1-1/4 cups salted dry roasted peanuts
1-1/2 teaspoons hot pepper sauce
1/4 teaspoon ground allspice
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter
1-1/2 teaspoons baking soda
1 teaspoon vanilla extract

Steps:

  • Coat a 15x10x1-in. pan and metal spatula with cooking spray; set aside. In a large bowl, toss the peanuts, hot pepper sauce and allspice until evenly coated; set aside., In a 2-qt. microwave-safe glass bowl, combine sugar and corn syrup. Microwave, uncovered, on high for 3 minutes; stir. Add peanut mixture; stir until blended., Heat on high 3-4 minutes longer or until mixture turns a light amber color (mixture will be very hot). Stir in butter. Microwave 30 seconds longer. Quickly stir in baking soda and vanilla until mixture foams and becomes light-colored., Immediately pour mixture onto prepared pan and spread as thin as possible with prepared spatula. Cool. Bread into pieces.

This sweet and salty peanut brittle has the perfect crunch and sheen. With a little patience, you'll have a delicious brittle to serve to party guests or as an edible gift around the holidays.

Number Of Ingredients 6

Nonstick cooking spray
2 cups sugar
1/2 cup light corn syrup
6 tablespoons unsalted butter, cubed
1/2 teaspoon baking soda
1 1/2 cups roasted salted peanuts

Steps:

  • Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
  • Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
  • Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.

1 cup sugar
½ cup light corn syrup
1 cup dry-roasted peanuts
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
1 teaspoon butter or margarine
1 teaspoon baking soda

Steps:

  • In a glass bowl, stir together the sugar, corn syrup, peanuts, cinnamon, and cayenne pepper until thoroughly blended. Microwave on high for 6 minutes. Slowly stir in the butter, and microwave an additional 30 seconds.
  • Very carefully remove bowl from the microwave as the contents will be extremely hot. Gently stir in baking soda until mixture becomes light and foamy. Turn batter out onto a lightly oiled cookie sheet, scraping sides of bowl with a rubber spatula. Allow brittle to cool for 1 hour, then break into pieces.

1 1/4 cups dry roasted salted peanuts (Note, I have used unsalted and still tastes good but lower in sodium)
1 1/2 teaspoons hot pepper sauce
1/4 teaspoon allspice
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter
1 1/2 teaspoons baking soda
1 teaspoon vanilla

Steps:

  • Coat a cookie sheet with cooking spray.
  • Also spray a metal spatula (and yes it matters, goo will stick to all others and make it impossible to work with)
  • set aside cookie sheet and spatula.
  • In a large bowl, mix the peanuts, hot pepper sauce and allspice
  • Put sugar and corn syrup into a large glass microwavable bowl.
  • Stir mixture - will be very thick but will change when heated.
  • Microwave, uncovered on high for 4 minutes.
  • stir again.
  • add in spicy peanut mixture.
  • stir until blended.
  • Return to microwave and cook on high 4-5 minutes longer.
  • Stir in butter.
  • Microwave 45 seconds.
  • Very quickly add in baking soda and vanilla and stir. It will foam and the color witl lighten.
  • Immediately pour into prepared pan and spread as thin as possible with prepared spatula.
  • Cool, break into pieces (put in bag and use hammer to smash is easiest).

2.5 cups rolled oats
0.5 cup roasted, salted peanuts
0.5 cup sweetened banana chips
0.25 cup chia seeds
2 tablespoons sesame seeds
0.33 cup honey
0.25 cup unsalted butter
0.33 cup smooth natural peanut butter
0.75 teaspoon ground cayenne
0.5 teaspoon kosher salt

Steps:

  • Heat oven to 400°. Spray an 8-inch square baking pan with nonstick cooking spray. Line pan with 2 crisscrossed pieces of parchment, leaving an overhang on all sides. Lightly spray the parchment paper with nonstick cooking spray.
  • Spread the oats on a rimmed baking sheet and toast them in oven until golden brown, stirring once, 8 to 10 minutes. Transfer the oats to a large bowl and add the peanuts, banana chips, chia seeds, and sesame seeds.
  • In a medium bowl, combine the honey, butter, peanut butter, cayenne and salt. Microwave until the butter has melted and the peanut butter is warm, 20 to 30 seconds. Stir to combine, then pour over oat mixture and stir until the oats are completely coated. Transfer the mixture to prepared baking dish. Press the mixture firmly and evenly into the pan and smooth the surface with a spatula or knife. Refrigerate for at least two hours or overnight. Transfer to a cutting board and cut into 12 pieces.

I usually make brittle with cashews and for a change and less money I decided to make some with dry roasted peanuts..I even tried making brittle with Puffed Wheat Cereal and was happy with the result....Since my recipe book will be called SOUP TO NUTS I have to make several candy recipes and now have a stsrter.

1 1/4 c peanuts, dry roasted [salted}
1 1/2 tsp hot pepper sauce
1/4 tsp ground allspice
1 c sugar
1/2 c light cornsyrup
1 tsp butter no substitute
1 1/2 tsp baking soda

Steps:

  • 1. This peanut can be made in the microwave. I find it quicker and easier but can also be made the usual way you make it if you have made brittle before.
  • 2. Using 15x10x1 inch metal cookie sheet,,butter the sheet and also butter a spatula. you can also use buttery cooking spray...Toss the peanuts, hot pepper sauce and allspice until well coated.
  • 3. In a 2 quart microwave safe glass bowl combine sugar and corn syrup, microwave, uncovered, on high cook for 4 minutes, stir, add peanut mixture, stir until blended...heat on high for another 4 minutes longer and mix turns light amber color. check with thermomete and if it reached th hard cracked stage,stir in butter micro 45 seconds longer, quickly stir in the baking soda and vanilla mixter should foam.. BE CAREFUL AS MIX WILL BE VERY HOT AND CAN A SERIOUS BURN..I use oven mitts to remove from micro.
  • 4. Pour mixture onto pan and spread out with buttered spatula..spread as thin as possible,,you will have to work quickly..chill and break into pieces when chilled and set...My micro is an 850 watt micro. If you happen to get any hot mix on arm or hand immediately place an ice cube on area to avoid blistering Happy crunching.

1/4 cup jalapenos (remove pith and seeds-finely chopped)
1 cup granulated sugar
1/2 cup water
1/4 cup corn syrup
1 cup roasted peanuts (unsalted and shelled/red skin or blanched)
1 tsp baking soda

Steps:

  • Grease a sheet pan, and a spatula. And set aside.
  • Over medium heat in a sauce pan add butter and chopped jalapeno.
  • Saute until jalapeno becomes soft and tender.
  • Then stir in sugar, corn syrup, and water. And bring to rolling boil.
  • Then reduce the heat to medium-low. And cook till it reaches 300 degree Farenheit in candy thermameter or 'hard crack' stage(the stage when the sugar droplets turn to hard balls when dropped into a bowl of water).
  • Add peanuts, baking soda.
  • Whisk fast until peanuts combined with the syrup and quickly pour over the greased pan.
  • Spread the mixture over 1/2 inch thickness using the spatula.
  • Allow it to cool down for 20 minutes. And break into small pieces.
  • Enjoy them as snack or with other desserts.
