PERFECT EGG FRIED RICE (+ VARIATIONS)



Perfect Egg Fried Rice (+ Variations) image

Showing you how to cook perfect egg fried rice! Made with a simple ingredient list including rice, carrots, beans and eggs tossed in a simple soy and sesame oil sauce. It's kid-friendly, freezer-friendly, and perfect for using up what you have in your fridge and pantry.

2 tablespoons vegetable oil (divided)
6 large eggs
salt & pepper
2 onions ((diced))
3 tablespoons ginger ((grated))
2 carrots ((peeled and finely chopped))
1 bell pepper ((diced))
6 oz green beans ((2 cups; cut into small pieces))
1/4 cup reduced sodium soy sauce
1 tablespoon sesame oil
3.5 cups cooked and cooled rice ((day old recommended; see note *))
1/4 teaspoon salt ((**see note))
1 tablespoon toasted sesame seeds

Steps:

  • Heat 1 tablespoon of oil over medium heat in a large wok or pan.
  • Beat the eggs together, season with salt and pepper, then add to the heated pan.
  • Cook the eggs, scrambling, until cooked through. Transfer the eggs to a clean bowl.
  • Add the remaining tablespoon of oil to the wok or pan.
  • Add the onions and ginger, and cook for 3 minutes.
  • Add the carrots, bell pepper and green beans, and cook for another 5 or so minutes, until cooked to your liking.
  • Add the soy sauce, sesame oil and rice to the pan and stir until everything is evenly distributed.
  • Fold in the eggs.
  • Taste and add more salt if necessary.
  • Sprinkle with sesame seeds and enjoy!

Another recipe that I acquired from a Chinese cooking class that I took. This is a basic fried rice recipe, but has lots of optional ingredients that you can pick and choose to add to the rice.

4 cups brown rice, cooked, cold
2 green onions, chopped
2 tablespoons oil, to 4
2 tablespoons soy sauce
1/2 teaspoon salt (optional)
1/2 teaspoon sugar (optional)
1 teaspoon sherry wine
2 eggs, beaten
roast pork (optional)
roast beef (optional)
lamb, roasted (optional)
duck, roasted (optional)
turkey, roasted (optional)
chicken, roasted (optional) or chicken, boiled (optional)
boiled ham (optional) or baked ham (optional)
bacon, pan fried (optional)
Chinese sausage, steamed (optional)
crabmeat, flaked (optional)
lobster, boiled and diced (optional)
shrimp, cooked (optional)
bamboo shoot (optional)
bean sprouts, blanched (optional)
celery, blanched (optional)
cucumber, add at the very end (optional)
green peas, parboiled (optional)
lettuce, add at the very end (optional)
mushrooms, fresh, canned (soak if dried, optional) (optional) or dried mushroom (soak if dried) (optional)
onion (optional)
bell pepper (optional)
pimiento (optional)
scallion (optional)
string bean, parboiled (optional)
tomatoes, peeled, add at the very end (optional)
water chestnut (optional)
1 tablespoon almonds, blanched and chopped (optional)
1 tablespoon peanuts, chopped (optional)
1 tablespoon walnuts, blanched and chopped (optional)
1 tablespoon raisins (optional)

Steps:

  • Dice or shred meat and vegetables.
  • Heat oil in wok; stir-fry green onions.
  • Add fresh vegetables and stir-fry to soften.
  • Add canned vegetables and meat; stir-fry to heat and blend flavors.
  • Remove from wok.
  • Heat some more oil if needed, to smoking.
  • Add rice and heat through completely.
  • Return vegetables and meat to wok, add soy sauce, salt, sugar and sherry.
  • Fold in eggs and turn off heat just as they begin to set.
  • SUGGESTED combinations:.
  • beef, onions and green pepper.
  • bacon, onions, lettuce and tomatoes.
  • chicken, onions and bean sprouts.
  • chicken, bamboo shoots, mushrooms and cucumber.
