Time 40m

Yield 4 servings

Number Of Ingredients 11

Vegetable oil, for deep frying
3 large russet potatoes
2 cups rice flour
1 tablespoon baking powder
3 teaspoons salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 (12-ounce) can soda water
1 large egg, lightly beaten
2 (8-ounce) cod or haddock fillets, cut in 1/2 on an angle
1/2 cup rice flour, for dredging
Malt vinegar, for serving

Steps:

  • Heat 3 inches of the oil in a deep fryer to 325 degrees F. Alternatively, use a deep heavy skillet.
  • Peel the potatoes and cut them into chips (that is, fries) about the size of your index finger. Put the potatoes in a fryer basket and lower into the oil. Fry the chips for 2 to 3 minutes; they should not be crisp or fully cooked at this point. Remove the chips to a paper towel-lined platter to drain.
  • Crank the oil temperature up to 375 degrees F. In a large mixing bowl, combine the flour, baking powder, salt and pepper. Combine soda water and egg and pour into the flour mixture. Whisk to a smooth batter. Spread the rice flour on a plate. Dredge the fish pieces in the rice flour and then dip them into the batter, letting the excess drip off.
  • Put the chips in the bottom of the fryer basket and carefully submerge in the hot oil. Carefully lower the battered fish into the bubbling oil on top of the chips. Fry the fish and chips for 4 to 5 minutes until crispy and brown. Remove the basket and drain the fish and chips on paper towels; season lightly with salt. Serve wrapped in a newspaper cone with malt vinegar and/or tartar sauce.

Yield 4 Servings

Number Of Ingredients 19

4 skinless fillets of white fish, such as cod or haddock, cut in half lengthways
1 tbsp plain flour
½ tsp turmeric
½ tsp ground cardamom
½ tsp curry powder
½ tsp chilli powder
1 egg, beaten
100g panko breadcrumbs
Olive oil, for drizzling
Sea salt and black pepper
500g potatoes, unpeeled and cut into small chunks
2 tbsp olive or vegetable oil
2 tsp cumin seeds
2 tbsp green chillies, finely chopped
400g peas (frozen are fine)
Small bunch of coriander
2 tbsp crème fraiche
1 tbsp lime juice
Pinch of chilli powder

Steps:

  • First start the potatoes. Preheat the oven to 200°C/Fan 180°C/Gas 6. Bring a large pan of water to the boil and add salt. Add the potatoes and cook for 4-5 minutes, then drain. Pour the oil into a roasting tin and add the potatoes. Toss and sprinkle in the cumin seeds, then roast in the oven for 25 minutes.
  • Pat the fish fillets dry. Mix the plain flour with the spices, salt and pepper. Dip the fish into the seasoned flour and coat well. Pat off any excess, then dip the fish in the beaten egg and lastly into the panko breadcrumbs.
  • Remove the potatoes from the oven and sprinkle with the green chillies, then lay the fish on top. (If the tin seems too crowded, cook the fish in a separate tin instead.) Drizzle with a little olive oil and cook for a further 10 minutes. Remove from the oven.
  • Simmer the peas in hot water for 2-3 minutes. Drain and purée with the coriander, crème fraiche, lime juice and chilli powder. You can make this as coarse or as smooth as you like. Warm through again and serve with the fish and potatoes.

Provided by Terence Carter

Categories     Main

Number Of Ingredients 10

400 g whitefish fillet (cut into 4 pieces, patted dry on paper towels)
500-1,000 ml peanut oil (or similar vegetable oil)
90 g rice flour
40 g self-raising flour
10 g cornstarch
2 g baking powder
80 ml gin
10 g honey
90 ml lager beer
50 ml dark beer

Steps:

  • Preheat the oil to 180˚C. Prepare an oven tray with a cooling rack lined with paper towels.
  • For the batter, combine the flours, cornstarch and baking powder in a large bowl. Mix the gin and the honey in a cup and add to the bowl. Whisk the mixture together. When ready, add the cold beer and whisk.
  • Have a plate with a layer of rice flour ready to lightly dust the fish fillets.
  • With the fillets having been patted dry, dust a fillet in the rice flour and shake off the excess before immediately coating in the batter mixture.
  • Let it drip for a second and add to the deep fryer. Check the colour of the bottom of the fillet after 1 minute. If it's golden brown flip the fillet over and cook for another minute. If it's not yet golden, wait another 30 seconds before flipping.
  • Drain the cooked fillets on the paper towel lined tray, season and serve with fries, tartare sauce, lemon or lime wedges and dill pickles.

  • Preheat the oven to 180°C/350°F/gas 4.Peel and slice the potatoes into chips. To make the mushy peas, pick and finely chop the mint leaves.
  • Place the butter in a pan over a medium-low heat, add the peas and mint, pop the lid on and simmer gently for 10 minutes.Add a squeeze of lemon juice and season to taste with sea salt and black pepper – you can either mush the peas up in a food processor, or mash them by hand until stodgy, thick and perfect for dipping your fish into.
  • Keep them warm until needed.Pour the sunflower oil into a deep fat fryer or a large sturdy pan and heat it to 190°C/375°F.
  • Mix ½ a teaspoon of salt and 1 teaspoon of pepper together, then use it to season the fish fillets on both sides – this will help to remove any excess water, making the fish really meaty.

  • **SEE BLOG POST Q&A SECTIONS FOR DETAILED TIPS & TRICKS**For the Chips: Heat the oven to 200 F.Heat the oil in a deep fryer or a large heavy pan or Dutch oven until the temperature reaches over high heat until it reaches 325 degrees F (I use this instant read thermometer). Thoroughly drain the sliced potatoes and blot them with paper towels to remove excess water. Once the oil is 325 F carefully fry the potatoes in small batches to avoid overcrowding and fry for 2-3 minutes until pale and softened. Use a slotted spoon to remove them from the oil and let them cool to room temperature. Increase the temperature to 375 degrees F. Carefully add the fries again, frying in small batches, until they are golden brown and crispy, another 2-3 minutes. Remove with a slotted spoon, place them on a baking sheet or roasting rack, sprinkle with salt while they're still very hot, and place them in the warmed oven while you're frying the fish.
  • For the Fish: Combine the flour, baking powder and salt in a large flat bowl. Pour in the cold beer and whisk until smooth (use the batter immediately, do not let it rest for a while). In another large flat bowl add some extra flour for dredging.Blot the fish with paper towels to remove excess moisture. Thoroughly dredge all sides of the fish in the flour and shake off the excess.Dip the fish into the beer batter to thoroughly coat all sides, allowing some of the excess batter to drip off (but not too much!)
  • For Frying the Fish: You can either use a deep fryer or you can use a medium-sized skillet and fill it with oil to a depth of about an inch. Heat the oil to between 350 F and 375 F, using a candy thermometer. Carefully drop the fish into the oil.Fry the fish in the deep fryer for 5-8 minutes or until nicely golden. If using a frying pan fry the fish for about 2 minutes on each side or until nicely golden. Remove the fish with a slotted spoon, letting the oil drop off, then place the fried fish on paper towels for a few seconds and serve immediately. (If you wait too long to serve the batter will lose its crispiness.)Serve with the chips, a sprinkling of quality British malt vinegar and if desired a serving of authentic British Mushy Peas (click link for recipe). Though not traditional in the UK, you can also eat the fish with the BEST Homemade Tartar Sauce.
