This got me first place in a Spam® 'cookoff' that a local TV station held. They are fast and easy hors d'oeuvres and are always a hit during Sunday football!

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together the meat, Cheddar cheese, baking mix, water, and cayenne in a large bowl. Form the mix into 1-inch balls and place on a greased baking sheet.
- Bake in preheated oven until golden brown, about 12 to 14 minutes. Serve warm.

- Slice Spam into 1/4 inch slices.
- Put coarsely ground pepper in small bowl.
- Coat sliced Spam heavily with pepper.
- Grill on preheated grill until browned, turning once.
- Cut into smaller squares and serve plain with toothpicks, or, if you prefer, with a little mustard sauce.

- Preheat oven to 350 degrees.
- In a large bowl, beat cream cheese until creamy. Add cheddar cheese, garlic, and salt and mix well. Stir in 1/2 jar of hot pepper jelly. Pour into a lightly greased 1 quart baking dish. Bake 35-40 minutes or until hot and bubbly.
- Heat remaining jelly in microwave for 20-30 seconds to soften, slightly melt. Spread over top of the dip and sprinkle top with bacon.
- Serve immediately with crackers or pita chips.

- Whisk together all vinaigrette ingredients in a small bowl. Set aside.
- Lay each pepper down so that it will lay flat. On the top side of each pepper, cut a triangle-shaped opening. Chop the cut out triangle pieces of bell pepper and place them in a medium bowl.
- To the bowl with the chopped bell pepper pieces, add the cucumber, red onion, kalamata olives, and sun dried tomatoes. Stir to mix. Add the feta and parsley and stir gently until just combined. Carefully stir in the vinaigrette.
- Spoon some of the filling into each bell pepper and place on a serving dish. Serve immediately or refrigerate for a few hours until ready to serve.
