3 cups flour
2 cups sugar (1 white, 1 brown)
1 /2 cup shortening
3 tsp baking powder
1 /2 tsp cream of tartar
2 eggs
1 tsp baking soda
1 cup sour milk
cinnamon for sprinkling

Steps:

  • Mix the cake ingredients thoroughly.
  • Set aside 1 /2 cup of the mixture and pour the rest into two greased 9 X 13 inch pans
  • Bake at 375 for about 35 minutes.
  • Remove cake from oven half way through and sprinkle reserved mixture for topping.
  • Sprinkle cinnamon on top

1 (16.25 ounce) package white cake mix
1 ¼ cups water
3 egg whites
⅓ cup vegetable oil
2 teaspoons lemon extract
1 cup cold heavy whipping cream
1 (8 ounce) package cream cheese, softened
¾ cup white sugar
1 teaspoon vanilla extract
⅓ cup blueberry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch pans.
  • Beat cake mix, water, egg whites, vegetable oil, and lemon extract together in a bowl using an electric mixer on medium speed until batter is well combined, about 2 minutes. Pour batter into prepared pans.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 25 to 30 minutes. Cool in pans for 10 minutes before transferring it to a wire rack to cool completely.
  • Beat cream in a chilled bowl using an electric mixer until soft peaks are almost forming into stiff peaks; place bowl in refrigerator.
  • Beat cream cheese, sugar, and vanilla extract together in a separate bowl using an electric mixer until smooth and creamy. Fold whipped cream into cream cheese mixture.
  • Place 1 cake on a plate; top with blueberry pie filling. Place second cake atop blueberry filling. Generously frost cake with whipped cream cheese frosting.

2 cups sugar, divided
1/2 cup baking cocoa
1-1/2 cups whole milk, divided
2 unbaked pastry shells (9 inches)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, room temperature
2 tablespoons shortening
1 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a small saucepan, combine 1 cup of sugar and cocoa. Blend in 1/2 cup milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, about 2 minutes. Pour into unbaked pastry shells, tipping to coat the pastry halfway up the sides; set aside. In a bowl, combine flour, baking powder, salt and remaining sugar. Add egg, shortening, vanilla and remaining milk; beat until smooth. Starting at the edge, spoon batter into the pastry shells, completely covering the chocolate. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm or chilled with whipped cream if desired.

3 cups flour
1 teaspoon baking powder
1 1/2 cups sugar
1/2-2/3 cup butter
3 large eggs
1 teaspoon baking soda
1 cup buttermilk
2 teaspoons vanilla extract
1 teaspoon almond extract
salt

Steps:

  • Sift flour, baking power, salt, sugar and soda.
  • Cut in butter until mixture has the consistency of course meal or small peas.
  • Reserve about 1 1/2 cups of this mixture.
  • Combine the eggs, milk and extracts and stire into the remainder of the dry blend.
  • Pour into 2 well-buttered 10-inch pie pans.
  • Brush the top of the dough w/ butter and sprinkle with the reserved crumb mixture.
  • Bake at 350° for 25-30 minutes or until cake is done.

The true magic of a Dutch baby is the contrast of texture between the crispy, crusty outside and the soft, custardy, fruity center. This version is not only gorgeous and delicious, but it's fun and simple to make! There's no sugar in the batter, so all the sweetness comes from the berries and the powdered sugar. For a sweeter version, serve with maple syrup like regular blueberry pancakes.

¼ teaspoon fine salt
¼ teaspoon pure vanilla extract
3 large eggs, at room temperature
⅔ cup milk, at room temperature
3 tablespoons clarified butter, melted
⅓ cup fresh blueberries, or more to taste
1 tablespoon unsalted butter, melted
½ Meyer lemon, juiced
2 tablespoons powdered sugar, or to taste
2 tablespoons maple syrup, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine flour, salt, vanilla extract, eggs, and milk in a high-speed blender. Blend on high speed until completely smooth and very thin, about 1 minute.
  • Heat a 9- or 10-inch cast iron skillet over high heat. Pour clarified butter into the skillet and use a pastry brush to grease the sides. Heat butter until just starting to smoke.
  • Quickly and carefully pour the batter into the center of the skillet, then sprinkle blueberries over top. Transfer skillet to the center of the preheated oven and bake until browned and nicely puffed, 20 to 25 minutes.
  • Carefully remove from the oven and immediately brush the top with melted butter. Squeeze lemon juice over top as Dutch baby deflates. Dust with powdered sugar.
  • Cut in wedges to serve and drizzle with maple syrup.

1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter and lightly flour the sides of a 9-inch springform pan and line the bottom with parchment paper.
  • Place blueberries in a bowl and toss with 1 tablespoon flour and 1 teaspoon lemon juice.
  • Beat eggs and sugar in a mixing bowl using an electric mixer on high speed until thickened and light in color, at least 5 minutes. 1 pt blueberries, rinsed and drained
1 c sugar
2 Tbsp lemon juice
4 Tbsp butter, room temperature
1 tsp vanilla extract
1 1/4 c all-purpose flour
1 tsp baking powder
1/8 tsp salt
1/2 c buttermilk
1 unbaked 9" deep dish pie shell

Steps:

  • 1. Mix blueberries, 1/2 cup of the sugar and lemon juice in a medium saucepan. Cook over medium heat stirring frequently until sugar is dissolved and mixture simmers. Remove from heat and set aside to cool to lukewarm. Preheat oven to 375 degrees. While blueberry mixture cools, cream butter with remaining 1/2 cup sugar and vanilla until completely blended. Stir in egg and beat until light and fluffy. Thoroughly combine flour, baking powder and salt in a medium bowl. Add half of the flour mixture and half of the buttermilk to the butter and sugar mixture, beating gently until smooth. Add remaining flour and buttermilk mixtures and beat till smooth. Fold in the blueberry mixture with a large spoon and mix just enough to create a marbled effect. Place pie shell on a baking sheet. Pour batter into unbaked pie shell. It will be very full. Bake for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean.
