PEPPER JACK CHEESE STRAWS

Pepper Jack Cheese Straws image

Provided by Trisha Yearwood

Categories     appetizer

Time 1h50m

Yield 8 to 10 servings

Number Of Ingredients 9

15 ounces pepper jack cheese, shredded cold, then left unrefrigerated until room temperature
1/2 cup (1 stick) unsalted butter, softened
2 cups all-purpose flour
1 heaping teaspoon kosher salt
1/2 tablespoon garlic powder
1/2 teaspoon freshly ground black pepper
Pinch cayenne pepper
1 tablespoon finely chopped fresh thyme
Nonstick cooking spray, for the cookie sheets

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the softened cheese and butter in the bowl of a stand mixer. Using the paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
  • Sift 1 cup of the flour together with the salt, garlic powder, black pepper and cayenne in a large bowl. Stir in the thyme. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press (you may not need to add all the flour).
  • Lightly spray 2 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tip and press the dough onto the cookie sheets in long strips that run the length of the pans (see Cook's Note). Repeat with the remaining dough until the cookie sheets are full. Bake, flipping halfway through, until the straws are golden brown and crisp, about 20 minutes.
  • With your hands or a sharp knife, break or cut the strips into 3-inch lengths. Use a flat, thin spatula or egg turner to remove the cheese straws from the pan. Allow them to cool on a wire rack. Once they are completely cool, serve or store in a tightly covered container.

PEPPER JACK QUESO DIP

Pepper Jack Queso Dip image

This homemade queso dip recipe uses pepper jack cheese to bring a moderate amount of spice and keep the ingredient list to a minimum. It's the perfect cheese dip when having friends over or to enjoy solo while watching your favorite show or movie.

Provided by The Hungry Hutch

Categories     appetizer

Time 25m

Number Of Ingredients 11

One 8-ounce bar Cabot Pepper Jack Cheese, shredded
1 tablespoon cornstarch
2 tablespoon unsalted butter
1/2 large onion, diced (about 1/2 cup)
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon kosher salt, or more to taste
2 cloves garlic, minced
One 12-ounce can evaporated milk
Chopped cilantro, for serving
Tortilla chips, for serving

Steps:

  • Toss the shredded cheese with the cornstarch; set aside.
  • Place the butter in a medium saucepan over medium heat; add the onion, pepper, cumin, and salt, and cook, stirring occasionally, until the onions start to soften and become translucent, about 4 minutes.
  • Add the garlic and cook for 1 minute more. Add the milk and bring to a simmer.
  • A handful at a time, add the cheese to the saucepan, stirring after each addition until melted. Let the queso simmer for 2 to 3 minutes. Taste the dip (caution-it's hot!) and adjust for seasoning (be careful with salt because tortilla chips are usually already pretty salty).
  • Transfer the queso to a bowl. Top with some cilantro and serve with tortilla chips for dipping.

PEPPER JACK CHEESE STICKS

Pepper Jack Cheese Sticks image

Crispy and chewy with a little heat, this is a flavorful twist on an old favorite... great finger food for any party!

Provided by Francine Lizotte

Categories     Cheese Appetizers

Time 16m

Number Of Ingredients 7

2 c unbleached all-purpose flour
1/2 tsp cayenne pepper
4 large free-run eggs, lightly beaten
2 1/2 c fine bread crumbs
1 Tbsp italian seasoning
1 lb pepper jack cheese, cut into 3 1/2 long x 1/2-inch square
canola oil for frying, as needed

Steps:

  • 1. In a bowl, combine flour and cayenne pepper; whisk to blend and set aside.
  • 2. Prep two shallow bowls; one with beaten eggs and the other one with bread crumbs. Add Italian seasoning to the bread crumbs and stir.
  • 3. Working in batches of 6, place cheese sticks in the flour mixture, close bag and shake to coat. Taking one at a time, dip a cheese stick in eggs and then bread crumb mixture; repeat once again. Place breaded stick on a baking sheet lined with a silicone mat or wax paper. When sticks are all coated, transfer them to the freezer for 30 minutes.
  • 4. In a frying pan, heat oil to 350-365ºF. Take sticks directly out of the freezer and fry them in batches making sure to not overcrowd the pan. Using a stainless steel strainer, gently move them around to fry evenly. When golden brown, transfer cheese sticks to a wire rack sitting over a baking sheet lined with paper towels; let them sit for 5 minutes before serving. Makes 18 sticks

Use one hand to roll the cheese sticks in the wet ingredients, and the other to roll them in the dry so you have less clumpiness and mess (it will still be a bit clumpy or messy, which is the way it goes). As you complete each cheese stick place it on the waiting plate or tray. When they are all coated place them in the freezer for 30 minutes.
  • Set up your air fryer with the rack inserted, on the level vs. tilted setting (if applicable). Place the cheese sticks on the rack with space in between them. Set the temperature to 400°F if applicable, or press the cheese stick button if not. Cook for about 8 minutes; this is a very inexact number, you really have to watch and keep checking. If you see the ends or any part of the cheese stick start to slump through the rack, pop open that lid and get them out.

  • Fill two shallow bowls, one with the flour and one with the panko + oregano. Fill a small bowl with the eggs, and whisk to combine. Dip each cube of cheese in the flour, then the egg, and then the bread crumbs. Try to fully coat each cube as you work. Place the finished cubes on a baking sheet or clean plate.
  • These are the fried version. Fill a heavy-duty pot with 2-3 inches of oil (canola or vegetable works well). Heat to around 350°F. Fry each cube for about 20-30 seconds, just until golden brown and crispy- looking. Then remove to a plate lined with paper towels to soak up excess oil. I like to work with metal tongs when frying, as they make it easier to move food but keep my arms away from the hot oil.
