PERFECT BAKED POTATOES - OVEN OR GRILL
I despise bland baked potatoes! This is a cooperative recipe that I put together using techniques I have gathered from my father, brother in law, eldest brother and myself. I know that you will love the ease of putting together these very flavorful baked potatoes. NOTE: There is a pictorial tutorial in the photo gallery to the left.

- FLAVORED OIL: In a small bowl, whisk together olive oil, liquid smoke and garlic. Set aside.
- SEASONING MIX: In a small dish mix kosher salt, garlic powder and black pepper. Set aside.
- Wash, scrub and dry potatoes well. With a sharp paring knife, cut out a nice wedge from the potato's middle. Remove the wedge and place 1 teaspoon of butter in the hollow. Sprinkle with seasoning mix. Replace the wedge pressing down gently.
- Place each potato on its own sheet of foil. Rub the potato with the olive oil mixture making sure to get some of the crushed garlic on the potato. Sprinkle with additional seasoning mix and roll up tightly in aluminum foil.
- OVEN: Place potatoes in a 350 degree oven for 60 minutes.
- GRILL: Place potatoes on the grill away from the coals, close the lid and grill for 40-60 minutes depending on the temperature of your grill.
GRILLED POTATO CHIPS WITH GARLIC AIOLI
This is a simple recipe for grilling up fantastic potato chips. Make sure the potatoes are sliced very thin or you'll just end up with grilled potatoes.

- Gather the ingredients.
- Preheat grill for medium-high heat.
- Use either a mandolin slicer or sharp knife to cut potatoes lengthwise into very thin slices.
- Place in a large bowl and coat with olive oil and salt.
- Place a grill pan on grill and allow to heat.
- Place potatoes on pan forming a single layer.
- Allow them to cook for about 5 minutes per side or until browned.
- Repeat process with additional potato slices.
- Gather the ingredients.
- Combine mayonnaise, lemon juice, minced garlic and a pinch of salt. Taste to make sure the flavor is to your liking. Make any adjustments necessary.
- You can prepare aioli ahead of time and store covered in the refrigerator. Serve with grilled potato chips. The mixture will stay good for up to 3 days after preparation if stored in the refrigerator.

- Add sliced potatoes to a large saucepan. Cover with cold water, about an inch above the tops of the potatoes. Bring to a boil over MED-HIGH heat. Covering the pan helps this happen faster, but pay attention that it doesn't boil over!!
- Once boiling, add 1 1/2 tsp kosher salt and stir. Boil, for 10-15 minutes, until potatoes are fork tender. Watch out for the foam on top of the water, it can boil over if you're not careful. Adjust the heat so that the potatoes are still boiling, but not so hot that they're roaring.
- Drain potatoes in a colander, then return potatoes to the same hot pot you boiled them in. Add vinegar and stir to combine. Let sit a minute or two, then return to the colander to cool slightly.
- While potatoes are cooling, add dressing ingredients plus remaining 1 tsp kosher salt to a large mixing bowl. Whisk together and set aside.
- Chop eggs, red onion, celery and pickles. Add cooked potatoes to the dressing in the mixing bowl and top with chopped eggs, onion, celery, pickles and crumbled bacon.
- Gently stir it all together, until well combined. Cover tightly and refrigerate until cold, at least 3-4 hours.

- Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
- In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
- Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
- Preheat the grill to medium-high (about 375 to 400 degrees F).
- Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
- Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
- Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
- Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

- Scrub potatoes and slice into 1/8 inch pieces.
- Peel and cut carrots and onion.
- Place potatoes in a row in the center of a piece of foil (shiny side up).
- Add carrots, onion, margarine, salt& pepper.
- Roll the sides of the foil together like rolling up a paper bag and fold in the ends.
- Don't be afraid to squish it all together to make sure it's sealed.
- Place the package in the middle of another piece of foil, seam down, and roll it up again.
- BBQ on medium-high for 10 minutes, turn over, BBQ another 10 minutes turn again, BBQ 5 min, turn again and BBQ a final 5 minutes.
- If you're also BBQing meat, put the meat on after 20 minutes and put potatoes on the top rack of the BBQ and keep turning every few minutes until meat is cooked.

