2 catfish fillets
1 1/2 teaspoons cracked black pepper
1/4 ounce pancetta, diced and blanched (or regular bacon)
1/4 cup shiitake mushroom
1/4 cup oyster mushroom
1/4 cup chanterelle mushroom
1/4 ounce pine nuts, toasted
2 teaspoons shallots
1 teaspoon roasted garlic, pureed
1 teaspoon lemon juice
1 teaspoon fresh parsley
1 teaspoon fresh thyme
1 teaspoon fresh basil
1 teaspoon fresh chives
olive oil (for searing)
salt
fresh ground black pepper

Steps:

  • Preheat oven to 325°F.
  • Cut each catfish fillet into 2 portions.
  • Season with salt and cracked black pepper.
  • In a medium sauté pan heat the olive oil over medium-high heat.
  • When the oil is hot, place the catfish pepper side down.
  • Sear each side for 1- 2 minutes.
  • Remove and place on a metal oven-proof dish and place in the oven for 3- 4 minutes or until no pink shows.
  • In the reserved pan, sauté the mushrooms for about 2- 3 minutes or until golden brown and crispy.
  • Add the shallots and garlic and sauté for 15- 25 seconds.
  • Add the pine nuts, pancetta, lemon juice, fresh herbs, salt and pepper.
  • Adjust seasonings to taste.
  • Place the mushroom ragout (mixture) on a warm plate.
  • Top with the catfish.
  • Serve with grilled asparagus and sweet potato.

6 ounces fish fillets (snapper, grouper, etc, a firm white fish)
3 tablespoons cornstarch
2 cups mushrooms (shitake, oyster)
6 scallions, cut into 3 pieces each
4 garlic cloves, sliced
2 ounces dry sherry
salt and pepper
vegetable oil
2 ounces cashews

Steps:

  • Season fish fillet with salt and pepper. Coat with cornstarch. Heat a small amount of oil in a pan. Place the fish in the hot oil Lightly brown the fish, adjusting heat as needed. Turn and finish cooking.
  • Heat a few tablespoons of oil in a separate pan. Add mushrooms and garlic. When the mushrooms release iquid, allow a little of the liquid to dry up. Add the scallions and toss quickly. Add sherry and then cashews.
  • Serve over rice or noodles.

Spicy Catfish with Bell Peppers and Onions image

Yield Serves 2; can be doubled

Number Of Ingredients 8

2 6-ounce catfish fillets
All purpose flour
2 1/2 tablespoons vegetable oil
1 medium onion, sliced
1/2 large red bell pepper, thinly sliced
1/2 large green bell pepper, thinly sliced
2 1/2 tablespoons white wine vinegar
1 tablespoon chopped drained canned pickled jalapeño chilies

Steps:

  • Season fish with salt and pepper. Dust lightly with flour. Heat 2 tablespoons oil in heavy medium skillet over medium-high heat. Add fish to skillet. Cook until golden brown and just opaque in center, about 4 minutes per side. Transfer fish to plates. Add 1/2 tablespoon oil, onion and bell peppers to same skillet. Sauté until crisp-tender, about 4 minutes. Add vinegar and jalapeño. Stir 1 minute. Season mixture with salt and pepper. Spoon over fish.

1/4 cup pine nuts, plus
2 tablespoons pine nuts
1/2 cup yellow cornmeal
1/4 cup flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cumin
4 catfish fillets
1/4 cup vegetable oil

Steps:

  • Preheat oven to 350.
  • Spread pine nuts on a baking sheet and toast in oven for about 5 minutes or until golden brown.Cool.
  • Grind 1/4 cup of pine nuts and reserve remaining for garnish.
  • Mix ground pine nuts,cornmeal, flour, salt, cayenne pepper and cumin in a shallow dish.
  • Dredge fillets in the pine nut mixture.Set aside.
  • Heat oil in a large skillet over medium heat. Fry catfish fillets two at a time in the hot oil for 4 minutes on each side or until fish flakes easily when tested with a fork .
  • Sprinkle fillets with whole pine nuts and serve.

Something new to do with catfish besides deep frying it! A yummy blend of tomatoes and italian seasonings make this a mild fish dish. Great if you don't care for that sometimes overpowering catfish taste. For a stronger fish flavor, try making the sauce separately and serving over grilled catfish!

3 tablespoons olive oil, divided
½ onion, diced
½ green bell pepper, diced
1 carrot, peeled and diced
8 (4 ounce) fillets catfish fillets
salt and black pepper to taste
1 teaspoon Italian seasoning
garlic powder to taste
1 (14.4 ounce) can diced Italian tomatoes
1 (8 ounce) can tomato sauce
½ cup dry white wine

Steps:

  • Place 1 tablespoon of oil in a heavy bottomed skillet over medium heat. Saute onion, green pepper, and carrot until golden brown; remove from the pan. Using the remaining 2 tablespoons of oil, sear all of the fillets on both sides. Lay all of the fillets into the skillet, sprinkle with salt, pepper, Italian seasoning, and garlic powder. Top with the sauteed vegetables, and pour on the diced tomatoes, tomato sauce, and white wine.
  • Bring to a simmer, and cook gently until the sauce has thickened slightly, and fish flakes easily with a fork, about 10 minutes.
