2 1/2 cups uncooked elbow macaroni
1 lb bulk Italian sausage
1 large onion, chopped
1 cup pizza sauce (or to taste)
1 (8 ounce) can tomato sauce
1/3 cup milk
1 (3 1/2 ounce) package sliced pepperoni, halved
1 (4 1/2 ounce) jar sliced mushrooms, drained
1 (2 1/4 ounce) can sliced ripe olives, drained
1 cup shredded mozzarella cheese

Steps:

  • Set oven to 350 degrees.
  • Grease a 9x13 baking dish.
  • Cook macaroni until soft-firm.
  • Meanwhile, cook sausage and onion until meat is no longer pink; drain.
  • Drain macaroni.
  • In a large bowl, combine pizza sauce, tomato sauce and milk.
  • Stir in sausage mixture, macaroni, pepperoni, mushrooms and olives.
  • Transfer to a greased baking dish.
  • Cover, and bake for 30 minutes.
  • Uncover; sprinkle with cheese, bake 10-15 minutes longer, or until bubbly and cheese is melted.

1/3 cup whole milk
1 package (3-1/2 ounces) sliced pepperoni, halved
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Drain macaroni. , In a large bowl, combine the pizza sauce, tomato sauce and milk. Stir in sausage mixture, macaroni, pepperoni, mushrooms and olives. , Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with cheese. Bake 10-15 minutes longer or until heated through and cheese is melted.

Salt and freshly ground pepper
1 pound lasagna
Olive oil
4 tablespoons butter, plus 1 tablespoon
1 teaspoon garlic, minced
4 tablespoons all-purpose flour
2 1/2 cups half-and-half
2 1/2 cups grated Parmigiano-Reggiano, or other good-quality Parmesan
4 ounces grated Cheddar
8 ounces grated mozzarella
1 pound pepperoni, sliced thin
1/2 cup fresh bread crumbs

Steps:

  • Fill a large pot with water and bring to a boil over high heat. Add 1 tablespoon salt carefully add the lasagna noodles. Return to a boil, reduce the heat to a low boil and cook for about 5 minutes, or until pasta is very al dente (slightly undercooked). Drain in a colander, rinse slightly and drizzle with olive oil to prevent sticking.
  • In a heavy, medium saucepan melt 4 tablespoons of the butter over low heat. Add the garlic and then the flour and stir to combine. Cook, stirring constantly, for 3 minutes. Increase the heat to medium and whisk in the half-and-half little by little. Cook until thickened, about 4 to 5 minutes, stirring frequently. Remove from the heat; add 2 cups of the grated Parmesan. Season with the salt, pepper and stir until cheese is melted and sauce is smooth. Cover and set aside.
  • Preheat the oven to 375 degrees F.
  • In a large bowl combine 1/4 cup Parmesan, Cheddar, and mozzarella. Toss to combine.
  • Grease a 3-quart baking dish or casserole with 1 tablespoon of butter. Spread a ladle full of sauce on the bottom of the pan. Cover the sauce with a single layer of cooked lasagna noodles. Spread another ladle full of sauce on top of noodles. Sprinkle with 1/3 of the mozzarella cheese mixture. Top with 1/3 of the sliced pepperoni. Repeat with remaining ingredients for 2 more layers.
  • Sprinkle 1/2 cup bread crumbs onto top of lasagna and top with remaining grated Parmesan, 1/4 cup. Bake, uncovered, for 40 to 45 minutes or until the lasagna is bubbly and hot and the top is golden brown. Remove from the oven and allow to sit for 5 minutes before serving.

1 pound elbow macaroni
2 1/2 cups milk
1 teaspoon dried Italian seasoning
Pinch crushed red pepper flakes
Two 8-ounce packages cream cheese, at room temperature
8-ounces sharp Cheddar, grated
1 cup shredded Italian blend cheese
1/2 cup prepared marinara sauce
1/2 cup jarred sun-dried tomatoes in oil, roughly chopped, plus 1/4 cup of the oil
3 ounces sliced pepperoni, halved
1 cup dry Italian bread crumbs
1/4 cup grated Parmesan

Steps:

  • For the mac and cheese: Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions for al dente; drain, reserving 1 3/4 cups of the pasta water.
  • Bring the milk, Italian seasoning and crushed red pepper flakes to a simmer in a large saucepan over medium heat. Continue cooking until the milk reduces to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in both the Cheddar and Italian blend cheeses, a handful at a time, until all the cheese is melted and the sauce is smooth.
  • Add the cooked macaroni and reserved pasta water to the cheese sauce and stir to combine. Stir in the marinara sauce, sun-dried tomatoes and pepperoni and adjust the seasoning with salt. Pour into a 9-by-13-inch baking dish. Toss the bread crumbs, Parmesan and sun-dried tomato oil together in a small bowl until the crumbs are moistened and sprinkle evenly over the macaroni and cheese. Bake until bubbly and lightly browned, about 10 minutes.

Steps:

  • Preheat oven to 375°. Cook macaroni according to package directions; drain. Stir in eggs, Parmesan cheese, sour cream and Italian seasoning. Transfer to a greased 11x7-in. baking dish. 1 pound ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
3-1/2 cups spaghetti sauce
1 can (4 ounces) mushroom stems and pieces, drained
1 package (3-1/2 ounces) sliced pepperoni
8 ounces uncooked spiral pasta, wagon wheel pasta or pastas of your choice
1 cup shredded part-skim mozzarella cheese
1 cup shredded provolone cheese
Grated Parmesan cheese

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the spaghetti sauce, mushrooms and pepperoni. , In a greased 13x9-in. baking dish, layer with half the pasta and meat mixtures. Sprinkle with 1/2 cup each mozzarella and provolone cheeses.   • Bring a large pot of salted water to a boil. Cook macaroni according to package instructions. Once cooked to al dente, reserve one cup of pasta water and drain noodles. Rinse with cool water and set aside.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the onion and sauté for 3-4 minutes, stirring frequently. Push the onions to the far side of the skillet and reduce heat to medium-low. Add the butter to the skillet. As the butter melts slowing whisk in the flour, creating a roux. Do not burn.
  • Slowly whisk in the milk with the roux and reincorporate the onions. With the milk fully incorporated, whisk in the pizza sauce, Italian seasoning, salt, and pepper, if needed. Stir in 1 cup of the mozzarella cheese and the cheddar cheese with the sauce and mix in the pre-cooked macaroni noodles and half of the pepperonis.
  • If you would like to thin the sauce a little, stir in the reserved pasta sauce with the sauce and noodles (this is optional).
