PEPPERONI FOCACCIA BREAD
This focaccia bread recipe is perfect to serve with a pasta dinner, either as an appetizer or sliced for sandwiches. You will love the smell of it baking-it's hard to wait for it to be done! I like to add some thinly sliced plum tomatoes and fresh basil on top. - Trisha Kruse, Eagle, Idaho

PEPPERONI (OR ANYTHING ELSE YOU WANT) BREAD
Okay - my first attempt at posting a recipe :-) Its nothing creative or out of this world, but its one request I get over and over again. I worked at a local bakery and learned how to make this. Its super easy and the option to be creative is there if you want to come up with your own creation. To me the Cooper sharp american cheese is the key! (Not sure if its called something else where you are but its Cooper sharp american here - Cooper is the brand and that's what I ask for). I hope you enjoy!! P.S. Feel free to comment or tell me if I missed anything!!! :-)

Steps:
- Preheat oven to 350
- Roll out dough
- Layer pepperoni, cooper sharp cheese, and mozzerella based on preference
- Roll up from bottom up, tucking in ends
- Place on cookie sheet and bake 25-30 min till brown. Option to egg wash up to you. I sometimes just brush with melted butter.
- When done, let cool a few min and cut into slices. Depending on the kind, eat plain or add some dipping sauces based on preferrence. Can be frozen as well!
- Other ideas that I have made and are INCREDIBLE (still using the same cheese).... Sausage (bulk) and sweet peppers Sausage and pepperoni Steak (sandwich steak) and onions and/or peppers Broccoli, mushroom and parm cheese (mixed together) Spinach, mushrooms, parm cheese & garlic (mixed) Just plain cheese Ideas are endless!! I sometimes make for the family using their requests. Super easy and everyone is happy!

- Using a countertop mixer fitted with the dough hook, add the bread flour, yeast, sugar, 2 Tbsp of the Parmesan cheese, salt, softened butter, and cayenne pepper (optional). Stir until well combined. Add the warm milk and diced pepperoni, and mix on low speed for 3 minutes. Increase speed to medium and continue mixing for 3-4 more minutes.
- Transfer the dough into a large, lightly oiled bowl and cover with plastic wrap. Place bowl in a warm (80-85°F) location and allow dough to rise until it has doubled in size, about 1 hour.
- Turn dough out onto a lightly oiled countertop and gently fold the dough 4-5 times, rotating 90° after each fold. Allow the dough to rest (covered) for 10 minutes.
- Shape dough into an 8" x 6" rectangle. With the small side of the rectangle closest to you, fold the bottom 1/3 of the dough up and then fold the top 1/3 of the dough down on top of that (just like folding a letter). Finally, fold the dough in half lengthwise and pinch the seam at the bottom closed. Place the dough into a 7" x 5" loaf pan and gently press the remaining 1 Tbsp Parmesan cheese into the top of the bread. Cover the pan lightly with plastic wrap and let rise in a warm location until almost doubled in size (about 45 minutes).
