BLACK PEPPER COOKIES

3 eggs
2 cups packed light brown sugar
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cloves
2 teaspoons ground cinnamon
½ teaspoon ground black pepper
1 cup finely chopped walnuts
2 ½ cups raisins
2 tablespoons chopped candied citron
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat eggs with brown sugar. Stir in flour with baking soda, salt, spices and pepper. Add nuts, raisins and citron and stir to coat. Pour the egg-sugar mixture into flour mixture and stir to make a stiff dough. Chill.
  • Using rounded teaspoonful of dough roll into balls with floured hands. Put on greased cookie sheet. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes. Sprinkle with confectioners' sugar.

CUMIN COOKIES - JEERA BISCUITS

Sweet and salty cumin cookies, perfect with tea!

Number Of Ingredients 6

1 cup + 2 tablespoons all purpose flour
1/2 cup unsalted butter (at room temperature)
1/4 cup + 1 tablespoon sugar
1/4 teaspoon salt
1 tablespoon cumin seeds
1-2 tablespoons milk (optional, only if required)

Steps:

  • Preheat the oven to 350 F degrees.
  • In a baking tray, take 1 tablespoon of cumin seeds and roast them for 3-4 minutes at 350 F degrees or till you get a nice fragrance from them. Set aside.
  • In the steel bowl of your stand mixer or using your hand mixer, cream together the butter and sugar. Scrape down the sides and bottom of the bowl as needed.
  • Add the flour, salt and 3/4 tbsp of cumin seeds to the butter and sugar and mix. Reserve the remaining cumin seeds to sprinkle on top of the cookies.
  • Mix at low speed till the mixture looks smooth and comes together in form of a dough. You may add 1-2 tablespoons of milk here if the dough doesn't come together.
  • Sprinkle some flour on a flat surface or wooden floor and shape the dough like a flat disc.
  • Using a roller, roll the dough to 1/4 inch thickness. Cut into different shapes using cookie cutter and sprinkle them with the remaining roasted cumin seeds.
  • Place the cookies in a baking tray and bake at 350 F degrees for 10 minutes. After 10 minutes, take them out and reduce the temperature to 325 F and bake the cookies again for 5-6 minutes or till light they are golden brown from sides and also from the bottom.
  • Place on wire rack to cool completely.
  • Store the cookies in an airtight container.

½ cup butter, softened
1 ½ cups packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 pear - peeled, cored and diced
½ cup raisins
½ cup chopped walnuts
1 ½ cups confectioners' sugar
2 ½ tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In large bowl, beat margarine and sugar untill smooth. Beat in egg and vanilla. Combine flour, baking powder, cinnamon, and ginger; mix into batter. Stir in chopped pears, chopped nuts and raisins.
  • Drop about two inches apart by rounded tablespoonfuls onto baking sheets and bake 15 minutes or until edges are golden brown and center springs back when lightly touched. Remove to wire racks to cool.
  • Combine confectioners' sugar and lemon juice and mix until smooth. Spoon icing over coookies.

2/3 cup butter-flavored shortening
1/4 cup sugar
1 large egg
1-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup crushed peppermint candies

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and salt; gradually stir into creamed mixture and mix well. Fold in candy. , Drop by teaspoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until edges of cookies just begin to brown. Remove to wire racks to cool.
