Grilled ham steak brushed with a spicy glaze of jalapeno jelly, garlic and cilantro.

1 Cook's® Bone-in Thick-Cut Ham Steak (about 2 pounds)
1 jar 10-ounces Jalapeno Pepper Jelly (about 3/4 cup)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro

Steps:

  • 1. Prepare grill for medium heat.
  • 2. Combine jelly and garlic in small saucepan; cook over medium heat 2 minutes, or until jelly is completely melted, stirring occasionally. Remove from heat. (Or, combine in small microwavable bowl. Microwave on HIGH 1 minute, or until jelly is melted.) Stir in cilantro. Reserve 1/4 cup jelly mixture; set aside.
  • 3. Grill ham steak 5 minutes; turn over. Brush with half of the remaining jelly mixture; continue grilling 10 minutes, until ham reaches an internal temperature of 160 degrees F when tested in center with meat thermometer, turning ham steak over and brushing with remaining jelly mixture after 5 minutes.
  • 4. Serve with the reserved jelly mixture.

4 tablespoons unsalted butter, divided
2 large ham steaks 1/2-inch thick
1/4 cup small dice onion
1/4 cup small dice red bell pepper
1/4 cup small dice green bell pepper
1 teaspoon minced garlic
1 cup chicken stock
2 tablespoons pepper jelly
1/4 teaspoon kosher salt
1 recipe Cheesy Grits, recipe follows
4 cups water
1 1/2 teaspoons salt, divided
1 1/2 cups quick cooking or old-fashioned grits (not instant)
2 cups milk
1 cup heavy cream
8 tablespoons butter
1/2 teaspoon fresh cracked black pepper
1 1/2 cups shredded white Cheddar

Steps:

  • Heat a large, 12-inch nonstick saute pan over medium heat and add 2 tablespoons of the butter. Once the butter has stopped foaming, add the ham steaks 1 at a time and saute until golden brown, about 3 minutes on each side. Remove the ham steaks and set aside as you prepare the sauce. Add 1 tablespoon of the remaining butter to the saute pan and once melted, add the onions, peppers and garlic to the pan. Saute until the vegetables are softened, 3 to 4 minutes. Add the chicken stock and pepper jelly and scrape up any bits that may have settled on the bottom of the pan. Bring to a boil and cook for 2 minutes. Remove from the heat and swirl the last tablespoon of butter into the pan. Serve over the ham steaks and grits.
  • In a large, heavy saucepan bring the water to a boil. Add a generous teaspoon of salt and the grits and stir with a wooden spoon to combine. When the grits thicken, add the milk, cream and butter and return to a boil. Reduce the heat to a simmer, cover the saucepan and cook for 45 minutes to 1 hour, or until the grits are tender, smooth and creamy. Taste and season the grits with the remaining salt and pepper. (If the grits seem too runny simply allow to cook a bit longer, uncovered and stirring frequently, until the desired consistency is reached.) Fold the cheese into the grits, and keep covered and warm until ready to use.

This was the way my Grandma Ruth would make ham steaks for a nice lunch. They go well with potato salad and corn on the cob (I think they go well with any sides!).

2 large ham steaks (about 1/2 inch thick each)
1 cup apple jelly
2/3 cup prepared yellow mustard
1/4 teaspoon pepper

Steps:

  • Trim the fat around the edges of the ham steaks.
  • Melt the apple jelly in a large skillet over medium heat for about 1-2 minutes.
  • Add mustard and pepper; mix in well.
  • Place ham steaks into skillet and spoon sauce over them to cover.
  • Cook, uncovered, about 5 minutes per side, basting often.
  • Turn out ham to a serving platter.
  • Cut into serving size pieces as desired.

1 (1-lb.) slice fully cooked center-cut ham slice (1/2 inch thick)

Steps:

  • Heat grill. Place jelly in small microwave-safe bowl. Microwave on HIGH for 30 seconds. Add cilantro; stir to mix well. Pat ham dry with paper towel.
  • When ready to grill, place ham slice on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush ham with half of glaze; cook 5 to 7 minutes or until thoroughly heated, turning and brushing with remaining glaze during last 2 minutes of cooking time.

  • In a large saucepan, bring the stock, water, cola, wine, sugar, honey, vinegar, onion, ginger, carrot and chiles to a boil. Simmer over moderately high heat for 20 minutes. Add the coriander and fennel seeds and peppercorns and simmer until reduced to 4 1/2 cups, 15 to 20 minutes longer. Strain the sauce through a fine sieve into a heatproof bowl.
  • Meanwhile, preheat the oven to 375°. Set the ham skin side up in a 12-by-15-inch roasting pan and pour half of the sauce on top. Roast the ham for 1 hour, basting with the sauce in the pan every 15 minutes.
  • Pour the remaining sauce over the ham and roast for about 1 hour and 30 minutes longer, basting the ham every 15 minutes, until glazed and an instant-read thermometer inserted in the thickest part registers 120°. Transfer the ham to a carving board and let rest for 15 minutes. Discard the skin from the ham before slicing. Serve the ham with the Red Pepper Jelly.
