White Chocolate Peppermint Fudge image

I make many batches of this minty fudge to give as Christmas gifts. It's not too sweet, so it appeals to lots of palates. -Sue Schindler, Barnesville, Minnesota

1-1/2 teaspoons plus 1/4 cup butter, softened, divided
2 cups sugar
1/2 cup sour cream
12 squares (1 ounce each) white baking chocolate, chopped
1 jar (7 ounces) marshmallow cream
1/2 cup crushed peppermint candy
1/2 teaspoon peppermint extract

Steps:

  • Line a 9-in. square pan with foil. Grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, combine the sugar, sour cream and remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; cook and stir until a candy thermometer reads 234° (soft-ball stage), about 5 minutes., Remove from the heat; stir in white chocolate and marshmallow creme until melted. Fold in peppermint candy and extract. Pour into prepared pan. Chill until firm. , Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in the refrigerator.

8 whole peppermint candies, crushed

Steps:

  • Line a square 8 x 8 pan with foil and smooth the surface. Spray foil with nonstick spray.
  • Combine the chocolate chips and sweetened condensed milk in a double boiler over medium heat. Heat until melted, about 5-7 minutes. Stir until smooth, then immediately pour it into the foil-lined pan. Use an offset spatula to smooth the surface, then sprinkle on the crushed peppermints.
  • Refrigerate for 2 hours, then cut into small squares.

  • Line the bottom and sides of an 8x4-in. loaf pan with foil. Grease foil with 1-1/2 teaspoons butter; set aside. , In a small bowl, beat cream cheese until creamy. Gradually beat in the confectioners' sugar, cocoa, milk and vanilla until smooth. Stir in nuts. Spread into prepared pan. 14 oz Sweetened Condensed Milk
3/4 cup Crushed Peppermint Candy Canes
1 tsp Peppermint Extract

Steps:

  • Place the white chocolate chips in a microwave safe dish.
  • Microwave the chips in 30 second intervals, stirring between each interval until they are melted.
  • Stir in the condensed milk, the peppermint extract and 1/2 cup of the crushed candy canes (save the remaining for the top)
  • Line an 8X8 baking dish with foil or parchment paper.
  • Pour the mixture into the pan and top with the remaining crushed candy canes.
  • Allow to cool at room temperature and then place in the refrigerator to set (for approximately 1 hour).
