TO DIE FOR BLUEBERRY MUFFINS
These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

- Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
- Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
- To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
- Bake for 20 to 25 minutes in the preheated oven, or until done.

BEST EVER BLUEBERRY MUFFINS

- Preheat your oven to 375 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
- Add the flour, sugar, salt and baking powder to a bowl and whisk together to combine.
- Add the blueberries and lemon zest and stir them gently into the flour mixture. Adding the blueberries now will prevent them from bleeding into the muffin batter (so they won't turn the batter purple) and it will also help the blueberries not to sink to the bottom of the muffins as they bake.
- Measure the milk into a 2-cup size liquid measuring cup.
- Add the egg, vanilla and vegetable oil and whisk them together with a fork.
- Pour the wet ingredients into the dry ingredients and stir everything together gently just until combined with a wooden spoon or a silicone spatula - just until no streaks of flour remain.
- Portion the batter into the 12 muffin cups, filling them about 2/3 to 3/4 full. This recipe makes between 12 and 16 muffins, depending on the size of your pan.
- Top each muffin with a couple extra fresh blueberries, if desired (this step is optional, but it makes for a beautiful presentation).
- Bake the muffins at 375 degrees Fahrenheit for about 20 minutes or until the tops of the muffins are a light golden brown and a toothpick inserted into one of the muffins comes out clean.

BLUEBERRY LEMON MUFFINS
Light, moist and buttery blueberry muffins, with a touch of lemon and chock full of blueberries!

- Preheat oven to 375F, with rack in centre of oven.
- Grease/spray 12 muffin cups, greasing both the cups and the top of the muffin tin. Set aside.
- In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
- In a large bowl or the bowl of a stand mixer fitted with a paddle attachment, beat together the butter, sugar, eggs, vanilla and lemon zest until light and fluffy, about 5 minutes, scraping down the sides of the bowl a couple of times.
- With mixer on low, add 1/3 of the flour mixture, then 1/2 of the milk, another 1/3 of the flour, the rest of the milk, then the rest of the flour mixture. Beat until smooth.
- Using a spatula, gently fold in the blueberries until combined.
- Using an ice cream scoop, divide the batter between the 12 muffin cups, filling each about 2/3 full. Place 3 blueberries in a the centre of each muffin, gently pressing them into the batter.
- Bake in preheated oven for 25-30 minutes, or until golden brown around the outside and a tester inserted in the centre comes out clean. Remove from oven and let cool in the pan set on top of cooling racks for about 10-15 minutes. Carefully remove muffins from pan, by running a knife under the muffin top edges then gently lifting out. Place on cooling rack to cool completely.
- Serve garnished with a dusting of confectioners/icing sugar, if desired.

- Preheat oven to 350 degrees F.
- Line muffin pan with paper liners.
- In medium bowl, blend together butter, sugar, eggs, milk, and vanilla.
- In large bowl, sift together flour, baking powder and salt.
- Pour butter mixture into dry ingredients and mix well.
- Fold blueberries into mixture carefully berries aren't crushed.
- Spoon muffin mix into paper liners.
- Bake for 25 to 30 minutes depending on how full the liners are, I like to overfill a little because the top of the muffin is my favorite part but it may take a little longer to cook depending on the oven.

- Preheat oven to 375° F. Grease the wells of a 12-well muffin tin with butter or cooking spray (see note below).
- Melt butter in a large heatproof bowl in the microwave (it should not be hot) then whisk in the sugar, lemon zest, yogurt, and egg until smooth. Add the baking powder, baking soda, and salt and whisk until well-combined. Gently fold in the flour and berries. Doing so at the same time will prevent the berries from sinking to the bottom of the muffins. The batter should be very thick.