PERFECT ROAST POTATOES
Needs must and all that, so I have always been an open anti-perfectionist, but in truth (and I'm sorry to repeat what I've said before) it is impossible to cook roast potatoes without needing them to be perfect, which to me means sweet and soft inside and a golden-brown carapace of crunch without. And, strangely, no matter how many tricksy things you may succeed at in cooking, no matter what techniques you may master, nothing gives quite the contented glow of achievement that cooking a good tray of roast potatoes does. There are three crucial things that I think make the difference: the first is the heat of the fat - if it's not searingly hot, you don't stand a chance, and since goose fat has a very high smoking point and tastes good, it is my annual choice here; the second is the size of your potatoes - you want them relatively small, so that the ratio of crunchy outside to fluffy interior is optimized; and, finally, I think dredging the potatoes - and this is a family practice, inherited through the maternal line - in semolina rather than flour after parboiling, then really rattling the pan around to make the potatoes a bit mashed on the surface so they catch more in the hot fat, is a major aid. For US cup measures, use the toggle at the top of the ingredients list.

- Preheat the oven to 250°C/230°C Fan/gas mark 9/500°F. If you don't have a double oven, you will have to do this as soon as the turkey is out of your single oven, which, for me, is very much later than the parboiling stage. Put the fat into a large roasting tin and then into the oven to heat up, and get frighteningly hot. 20-30 minutes should do it. Peel the potatoes, and cut each one into 3 by cutting off each end at a slant so that you are left with a wedge or triangle in the middle. Put the potatoes into salted, cold water in a saucepan, and bring to a boil, letting them cook for 4 minutes. Drain the potatoes in a colander, then tip them back into the empty, dry saucepan, and sprinkle the semolina over. Shake the potatoes around to coat them well and, with the lid clamped on, give the pan a good rotate and the potatoes a proper bashing so that their edges fuzz and blur a little: this facilitates the crunch effect later. I leave them to rest at this stage. If you don't, you'll need to have preheated the oven earlier! When the fat is as hot as it can be, tip the semolina-coated potatoes carefully into it (they splutter terrifically as you put them in) and roast in the oven for an hour or until they are darkly golden and crispy, turning them over halfway through cooking. If the oven's hot enough, they may well not need more than about 25 minutes a side; but it's better to let them sit in the oven (you can always pour off most of the fat) till the very last minute. When everything else is served up, transfer the potatoes to a large (warmed if possible) serving dish and bring to the table with pride in your heart.

- Add olive oil to a small pan along with the fresh rosemary twig, garlic and 1/2 teaspoon salt. There’s no need to strip the leaves from the rosemary or mince the garlic because the oil will be strained prior to use. Simply peel the garlic clove and whack it with your knife to create more surface area making it easier for the garlic to infuse its flavor into the oil. Don’t boil the oil, just heat it up. - Cut the potatoes in large chunks, about 2 inches. Place in a pot, cover with water. Add 1 teaspoon kosher salt and bring to a boil. Cook for 5 to 10 minutes until the potatoes are fork tender but still firm enough to hold their shape on a skewer. Drain. Once they are cool enough to handle, place them on skewers. It’s easier to skewer them if you leave the potato piece on a hard surface and stick the skewer into the potato instead of picking up the potato and threading it on the skewer. The potatoes will hold together better the less they are handled. I used rosemary twigs for skewers because I have lots of rosemary and I love the scent of rosemary on the grill. Plus, it’s a fun thing to do and it looks rather nifty. At least I think it does.
- Strain the olive oil which is now infused with lovely flavors of rosemary and garlic. Brush the potato skewers with the oil. Place on a hot grill. Flip them once and brown on both sides. The amount of grill time will depend on (1) how big you make your potato pieces , (2) how long you parboiled them and (3) how hot you have your grill. Brush the remaining infused olive oil while the potatoes are on the grill. Don’t let one drop of that stuff go to waste.
- As soon as the potatoes brown to your liking, remove them from the grill. If you feel the potato isn’t soft enough, lightly tent them with aluminum foil and let them sit for 5 to 10 minutes. Sprinkle with kosher salt and serve them in a lovely star-shaped, aqua colored textured bowl that was given to you by your good friend, Dawn. If you’re not as fortunate as me to have such a friend as Dawn who gives you beautiful dishes as gifts, pick out the prettiest plate you have to serve your potatoes.
