This is a wonderfully versatile recipe. I first tested it as a vegetable dip with vegetables, potato chips or bread sticks...but my favorite use is a topping for baked potatoes in place of sour cream.

1 package (8 ounces) cream cheese, softened
2 cups mayonnaise
1 cup buttermilk
2 teaspoons garlic salt
2 teaspoons onion powder
3/4 teaspoon pepper
Assorted fresh vegetables and/or ridged potato chips

Steps:

  • In a large bowl, beat the cream cheese, mayonnaise, buttermilk and seasonings until smooth. Chill until serving. Serve with vegetables and/or potato chips.

1 cup nuts (walnuts, pecans or your favorite) chopped

Steps:

  • Mix all ingredients except the nuts. Option 1: Chill the mixture. Shape into a ball and roll in nuts. Option 2 (easier if you don't like shaping into a ball): Layer 1/2 of the cheese mixture in a bowl, followed by 1/2 of the nuts, then repeat with the rest of the cheese mixture and the rest of the nuts. Serve with crackers and vegetables.

I had no idea what to do with them, so I whipped this up for Thanksgiving and it was the talk of the day. I barely had to wash the bowl and it's already been requested for Christmas. This is what I call a stupid-easy recipe, but nobody else needs to know that!

1 lb cream cheese (2 "bricks")
1 -2 tablespoon milk
1 (14 ounce) jar whole mild cherry peppers (*not* roasted red peppers, although they might be good, too)
3 -4 tablespoons mild jalapenos (I only use LA PREFERIDA brand mild, but they can be tough to find)

Steps:

  • Heat cream cheese 30-40 sec in microwave. Mix in milk until smooth.
  • Drain peppers and chop coarsely by pulsing in food processor.
  • Add cream cheese and pulse until blended.
  • Serve with crackers, tortilla chips or crudites, or spread on bread or bagels. Can be served immediately or refrigerated overnight to let flavors blend.

You can't beat these curry cream cheese stuffed sweet peppers! They make a great, low-carb appetizer or snack.

8 oz cream cheese, softened
12-16 mini sweet peppers, cut in half and seeds removed
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
2 tbsp shredded cheese
1 tbsp chives, chopped (optional)

Steps:

  • Preheat oven to 350 and cover a baking sheet in parchment paper.
  • In a small bowl, mix together softened cream cheese, garlic powder, chili powder, onion powder, salt, pepper and paprika.
  • Spoon mixture into each prepared mini pepper half. Should fit around 2 tsp depending on the size of the pepper. Continue until all peppers are filled.
  • Lay peppers out, cream cheese side up onto prepared baking sheet and top with the shredded cheese.
  • Bake for 20 minutes or until the peppers are softened and cream cheese is slightly browned.
