unsalted butter
4 ½ ounces cold cream cheese
2 tablespoons iced cold water
5-6 cups diced fresh pineapple (see notes)
⅓ cup brown sugar
⅔ cup granulated sugar
1 teaspoon cinnamon spice
½ teaspoon nutmeg spice
2 ½- 3 tablespoons flour
1/2 teaspoon salt
1 tablespoon lemon zest
1 tablespoon lemon juice
1 tablespoon rum ( (optional))

Steps:

  • Combine the flour, sugar, and salt . Then place in the freezer until ready to use.
  • Remove flour mixture and add about half to a food processor, followed by butter and cream cheese. Pulse for a few seconds then add remaining flour .
  • Continue to pulse just until the crumbs of dough are the size of peas. Then add iced water. Pulse about 4-5 times until the dough barely comes together.
  • Turn dough out onto a lightly floured surface or place in between two wax paper.
  • Press the dough until it holds together in a smooth, flat disk. Divide dough ih half ( one slightly bigger than the other ).Chill for about 30-45 minutes.
  • Roll out the largest dough into about 12 inches, for the smaller disk roll it out and cut out dough into long strips for the lattice.
  • Transfer the dough to a 9-inch pie plate, gently fit it in, trim any excess dough hanging on the edges, then decorate the edges.
  • Refrigerate the pie and strips for at least 45 minutes or until ready to be bake.
  • In a large bowl combine: pineapple, brown and granulated sugar, cinnamon spice, nutmeg, flour, salt , lemon zest, lemon juice and rum. Mix well to combine.
  • Place filling in prepared pie pan, cover with pie strips. Lightly brush with egg wash.
  • Cover edge of crust with foil to prevent excessive browning.
  • Heat oven to 375°F. Bake 40 to 45 minutes or until the pie is bubbly and crust is golden brown. Remove foil last 15 minutes before pie has cooked through.
  • Serve warm with ice cream.

  • In a medium sized mixing bowl combine the flour, baking powder and salt. In another medium sized mixing bowl with a hand mixer combine the softened butter and sugars and beat until incorporated. 1 can (15 oz.) crushed pineapple in juice, well drained
10 maraschino cherries

Steps:

  • Preheat oven to 350°F. Place 14 of the cookies in food processor container; cover. Process until finely crushed. Mix crumbs with butter; press firmly onto bottom and up side of 9-inch pie plate. Bake 6 to 8 min. or until golden brown. Cool on wire rack.
  • Coarsely chop remaining 10 cookies. Remove 1/4 cup of the chopped cookies; cover and set aside for later use. Add milk to dry pudding mix in medium bowl.
