Steps:
- Spread 1/3 of the peppermint candy over a 9x13-inch baking pan lined with wax paper.
- Melt the milk chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching, just until melted. Pour the melted chocolate over peppermint candy in the prepared pan. Sprinkle another 1/3 of the candy on top of the milk chocolate. Refrigerate until the chocolate hardens, about 30 minutes.
- Melt the white chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Stir in the oil-based peppermint flavoring. Pour the white chocolate over the milk chocolate, then spread the remaining 1/3 peppermint candy on top.
- Refrigerate until the white chocolate hardens, about 30 minutes. Cut or break into pieces to serve.

- For rimming glasses: In a resealable plastic container, crush the peppermint candies. Melt the white chocolate in the microwave on a flat plate. Rim the glasses with the melted chocolate, and while the chocolate is still wet, sprinkle the crushed peppermint candies over the edge of the chocolate covered glass. Chill in refrigerator until ready to serve the cocktails.
- For mixing the drink: In a cocktail shaker filled with ice, add the Rum Chata, Peppermint Schnapps, Creme de Cacao and cream. Shake vigorously. Pour into the prepared glasses and enjoy right away while cold.

PEPPERMINT BARK MARTINI
A festive martini that tastes like beloved peppermint bark.

- Crush some peppermint candies or candy canes in a ziplock bag. Pour onto plate.
- Pour some chocolate sauce on another plate.
- Dip martini glass in chocolate sauce, then in crushed peppermint candy to rim the glass. Set aside. (can put in freezer to chill, if desired.)
- In cocktail shaker filled with ice, combine vodka, Godiva white chocolate liqueur, cream de cocoa and half & half. Shake well.
- To serve: pour some chocolate sauce in bottom of martini glass, then slowly strain shaken cocktail ingredients into glass.
- Enjoy!
