EYE OF ROUND CROCK POT ROAST
I discovered this receipe by combining the ingredients I liked from various receipes into one. It is for a 1.5 qt. crock pot. Add more Worcestershire sauce and steak seasoning in the last half hour of cooking for a stronger flavor.

Steps:
- Pierce roast with knife in several places to allow for flavor absorption.
- Rub roast with Worcestershire sauce and steak seasoning to taste (the amounts for this are not added into the ingredients above as they will vary per person).
- Place roast into crock pot.
- Combine 1 1/2 cups water, 3 tablespoons Worcestershire sauce, 2 tablespoons steak seasoning, 2 beef bouillon cubes and 1/2 packet french onion soup mix in a bowl. Mix until bouillon cubes are dissolved.
- Pour mixture over roast.
- Cook on low 8 hours or high 5 hours.

SLOW COOKER EYE OF ROUND ROAST WITH VEGETABLES
This recipe I made up because I could not find one for this cut of meat and for the slow cooker. So I decided to experiment. Turned out great and the family loved it.

Steps:
- Mix paprika, oregano, garlic powder, onion powder, salt, and black pepper together in a bowl; rub evenly over roast.
- Arrange potatoes, carrots, celery, and onions in the bottom of a slow cooker. Place roast atop vegetables.
- Whisk beef broth, Marsala wine, and gravy mix together in a bowl; pour over roast and vegetables.
- Cook on Low until meat is fully cooked and vegetables are tender, about 8 hours (or on High for 5 hours).
- Strain sauce into a bowl and whisk with flour until thickened. Serve on the side of roast and vegetables.

- Generously cover the meat with garlic powder (yes, powder!) With a small knife pierce the entire surface of the meat and stuff each hole with a peppercorn.
- Prepare the marinade by combining all the remaining ingredients (here's the REAL garlic!) Put all in a Ziploc bag and refrigerate for 24 hours, turning occasionally.
- Put roast and marinade in crock pot and cook on low all day. Comes out tender and not dry.
- For appetizer, slice very thin and serve, hot or cold, with sliced baguette and a wonderful mustard. Or horseradish sauce. Great for a holiday buffet.
- Marinade makes good gravy; strain first, then thicken slightly.
BALSAMIC ROAST BEEF IN THE CROCK-POT

- 1. In medium saucepan pour beef stock, bring to boil, keep boiling until reduced to about 1/2 cup guessing at 3 minutes as it really depends upon pan size and burner temperature. Let cool. Meanwhile, mix together black pepper, onion powder, and garlic powder; rub onto roast.
- 2. Sprinkle flour onto both sides of meat and pat into meat Heat olive oil in high sided pan at moderate temperature, sear meat all over for about 10 minutes-take your time as this is when you get luscious drippings. While meat is browning, line crock-pot, add onions and garlic to crock-pot.
- 3. Set meat on top of onions and then deglaze pan (about 1 minute) that meat was in with 1/4 cup water, scrap up those yummy drippings, reserve in pan for next step, Pour reduced beef stock, balsamic vinegar, and rosemary into deglazed liquid; pour over meat. Cover crock-pot, cook on low. I check the meat with meat thermometer about 30 minutes before I think it will be done. Crock-pots vary. For 3 1/2 pound roast, it will be done in about 5 hours, and for 3 1/4 pound roast it will take about 4 hours and 50 minutes. After removing meat, cover with foil and let rest while making gravy.
- 4. About 15 minutes before removing roast, soak mushrooms in boiling water for 30 minutes, drain and discard liquid. Scoop out and reserve onions from crockpot. Take liquid from crockpot, and pour into large skillet, add the other cup beef stock, bring to boil, boil about 5 minutes, make slurry of flour and cold water, reduce burner to moderate temperature, stir slurry into hot liquid, and stir until lumps are out, strain if needed.
- 5. Put reserved onions and mushrooms into gravy. Slice meat and add to gravy.
PEPPER AND GARLIC EYE OF ROUND ROAST RECIPE
Steps:
- Gather the ingredients.
- Line a roasting or baking pan with foil. Put the roast in the lined baking pan, fattiest side up.
- Combine the salt, cracked black pepper, Cajun-style seasoning, garlic, and olive oil in a small bowl and blend thoroughly.
- Rub the roast all over with the mixture.
- Let the roast stand at room temperature for 20 to 30 minutes or refrigerate for 1 to 3 hours. If refrigerating, take it out about 20 to 30 minutes before roasting to bring it up to room temperature.
- Heat the oven to 500 F (260 C).
- Roast for 6 minutes per pound.
- Turn the oven off and leave the roast for 2 hours, resisting the urge to open the oven door and let the heat escape.
- After 2 hours, use a meat thermometer to check the internal temperature, which should be approximately 130 F.
- Remove the roast from the oven and let it rest for at least 20 minutes.
- Slice the roast thinly against the grain to serve.
- Serve with your favorite sides and enjoy.
