4 ½ cups finely chopped green, red or yellow bell pepper or a combination (about 4 large)
½ cup finely chopped jalapeño pepper (about 4 small)
1 ¼ cups cider vinegar
3 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
2 cups sugar
1 cup honey
6 Ball® or Kerr® (8 oz) Quilted Crystal® Jelly Jars with Lids and Bands
Optional: Ball® freshTECH Electric Water Bath Canner + Multicooker

Steps:

  • PREPARE boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • COMBINE bell peppers, jalapeño peppers and vinegar in a large saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down over high heat, stirring constantly.
  • ADD sugar and honey. Return mixture to a full rolling boil. Boil hard 3 minutes, stirring constantly. Remove from heat. Skim foam if necessary.
  • LADLE hot jelly into hot jars, leaving ¼ headspace. Wipe rim and center lid on jar. Screw band on until fingertip-tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • PROCESS jars for 10 minutes, adjusting for altitude. Turn off heat; remove lid and let jars stand 5 minutes. Remove jars and cool. Check seal after 24 hours. Lid should not flex up and down when center is pressed.

A simple, spicy, easy-to-make recipe for ghost pepper jelly with sugar, pectin, and lots of fresh ghost peppers. Perfect as a spread but also as a starter glaze or sauce.

1/2 pound ghost peppers (chopped (about 20-30 ghost peppers))
4 cups granulated sugar
1 1/4 cups cider vinegar
1/4 cup lime juice
1 teaspoon salt
3 ounces liquid fruit pectin
4 drops red food coloring ( if preferred - NOTE: I didn't use any for this recipe.)

Steps:

  • Finely chop the ghost peppers and add them to a large pan.
  • Add sugar, vinegar, lime juice, and salt.
  • Bring to a boil then reduce heat to low and simmer for about 10 minutes.
  • Strain out the ghost peppers and return the mixture to the pan.
  • Return heat to high and bring liquid to a boil. Stir in pectin and boil for 1 minute, stirring constantly. Remove from heat.
  • If using food coloring, add it now and stir.
  • Ladle the hot liquid into clean jars and screw on the lids.
  • Cool overnight in the refrigerator. The mixture will solidify into jelly.

On top of a cream cheese coated cracker (or even better, a PBJ on homemade buttermilk bread!), the heat is mellowed to a gentle "creeper" warm that sends them back for more... and more... and more. Adapted from the Ball No Sugar Needed cooked peach jam recipe. Try it, you'll like it. Seriously. This type of pectin gives a soft set - perfect for putting on cream cheese. I add a handful of red peppers to serve as a warning as the orange habaneros meld right in and are invisible. WEAR GLOVES. PUT A TOWEL DOWN AT YOUR WORKPLACE TO CATCH ANY SEEDS, ETC. DO NOT TOUCH FACE. Buttermilk soaked compress helps any burning areas that are inadvertently touched.

4 cups peaches, peeled and crushed (about 4 lbs)
1 cup habanero pepper, seeded and minced (about 25-30 peppers)
5 red peppers, coarsely seeded and chopped (cayenne, red jalapeno, etc)
1 cup unsweetened grape juice (white)
1/2 cup lemon juice (bottled)
1 tablespoon turmeric, ground
1/4 teaspoon butter (optional)
1 3/4 ounces ball fruit jell (No Sugar Needed Pectin)
3 1/2 cups unbleached cane sugar
2 tablespoons vanilla extract

Steps:

