POUTINE
The ultimate in French-Canadian junk food, poutine commonly features warm fries topped with cheese curds and gravy. This side dish is quick to fix with frozen potatoes and packaged gravy but has all the traditional greasy spoon comfort. -Shelisa Terry, Henderson, Nevada

POUTINE (CANADIAN SMOTHERED FRIES)
Poutine is a popular Canadian dish that will change the way you eat regular French fries. Instead of ketchup or fry sauce, these crispy fries are covered in cheese and beef gravy.

Steps:
- Prepare the gravy: In a small bowl, dissolve the cornstarch in the water and set aside.
- In a large saucepan, melt the butter. Add the flour and cook, stirring regularly, for about 5 minutes, until the mixture turns golden brown.
- Add the beef and chicken broth and bring to a boil, stirring with a whisk. Stir in about HALF the cornstarch mixture and simmer for a minute or so. If you'd like your gravy thicker, add a more of the cornstarch mixture, in small increments, as needed, to thicken. Season with pepper. Taste and add additional salt, if necessary, to taste. Make ahead and re-warm or keep warm until your fries are ready.
- For Deep-Fried Fries: Prepare your potatoes and cut into 1/2-inch thick sticks. Place into a large bowl and cover completely with cold water. Allow to stand at least one hour or several hours. When ready to cook, heat your oil in your deep fryer or large, wide, heavy cooking pot to 300° F.
- Remove the potatoes from the water and place onto a sheet of paper towel. Blot to remove as much excess moisture as possible.
- Add your fries to the 300°F oil and cook for 5-8 minutes, just until potatoes are starting to cook but are not yet browned. Remove potatoes from oil and scatter on a wire rack. Increase oil temperature to 375°F Once oil is heated to that temperature, return the potatoes to the fryer and cook until potatoes are golden brown. Remove to a paper towel-lined bowl.
- To Prepare Poutine: Add your fried or baked fries to a large, clean bowl. Season lightly with salt while still warm. Add a ladle of hot poutine gravy to the bowl and using tongs, toss the fries in the gravy. Add more gravy, as needed to mostly coat the fries.
- Add the cheese curds and toss with the hot fries and gravy. Serve with freshly ground pepper. Serve immediately.

Steps:
- I recommend making my homemade French fries. Otherwise frozen French fries can be baked per package instructions, or fried as follows:
- Heat oil to 300 degrees in a deep fryer or dutch ovenTIP: Using a candy/deep frying thermometer makes it easy to tell when the oil is ready.
- Add the fries to the oil in batches, don't overcrowd them. Fry for about 5 minutes, then place them on a paper towel lined plate. This is enough to cook them through without browning the outside yet and is the best method for extra crispy fries.
- Increase heat to 400 degrees and fry in batches a second time, until they are crispy and golden brown on the outside. Place on paper towels.
- Preheat the oven to 350 degrees.
- Line the fries on a baking sheet and sprinkle the cheese on top.
- Bake for 10-15 minutes, until the cheese is just melted.
- This recipe for homemade beef gravy is perfect for Poutine and takes just 10 minutes. Otherwise, prepare a packet according to package instructions. You can also make my easy Chicken Gravy recipe.
- Drizzle the gravy over the fries and serve immediately!

- Slice the potatoes into 1/2-inch thick fries. I like to measure one fry then use it as a guide for the rest. Transfer potatoes to a large bowl of cold water as you cut them. Soak the potatoes in refrigerator for a minimum of 2 hours, preferably overnight. The longer you soak the potatoes, the crispier the French fries.
- Add enough oil to 6 qt (or larger) fry pan or Dutch oven until it reaches 3 inches up the sides (or use a deep fryer). Heat oil to 325 degrees F. Line your adjoining counter or a large baking sheet with a double layer of paper towels (to place potatoes once fried).
- Reheat the gravy until it is hot (so it will soften the cheese curds). Add a splash of broth if it has become too thick.

- Peel the potatoes and slice lengthwise into 1/4-inch thick disks. Slice each disk into 1/4-inch thick sticks. If you want to keep the skin on, wash the potatoes before slicing.
- Place all of the potato sticks into a container or large bowl filled with cold water. Set aside to soak for at least an hour or preferably overnight. If soaking overnight, cover and keep in the fridge. This removes the starch, making the fries extra crispy!
- Drain the starch water and rinse off the fries twice with cold water. Transfer fries to a paper towel lined baking sheet and use another sheet of paper towel to pat and dry them as much as possible.
- Pour 3-inches of oil into a large deep pot, heat to 300°F. You can use a thermometer or wait a few minutes, then drop a small fry in the oil to check if it starts to fry gently. If it doesn’t, wait a bit longer, if it begins to pop, turn the heat down.

- Place the cut potatoes in a large bowl, cover with beer (or cold water) , and refrigerate for 3 minutes to 2 hours, the longer the better.
- Meanwhile, make the gravy. Heat the butter in a large saucepan over medium-high heat. Add flour, and cook, stirring, until smooth, about 2 minutes. Add the shallot and garlic, and cook, until soft, about 2 minutes. Add the beef stock, ketchup, stout beer, balsamic vinegar, worcestershire, and a pinch of salt and pepper, and bring to a boil; cook, stirring, until thickened, about 6 minutes. Keep over the lowest setting while you fry the potatoes. You may need to add more beef stock to thin if the gravy gets too thick.
- Pour the canola into a 6-qt. Dutch oven, filling it about 3 inches up the sides. Heat over medium heat until a deep-fry thermometer reads 375 degrees F. Drain potatoes, and dry thoroughly with paper towels. Working in small batches, add potatoes and fry, tossing occasionally, until tender and slightly crisp, about 4 minutes. Remove from the oil and drain on paper towels. Increase the temperature to high, and heat oil until thermometer reads 425 degrees F. Working in small batches, return potatoes to oil, and fry, tossing occasionally, until crisp and golden brown, about 2-4 minutes. Transfer fries to paper towels to drain. Sprinkle the fries with salt.
- Immediately divide the fries among serving bowls. Divide the cheese curds over the fries. Now make sure that your gravy is piping hot and pour the gravy over each serving of cheese fries. Dig in immediately... as if you could wait!

- Prick the potato all over with a fork and place them on a plate in the microwave. Cook for 5 minutes. If a fork goes into the potatoes easily, they’re done. If not, another minute or two should do (if you’re doubling or tripling this recipe, it will take longer, about 7-8 minutes for 4 and 9-12 minutes for 6).
- Put the potato halves skin-side-up on the baking sheet. Put them under the broiler (about 8 inches from the heat source) and broil for 3-5 minutes, until starting to crisp. Flip them over and crisp up the flesh side for 3-5 minutes as well.

- Heat a deep fryer on 350 Degrees and fill with oil half way. Once the oil is heated, add the French Fries and cook until crispy and golden brown, about 5-7 minutes. You may have to do two batches of fries depending on your deep fryer. Use a slotted spoon to remove the fries and turn to a large plate lined with paper towel and sprinkle with salt and pepper. Once the French Fries are cooked, turn to a large serving platter.
- In a medium sauce pot on low to medium heat, melt the butter. Once the butter has melted, sprinkle in the flour and stir. The mixture will appear clumpy. Slowly stir in the milk while whisking for a smooth and creamy mixture. Allow the mixture to thicken for 5 minutes while stirring periodically. Add the shredded cheese and stir to dissolve the cheese and for a creamy mixture. Add pinch of salt and pepper to taste.
- Add the cheese curds and stir for about 1 minute. Pour the cheese sauce over the French Fries and top off with the bacon, tomatoes, and chives and serve.
