ITALIAN PEPPERONI BITES
These are wonderful little appetizers. If you don't have the mini muffin pan, just use the regular size and don't cut the biscuits in half. I also use homemade pesto. From the Hormel site.

Steps:
- Preheat oven to 350 degrees.
- In bowl, combine pepperoni, cheese, mayo and pesto. Cut each biscuit in half. Place biscuit halves into greased miniature muffin cups, pressing gently to fit cups. Spoon 1 tablespoon of filling into each cup. Bake 20-25 minutes. Serve warm.

- Preheat oven to 400.
- In a bowl, combine biscuit mix, milk, butter, garlic powder, and Italian seasoning.
- Stir in pepperoni and cheese until just combined.
- Drop by heaping spoonfuls 2 inches apart onto ungreased baking sheets.
- Bake for 16-18 minutes or until golden brown.

PIZZA ROLLS USING PILLSBURY REFRIGERATOR BISCUITS
The ultimate in comfort food! These are delicious crowd pleasers that disappear before they've had time to cool.

Steps:
- Preheat oven to 375 degrees. Flatten biscuits; layer a pepperoni slice, cheese square and another pepperoni slice on biscuit. Gather edges and pinch closed at top. Place rolls in a small greased pan. Brush tops with egg, sprinkle with Italian seasoning, garlic powder, and parmesan cheese. Bake for 20 minutes. Serve with warmed marinara sauce.
- Tip: to keep the top from browning too much before baking is complete, cover with tinfoil.
- Tip #2: If you prefer more filling and less dough in each roll, then cut each biscuit of dough in half lengthwise through the middle (like a hamburger bun) and make each roll using half a biscuit rather than an entire biscuit. The dough cuts best using a serrated knife (bread knife) when the dough has barely been pulled from the fridge and is still chilled. I prefer this way.

- If using the pop-up tart pan, have an ungreased baking sheet available to use as a base., In a medium-sized mixing bowl, combine the flour, cheese powder, baking powder, salt, Pizza Dough Flavor, and pizza seasoning., Add the butter, working it in until the mixture is crumbly., Add the pepperoni, shredded cheese, and scallions, mixing to distribute., Add the milk, mixing just until everything is evenly moistened., Scoop the dough by the level tablespoonful into the pop-up pan, or mini-muffin pan.
- For bigger bites, dollop the dough by heaping tablespoon scoops onto the prepared baking sheet., Sprinkle the biscuits with 1/2 teaspoon pizza seasoning, or your favorite dried herbs., Bake the biscuits till they're a medium to deep golden brown, 10 to 14 minutes., Remove the biscuits from the oven, and cool briefly on a rack.

- Cut each biscuit in half. You will have 24 biscuit halves. Roll each half as big as you can get it with a rolling pin or you could use a glass. Spread each half with pizza sauce, one slice of pepperoni, a pinch of shredded mozzarella cheese and chopped onion. Roll the biscuit half up, tuck in ends and place in baking dish sprayed with cooking oil. I used a 10 inch pie plate to make these. Do this with all 24 biscuit halves. Sprinkle on dried oregano and garlic powder. Drop on some extra pizza sauce with a spoon on the tops of the pizza balls and add about 1/2 cup shredded cheese.
- Bake in preheated 400 degree oven for 20 to 25 minutes until biscuits are cooked. Pull off pieces or slice. Makes about 6 servings.
