PEPPER PATTIES
Bring the season's taste inside by fixing beef burgers and colorful peppers. The serving suggestions are many-present them on a bead of hot cooked noodles for a hearty dinner, alone for a lighter meal of on bread as a open-faced sandwich.

- In a large bowl, combine the soy sauce, garlic powder and pepper; reserve 1 tablespoon; set aside. Crumble beef over the remaining soy sauce mixture; mix well. Shape into four 1/2-in.-thick patties. , In a large skillet, saute onion and peppers in oil and reserved soy sauce mixture for 3-4 minutes or until crisp-tender. Remove and set aside. , Add patties to skillet; cook, uncovered, for 4-5 minutes on each side or until a thermometer reaches 160°; drain. Top patties with peppers and onion; cook until heated through. Serve with noodles if desired.

Excellent side dish for a meat loaf or other dish that needs a little accent. As for myself, a brunch side for scrambled eggs.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Stir egg, Tex-Mex cheese, green onions, jalapenos, and green chiles together in a bowl; stir in mashed potatoes. Form potato mixture into 8 patties; place on prepared baking sheet.
- Stir bread crumbs, cumin, and chili powder together in a small bowl. Dot each patty with 1 1/2 tablespoons salsa; sprinkle with 1 1/2 tablespoons bread crumb mixture.
- Bake in the preheated oven until cheese is melted and topping is lightly browned, about 20 minutes.

GRILLED SAUSAGE PATTIES WITH PEPPERS AND ONIONS

- Preheat the grill to 350 degrees F.
- In a large bowl mix together the pork and all of the spices. Mix well until evenly distributed. Shape the mixture into 5 equal patties. Grill the patties on each side until cooked to desired doneness, about 4 minutes on each side.
- In a large bowl, add olive oil, peppers, onions, salt and pepper, and toss together. Coat the mozzarella in the oil mixture, and transfer the slices to a large plate.
- Using a grate on top of the grill, arrange the onions and sliced peppers. Close the grill and allow to cook for 1 to 2 minutes on each side.
- Put the sliced peppers, onions and mozzarella on top of each meat patty. Close the grill and cook until the cheese melts, about 1 minute.
- Tuck a sausage patty into each roll and arrange on a serving platter.
- Cook's Note: After assembling each sandwich, gently squeeze the patty together so the bread absorbs some of the juice.
BRENDA'S ITALIAN STYLE PATTIES
This is very different from the traditional hamburger patty, but if your kids enjoy both burgers and pizza, then they'll love this. Mine certainly do!

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the ground beef, ground pork, bread crumbs, eggs, onion, green bell pepper, salt, ground black pepper, Italian-style seasoning, sage, garlic powder, 1/2 cup pizza sauce and stewed tomatoes. Mix well and form into 24 patties using a 1/4 cup measuring cup OR an ice cream scoop.
- In a separate small bowl, combine the mushrooms and olives and set aside. Arrange 12 patties on 2 ungreased baking sheets. Place 4 slices of pepperoni on each patty, then a small amount of the mushroom olive mixture, and then a slice of mozzarella cheese. Top each patty off with another patty and pinch the edges all around to seal everything into the middle. Finally, top each with a drizzle of remaining pizza sauce and some shredded mozzarella cheese.
- Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes.

SAUSAGE AND PEPPER BURGERS

- Preheat a grill to medium heat.
- Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Stir in the pizza sauce and 1/2 cup water, then simmer until thickened but still saucy, about 5 minutes. Set aside and keep warm.
- Combine the beef, sausage, oregano, sage and remaining teaspoon each of salt and pepper in a large bowl. Mix with your hands until well combined. Form into six patties, about 1 inch thick and 4 1/2 inches wide.
- Grill the patties until cooked through, 6 to 7 minutes per side. Top each with a slice of cheese during the last 1 to 2 minutes and cover to melt.
- Serve the burgers on the rolls and top with the pepper and onion sauce, then add the fresh basil.
