PEPPERED PORK WITH PECAN BISCUITS

Steps:
- Heat oven to 450°F. Lightly grease rack in roasting pan with vegetable oil or shortening. Rub pork with pepper and salt; place on rack in roasting pan. Roast 20 to 25 minutes or until pork has slight blush of pink in center and meat thermometer inserted in center reads 145°F. Let stand 10 minutes. Cut into thin slices; cover to keep warm. Reduce oven temperature to 425°F.
- Meanwhile, lightly spray cookie sheets with cooking spray. In large bowl, mix yeast, sugar and warm water; let stand 5 minutes. Add Bisquick mix, pecans, buttermilk, butter and pesto to yeast mixture, stirring until dry ingredients are moistened. Stir in flour as needed (up to 1/2 cup) until dough pulls away from side of bowl. On lightly floured surface, gently knead dough 2 to 3 times. Pat or roll dough to 1-inch thickness; cut with 1 1/2-inch round cutter. Place biscuits on cookie sheets.
- Bake 10 to 12 minutes or until lightly browned. Split biscuits; serve sliced pork in biscuits with mustard.

PORK TENDERLOIN WITH MUSTARD-PEPPERCORN CRUST
This recipe, which comes from Canadian Living magazine, is very easy to prepare and is ready in under an hour. Serve with rice pilaf.

Steps:
- Pat the tenderloin dry.
- Mix together the mustard and thyme; spread all over the tenderloin.
- Sprinkle all over with the peppercorns.
- Place on a rack in a roasting pan and roast in a 400 degree F oven for 30 to 40 minutes or until a meat thermometer inserted into the thickest part registers 160-170 degrees F and juices run clear.
- To serve, cut into 3/4-inch thick slices.

- In a large skillet, heat 1 tablespoon oil over medium heat. Brown pork on both sides. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add mushrooms and onion; cook and stir until tender, 4-5 minutes. , In a small bowl, mix flour and broth until smooth. Stir into mushroom mixture. Bring to a boil; cook and stir until sauce is thickened. Return pork to pan. Cook until a thermometer inserted in pork reads 145°.
