PEPPERONI SNACK CRACKERS

I'm one of those people who won't eat a pizza if it has anything but pepperoni on it... naturally I like pepperoni off of pizza too. This is a quick snack I pulled together one day; simple, but very tasty.

Number Of Ingredients 5

8 ritz-style crackers
8 pepperoni slices, of preferred thickness
1 ounce of favorite cheese, shredded (I use Colby Jack, Mozzerella and or or Cheddar)
2 tablespoons ranch dressing
Tabasco sauce (optional)

Steps:

  • Spread pepperoni slices out on a paper towel and microwave for 15 seconds, just enough to draw some of the grease out [Will prevent crackers from getting soggy as well as lowering the fat content].
  • Place crackers on a paper plate and distribute cheese to each of them.
  • Put a slice pepperoni on each cracker.
  • Top each cracker with dressing and a single drop of Tobasco sauce.
  • [optional] microwave again for 15-30 seconds, or until cheese begins melting.

  • bake in oven for 3-5 minutes at 350°F.

24 slices pepperoni
1/4 cup pizza sauce
2 tablespoons finely shredded Colby-Monterey Jack cheese
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano

  • Preheat oven to 400°. Place crackers on a baking sheet. Top with pepperoni, pizza sauce, cheese and oregano. Bake until cheese is melted, 5-7 minutes.

I was hungry after skipping supper and wanted something really quick and easy. Instead of having plain cheese and crackers, I got the idea to make pizza snacks. I am a thin crust pizza lover so the crackers worked great! I didn't miss the sauce at all. My granddaughter really enjoyed these!

15-20 saltine crackers
1/2 -1 c mozzarella cheese, shredded
15-20 pepperoni slices

Steps:

  • 1. Place crackers on plate in a round design
  • 2. Top with shredded mozzarella cheese
  • 3. Place a pepperoni slice on top of each cracker
  • 4. Microwave on high for 1 to 1 minute 20 seconds. Serve immediately. Enjoy!

I am searching for a healthier pizza, and this is my first step towards one. I plan on using turkey pepperoni and a whole wheat crust in the future, but this pizza turned out really well. My family really liked it. I recommend the pizza sauce that I posted as a separate recipe for this pizza because it throws in some extra veggies in the sauce.

2 prepared pizza crust
2 cups pizza sauce
2 tablespoons olive oil
8 ounces mozzarella cheese, shredded
8 ounces Italian cheese blend, shredded
1 (3 1/2 ounce) package pepperoni
2 roma tomatoes, sliced very thin
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 onion, chopped

Steps:

  • Preheat the oven to 450.
  • Spread the pepperoni between two paper towels and blot to remove the excess grease.
  • Brush the olive oil over the pizza crusts and cover with the pizza sauce.
  • Next add the cheese, pepperoni, and tomatoes in that order.
  • Finally topped with the chopped vegetables.
  • Place pizzas on pizza stones or pizza pans. These really work better than cookie sheets.
  • Change the oven temperature to 425 before putting the pizzas in the oven.
  • Bake until the crust is a golden brown. About 15 minutes.

1 (3 1/2 ounce) package vegetarian pepperoni, slices, diced
1 (3 1/4 ounce) can pitted ripe olives, drained and chopped
1/3 cup red bell pepper, diced
3/4 cup shredded mozzarella cheese
2 tablespoons snipped fresh parsley
2 tablespoons all-purpose flour
1 garlic clove, pressed (or minced)
2 (11 ounce) packages refrigerated French bread dough
1 egg white, lightly beaten
1 teaspoon italian seasoning
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 375*F.
  • Dice pepperoni and red bell pepper, chop olives, shred mozzarella cheese.
  • Combine pepperoni, olives, red bell pepper, mozzarella cheese, parsley, flour and garlic in bowl. Mix well.
  • Place bread dough, seam sides up on cutting board. Using serrated knife, slice each loaf lengthwise, end to end, cutting halfway through to center of loaf; spread open flat. Lightly sprinkle flour evenly over dough.
  • Using rolling pin, roll dough crosswise to a 4" width, creating a well down the center of each loaf.
  • Spoon half of the pepperoni mixture down the center of each loaf. Gather up the edges over filling, pinching firmly to seal.
  • Place loaves, seam sides down, in an X pattern on a baking sheet. Crisscross ends of dough to form a large figure 8, keeping ends of dough 1" from edge of baking pan and leaving two 1 1/2" openings in center of twist.
  • Combine egg white and Italian seasoning; lightly brush over dough.
  • Cut a 3" slit in each of the top sections of the twist to reveal filling.
  • Sprinkle the 2 tbls. Parmesan cheese over the loaf.
  • Bake 30-32 minutes or until deep golden brown. Remove from oven. Cool about 10 minutes before serving. Enjoy!