  • Peel, chop & crush peaches. Pulsing them in Cuisinart to a chunky consistency works well. Crushing with a potato masher works well too. Do not over process in food processor as cooking breaks them down too.
  • WEARING GLOVES (seriously), split habaneros and remove seeds and most of pith holding seeds. Reserve the pith & seeds to add back to jam if it is not hot enough for your tastes (OMG).
  • Split red peppers, de-seed & chop coarsely.
  • Process habaneros and red peppers of choice to mince. Do not process until smooth, just a mince, finer than the peach chop.
  • Measure 4 cups of peach crush and 1 cup pepper mince into a 6 to 8 quart nonreactive pot. Add the white grape juice, lemon juice, turmeric and butter (optional - but reduces foaming). Gradually stir in pectin. Bring to a full boil over med-high heat, stirring constantly.
  • Add sugar. Return to a full boil and boil hard for 2 minutes.
  • Remove from heat and stir in vanilla.
  • Taste and decide whether you want to add some Habanero pith and/or seeds (not for me thanks and I like it hot!). Go easy though as you probably want an edible finished product.
  • Ladle jam hot into freshly boiled half-pint jars, leaving 1/4 inch headspace. Wipe rims clean with a clean dish towel dipped in hot water if necessary so the lids will seal well. Adjust rings until resistance is just met.
  • Load jars into boiling water bath, cover and process 10 minutes. Make sure jars are covered by at least 2 inches of water and water is gently boiling.
  • After processing, remove jars and place on a towel to cool for 12 to 24 hours.
  • Remove bands, wipe sealed jars with a cool damp cloth. Label and store in a dark, cool. dry place for up a year -- as if it be around that long!

4 cups peaches (peeled and finely chopped)
1 medium red bell pepper (seeded and finely chopped)
3 medium jalapenos (seeded and finely chopped)
1/2 tsp. grated lemon rind
2 Tbsp. cider vinegar
2 oz box pectin powder (57g *see Note 1)
5 cups white sugar

Steps:

  • Place peaches in a large, non-reactive pan. Combine peppers, lemon rind, cider vinegar and pectin powder with fruit in pan. Stir well to combine. Place on the stove-top over high heat and stir until the mixture comes to a full boil. Stir in sugar and bring to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim off foam with a spoon and discard. Pour into clean warm, sterilized jars, filling to within 1/4-inch of rim.
  • Refrigerate in jars for short-term use.

1 medium bell pepper
7 small jalapeno peppers
10 dragon cayenne peppers (optional - sub in extra jalapenos if omitting)
2 peaches - peeled and diced
6 1/2 cups sugar
2 pouches liquid pectin (I buy Certo brand)
1 1/2 cup apple cider vinegar

Steps:

  • Thoroughly wash mason or canning jars and lids and allow to heat in oven or in hot water inside a large canning pot
  • Remove stems and seeds from peppers. (I recommend wearing latex gloves while handling hot peppers)
  • Using a knife or herb sheers, finely dice peppers and place into a bowl
  • In a large/deep pot, bring apple cider vinegar, sugar and peppers to a rolling boil
  • Add in peaches and pectin and allow to boil for an additional 3-4 minutes
  • Remove from heat and allow to cool for 2-3 minutes - skim off foam from top of jelly
  • Remove jars and lids from oven or from hot water and dry thoroughly
  • Pour jelly into hot jars and place lids on top
  • Process jars in a hot water canner for 10 minutes
  • Remove jars from canner and allow them to sit untouched on the counter until all lids properly seal

Number Of Ingredients 7

2 cups finely chopped peeled peaches (about 1-1/2 lb.)
1 cup finely chopped red peppers (about 1 large red pepper)
1 cup finely chopped jalapeño peppers (about 10)
1 cup HEINZ Apple Cider Vinegar
1 pkg. SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
5 cups sugar, measured into separate bowl (See tip below.)

Steps:

  • Wash jars and screw bands in hot soapy water. Rinse well. Place jars, right sides up, on rack in bottom of boiling-water canner. Fill canner with enough warm water so it covers tops of jars by at least 1 inch. Bring water to boil; boil jars 10 min. Reduce heat to simmer. Leave jars in hot water until ready to be filled.
  • Place new lids in medium saucepan filled with water; bring water to boil. Turn off heat. Let lids stand in water until ready to be used.
  • Place peaches and peppers in 6- or 8-qt. saucepot. Add vinegar. Stir in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Remove jars from water; drain well. Immediately ladle fruit mixture into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on rack, then lower into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover canner; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing centers of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

4 ghost peppers (or to taste)
12 oz red, orange or yellow bell peppers
2 cups (16 oz, 480ml) cider vinegar
6 cups (3 pounds, 1.36 kg) granulated sugar
2 pouches liquid pectin

Steps:

