Steps:
- Rinse cranberries: Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries.
- Stir in mix-ins, if using: Once the cranberries have burst you can leave the cranberry sauce as is, or dress it up with other ingredients. We like to mix in a half a cup of chopped pecans a pinch or two of orange zest. Some people like adding raisins or currants, or even blueberries for added sweetness. You can also add holiday spices such as cinnamon, nutmeg, or allspice. If adding spices, start with a pinch of each and add more to your taste.

THE BEST CRANBERRY SAUCE
Our classic cranberry sauce has the ideal texture of tart whole berries suspended in a sweet jammy sauce; we added citrus peel for a little extra brightness. Don't be tempted to skip the salt and and pepper at the end. It may seem a bit odd, but salt brings out the fruitiness of the berries while pepper gives the sauce a warm and spicy finish.

Steps:
- Combine cranberries, sugar, orange juice, water, corn syrup, port wine, lime juice, cinnamon sticks, 1 1/2 teaspoons orange zest, cloves, and 1/4 the pomegranate seeds in a heavy pot; bring to a boil. Reduce heat to low and simmer, stirring occasionally, until cranberries pop and sauce is thickened, about 30 minutes.
- Taste the sauce and add more sugar, corn syrup, or port wine if desired. Remove cloves or cinnamon if the taste is overpowering at this point and add more port wine or lime juice.
- Continue to simmer sauce, stirring occasionally, until desired consistency is reached, 15 to 30 minutes. Remove pot from heat and cool, about 30 minutes. Sauce will thicken as it cools. Remove cinnamon sticks and cloves if still in sauce. Stir remaining pomegranate seeds into sauce and garnish with remaining 1 1/2 teaspoons orange zest.

5 SECRETS TO THE PERFECT CRANBERRY SAUCE | MYRECIPES
From myrecipes.com
Estimated Reading Time 3 mins
- Use whole cranberries. Around Thanksgiving, whole cranberries will probably appear in your grocery store. There will probably be fresh and frozen. Use these to get vibrant cranberry flavor, not juice.
- Keep it tangy. If you’re making your own cranberry sauce, you want it to taste homemade, not like the canned stuff. And one of the advantages to this is your ability to make your sauce pretty tangy, which is a better offset to the rich flavors of other Thanksgiving dishes that you're going to be eating.
- Use fresh citrus. I love a healthy dose of orange juice and orange zest in my cranberry sauce. The juice brings a little natural sweetness that doesn’t edge toward sugary, and the zest adds depth of flavor and a hint of bitterness that I find is quite welcome at the Thanksgiving table.
- Chill on the spices. Lots of cranberry sauce recipes tell you to add spices like nutmeg and cinnamon, but I’m here to tell you to close the spice drawer.
- Make it ahead! If you’re in charge of the main meal, and you’re planning to make your own cranberry sauce, I salute you. I also highly recommend that you make it in advance.
