Chinese style black pepper and beef stir fry

200 g beef steak ( ,cut into small strips)
1.5 tbsp. oyster sauce
1/2 tbsp. light soy sauce
1/4 tsp. ground pepper
1/4 tsp. sugar
1/2 tbsp. Chinese cooking wine ( ,Shaoxing wine)
2 tsp. corn starch
1 tsp. sesame oil
vegetable cooking oil ( ,as needed)
2 garlic cloves
2 fresh green peppers ( ,remove the seeds and finely shredded)
1/4 red onion ( ,shredded)
1/2 tsp. freshly ground black pepper

Steps:

  • Cut the beef steak into 1cm wide strips. Marinate with all the marinating seasonings including soy sauce, oyster sauce, pepper, sugar, Chinese cooking wine and cornstarch for 15 minutes. Mix in sesame oil just before start frying.
  • Add cooking oil in a large pan until the oil can evenly cover the bottom of the pan. spread the beef strips in. Let them stay for around 5 to 6 seconds and gently stir them several times until the beef strips change color. Transfer the beef out and leave around 1 tablespoon of the oil in.
  • Fry garlic until aromatic. Fry green peppers and red onion until slightly soft (do not kill them). Add a small pinch of salt. Return beef strips back. Mix well. Spread freshly ground black pepper.
  • Serve hot with noodles or steamed rice.

1/3 cup dark soy sauce ((see Note))
1/4 cup oyster sauce
vegans: use hoisin sauce
recipe for homemade hoisin sauce
2 tablespoons sugar
1 1/2 tablespoons fresh ginger (,finely minced)
1 lb pork tenderloin
1 lb thick round Chinese egg noodles (can substitute Japanese udon noodles)
2 tablespoons high heat cooking oil
4 cloves garlic (,sliced thinly)
6 green onions (,cut into 1-inch pieces and then julienned lengthwise (keep green and white parts separate))
1/2 head Napa cabbage (,thinly sliced (white and pale green parts kept separate))
1 1/2 tablespoons cornstarch dissolved in 1 cup chicken stock
1 1/2 tablespoons sesame oil
Ground white pepper to taste

Steps:

  • To make the marinade, combine the soy sauce, oyster sauce, sugar and ginger and stir until the sugar is dissolved. Place the pork in the marinade and let sit for 10 minutes. Drain and reserve the marinade for later.
  • Heat the oil in a wok or heavy skillet on high heat and fry the pork for one minute or until done. Remove the pork and set aside. Next fry the white parts of the cabbage and green onions along with the garlic for 30 seconds or until tender. Return the pork to the pan along with the reserved marinade, the sesame oil, chicken/cornstarch mixture and the green parts of the cabbage and green onions. Cook for 30 seconds. Add the noodles and stir until combined. Add white pepper to taste. Serve immediately.

1/2 lb sirloin steak
4 tablespoons vegetable oil, divided
1 small shallot, chopped fine
1 garlic, chopped fine
2/3 teaspoon pepper (to taste)
1/2 cup green bell pepper, cut into strips
1/2 cup red bell pepper, cut into strips
1 cup bean sprouts, tightly packed
1 1/2 lbs shanghai noodles, cooked
1 tablespoon oyster sauce
1 1/2 teaspoons dark soy sauce
1 1/2 teaspoons cornstarch
1/4 teaspoon sugar
1/2 teaspoon salt
1 1/2 teaspoons soy sauce
1/2 teaspoon sugar

Steps:

  • Freeze sirloin steak for 30 minutes for easier cutting. Cut beef into thin strips.
  • Combine marinade ingredients in bowl. Add beef and marinate for 20 minutes.
  • Heat wok and add 2 T oil. Add shallot, garlic and ground pepper; stir for 10 seconds. Add beef with marinade and stir for one minute. Add bell peppers and bean sprouts; stir for an additional 2 minutes and set aside.
  • Heat remaining 2 T oil over medium heat. Add noodles and stir constantly for one minute. Add sauce ingredients and cook for 2 minutes, stirring constantly. Add beef and bell pepper mixture; mix well. Stir fry until heated through. Season to taste with more pepper if desired.
  • Serve immediately.

1 pound fresh Shanghai noodles, or Japanese udon noodles
2 tablespoons Chinese rice wine
1 tablespoon hoisin sauce
1 teaspoon cornstarch
12 ounces flank steak, sliced into 1/4-inch strips
3 tablespoons dark soy sauce
1 tablespoon soy sauce
1/2 teaspoon sugar
2 tablespoons peanut oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/2 teaspoon minced green onions, plus 1 cup cut-on-a-bias green onions
3 cups julienned Napa cabbage
1/2 teaspoon minced jalapeno

Steps:

  • In a large pot of boiling salted water, cook the noodles until al dente, about 8 minutes. Rinse under cold running water and drain well. Set aside. In a small bowl, combine the rice wine, hoisin, and cornstarch. Add the beef, toss to coat, and marinate for 15 minutes. In another bowl, combine the dark soy, soy sauce and sugar, and stir well to dissolve the sugar. Place a wok over a high heat and add 1 tablespoon of the peanut oil, swirling to coat. When hot, add the garlic, ginger, and minced green onions, and cook, stirring quickly, for 10 seconds. Add the beef and stir-fry for 3 minutes. Add the cabbage and stir-fry for 3 minutes. Transfer to a platter and return the wok to a high heat. Swirl the remaining tablespoon of peanut oil in the wok and once hot, add the noodles to the pan and stir-fry for 1 minute. Add the sliced green onions and jalapeno and sauce and toss all for 1 minute. Add the beef and stir to heat through. Serve immediately.