  • Sterilize 8 half pint or 4 pint jars and lids by boiling for 10 minutes or running through the "sterilize" setting on your dishwasher. Set warm sterilized jars on clean kitchen towel while preparing the jelly.
  • Put on gloves! Ghost peppers are hot! Stem, seed and roughly chop all the peppers. In a food processor or blender, puree the peppers with 1 cup of the vinegar.
  • Combine the puree with remaining vinegar and the sugar in a saucepan. Bring the mixture to a boil (be careful not to breath in the steam or get it in your eyes!!!). Boil for 10 minutes, careful it can boil over. Stir in the pectin, return to a boil and boil 1 minute, keep stirring.
  • Ladle the jelly into the sterilized jars, leave 1/4" head space. Wipe the rims of the jars with a clean, moist paper towel. Place 2 piece lids on the jars (don't over tighten the screw top). Process in hot water bath for 10 minutes.

Dreamgoddess needed a pepper peach jelly for a recipe she wanted to try, but none could be found in our small town. This is what I came up with. Just remember that for hotter jelly, cut the habaneros in half so that the heat can escape better or add another whole pepper. For less heat, use peppers that are not quite as hot. For just plain peach jelly, leave off the pepper all together.

6 lbs peaches
3 whole habanero peppers
1/2 teaspoon butter or 1/2 teaspoon margarine
4 1/2 cups sugar
1 box Sure-Jell

Steps:

  • Cut up peaches and discard pits.
  • Place in large sauce pan with whole habenoros.
  • Add 1 1/2 cups water.
  • Bring to a boil.
  • Reduce heat; simmer 10 minutes, stirring constantly.
  • Strain through cheese cloth.
  • This should produce 5 1/2 cups juice.
  • May need to add a little water to accomplish this measurement.
  • Pour exact amount of juice into 6-8 qt. saucepan.
  • Measure exact amount of sugar into bowl and set aside.
  • Stir in Sure Jell and 1/2 teaspoon butter or margarine.
  • Bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat stirring constantly.
  • Stir in sugar quickly.
  • Return to a full rolling boil and boil for exactly 1 minute.
  • Remove from heat and skim any foam off of top with a metal spoon.
  • Ladle quickly into jars which have been preheated.
  • Be sure rims are clean and place lids and rings on jars; be sure they are very tight.
  • Invert for 5 minutes, then set upright to cool.

Easy Red Pepper Jam image

Easy and delicious small-batch, no-pectin red pepper jam. Takes just one hour to make and needs no canning. Simply jar and refrigerate.

3 lbs sweet red bell peppers (about 6 peppers)
3 cups boiling water
1 1/2 cups white sugar
1 cup white vinegar
1 1/2 tsp fine salt
1/8 - 1/4 tsp red pepper flakes (optional)

Steps:

  • Start 3 cups of water to boil.Core and seed red peppers and cut into large chunks. Place in a food processor. Pulse until no large chunks remain. Remove to a large bowl and cover with boiling water. Let stand 15 minutes, then drain well.
  • Add drained red pepper puree to a large, heavy-bottomed saucepan. Add sugar, vinegar, salt and red pepper flakes, if using. Stir to combine. Heat over medium heat until mixture boils, then reduce heat to medium low and simmer, stirring regularly to start, then watching and stirring more regularly towards the end of cooking to avoid scorching on the bottom, until mixture is thickened, about 40-45 minutes. (Mixture will thicken further in the fridge).
  • Prepare three one-cup capacity jars by cleaning well.
  • When jam is ready, spoon into prepared jars and allow to cool 15 minutes uncovered. Place lids on jars, just finger tight and place in the refrigerate for 6-8 hours, before using.

5 each habanero peppers, seeded and minced
4 cups white sugar
1 cup brown sugar
3 fluid ounces whiskey
2 tablespoons cider vinegar
1 tablespoon lemon juice
1 teaspoon white vinegar
2 sterilized pint-sized jars

Steps:

  • Combine peaches, habanero peppers, white sugar, brown sugar, whiskey, cider vinegar, lemon juice, and vinegar in a large pot and let sit at room temperature for 1 hour.
  • Bring to a boil; cook for 20 to 25 minutes. Drop a teaspoon of jam onto a plate. If it is thick and doesn't run, it is done. If it runs, cook for 5 minutes more.
  • Ladle jam into jars. Wipe the rims and seal. Cool to room temperature. Keep refrigerated.
