Penne Pasta with Sausage, Butternut Squash & Chard image

Get dinner on the table even faster by using precubed butternut squash in this creamy pasta recipe. Found in the produce section of large grocery stores, the cut butternut is a little bigger than you need here, so you will have to do some chopping--but the peeling and gutting has been done for you. That means this easy healthy dinner takes just 35 minutes to prep. Score!

8 ounces whole-wheat penne
2 cups diced butternut squash (1/2-inch)
4 cups lightly packed chopped chard
1 cup diced smoked sausage
½ cup finely chopped shallot
2 tablespoons butter
1 tablespoon chopped fresh sage
2 tablespoons all-purpose flour
2 cups low-fat milk
1 cup freshly grated pecorino cheese, plus more for serving
½ teaspoon salt
Pinch of freshly grated nutmeg
Crushed red pepper flakes for garnish

Steps:

  • Bring a large pot of water to a boil. Add pasta and cook for 2 minutes. Add squash and cook for 6 minutes. Add chard and cook until the pasta is tender, 1 to 2 minutes more. Drain and return to the pot.
  • Meanwhile, combine sausage, shallot and butter in a large saucepan over medium heat. Cook, stirring occasionally, until the shallot is soft, about 5 minutes. Add sage and sprinkle with flour; cook, stirring, for 1 minute. Whisk in milk and cook, whisking occasionally, until the sauce starts to thicken, about 5 minutes. Stir in cheese, salt and nutmeg; cook until the cheese melts and the sauce is thick.
  • Pour the sauce over the pasta mixture and stir to coat. Serve topped with more cheese and pepper flakes, if desired.

This simple recipe is a weeknight staple in our house. I vary the basic recipe by using escarole, Savoy cabbage, radicchio, or endive in place of the chard, and pancetta or smoked bacon in place of the sausage.

Number Of Ingredients 12

1 Tbs. olive oil; more as needed
5 oz. sweet Italian sausage (about 2 sausage links), casings removed, meat crumbled
1 small red onion, chopped
1 small bunch red, green, or yellow Swiss chard, tougher stems removed, leaves roughly chopped
2 small cloves garlic, minced
Pinch dried red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup homemade or low-salt chicken or vegetable broth, or dry white wine
8 oz. dried penne or fusilli
1 Tbs. balsamic vinegar; more to taste
1/4 cup pine nuts, lightly toasted
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil for cooking the pasta. Meanwhile, heat the oil in a large skillet over medium heat. Add the sausage; cook, breaking it up and stirring with a wooden spoon, until browned and cooked through, 7 to 10 minutes. With a slotted spoon, remove the sausage and set aside. If the pan seems a bit dry, add enough oil so there's about 3 Tbs. fat in the pan. Return the pan to medium heat, add the onion, and cook until just tender, 3 to 5 minutes, stirring and scraping up any browned bits with a wooden spoon. Add the chard, garlic, and pepper flakes, season with salt and pepper, and toss until the chard begins to sizzle, about 1 minute. Add the broth, cover, and simmer, stirring occasionally, until the chard is tender, 6 to 8 minutes. Meanwhile, cook the pasta until just tender. Reserve 1 cup of the pasta water and then drain the pasta, leaving drops of water clinging to it. Add the pasta and 1/4 cup of the cooking water to the skillet, using more of the water if needed. Return the sausage to the pan and add the balsamic vinegar. Heat gently for a few minutes to let the flavors meld. Add the pine nuts and half of the Parmigiano, and taste for salt and pepper. Add a bit more of the cooking water if the pan seems dry. Serve warm, passing the remaining Parmigiano at the table.

4 tablespoons olive oil
1 cup diced onion
1 head cauliflower, cored and separated into very small flowerets
Salt to taste
1 pound penne
4 large cloves garlic, sliced thin
1 pound Swiss chard, rinsed and roughly chopped
1/2 teaspoon crushed red pepper flakes, or to taste
4 ounces imported pecorino romano, freshly grated

Steps:

  • Bring 4 quarts of water to a boil.
  • Heat the oil in a large skillet, add the onion and cook over medium heat until golden and beginning to brown, about 15 minutes.
  • Once water is boiling, add cauliflower and some salt, and cook for 3 minutes. Remove cauliflower with a slotted spoon and set aside. Set aside 1/2 cup of the water.
  • Add the penne to the boiling water, stir it and let it cook for about 8 minutes, until al dente.
  • While the penne is cooking, add the garlic to the skillet and cook for 2 to 3 minutes, until lightly browned; then, add the Swiss chard and cook, stirring, until it wilts, another 3 minutes or so. Stir in the cauliflower and reserved cooking liquid and the red pepper. Season with salt.
  • When the penne is done, drain it, add it to the skillet and toss with the vegetables over low heat. Serve at once, dusted with cheese.

1 medium red onion (5 oz.)
1 bunch swiss chard (10 oz.)
3 tablespoons olive oil
6 cups chicken stock
3 cups water
1 cup penne or 1 cup mostaccioli (other tubular pasta)
2 cups canned cannellini, drained (large white beans)
1/4 teaspoon fennel seed
1/4 teaspoon red pepper flakes
salt & pepper, freshly ground
to taste parmesan cheese, freshly grated

Steps:

  • Steel knife: With food processor running, drop garlic through feed tube and mince. Add onion and chop coarsely, using 6 to 8 on/off turns.
  • Remove leaves from chard and reserve. Cut stems into feed tube lengths.
  • Ultra thick: Stand stems in feed tube; slice, using light pressure.
  • Heat oil in heavy 4-quart saucepan over medium heat. Add contents of work bowl and cook until soft, stirring occasionally, about 15 minutes.
  • Add stock and water; bring to a boil. Mix in penne and cook 5 minutes.
  • Ultra thick: Roll up chard leaves and arrange in feed tube. Slice, using light pressure. Add chard leaves to saucepan.
  • Mix in beans, fennel seed, red pepper flakes, salt and pepper.
  • Bring to boil and cook until penne is tender, about 3 minutes.
  • Can be made ahead. Pass the Parmesan cheese.

1/2 pound Swiss chard
3 tablespoons extra-virgin olive oil
1 medium onion, sliced
2 cloves garlic, sliced
2 ounces of prosciutto, slivered
6 ripe plum tomatoes, sliced
Salt and freshly ground black pepper
1 pound penne
Freshly grated Parmesan cheese

Steps:

  • Rinse the Swiss chard and chop it fine.
  • Heat the oil in a large skillet. Add the onion and saute until tender. Stir in the garlic and prosciutto. Saute briefly, then add the tomatoes. Cook until they soften. Add the Swiss chard and continue cooking over medium heat, stirring, until the Swiss chard is nearly tender. Season to taste with salt and pepper.
  • While the swiss chard is cooking, bring a large pot of salted water to a boil for the penne. Cook the penne until al dente, about seven minutes. Drain.

2/3 to 1 cup heavy cream
1 tablespoon walnut or similar nut oil (such as hazelnut)

2 tablespoons minced fresh tarragon or parsley or a combination of both

Steps:

  • In a skillet set over moderately low heat melt butter, add leek, chard stems, and salt and pepper to taste. Cut a round piece of waxed paper to fit the size of your skillet and place it over the vegetables. Cover the skillet with a lid and cook for 5 minutes. Remove the cover and waxed paper. Now add the chard leaves, garlic, red pepper flakes, and broth and simmer the mixture stirring occasionally, uncovered for 5 minutes more. Increase the heat to high and reduce liquid until almost evaporated. Add the cream and walnut oil and simmer sauce over moderately high heat, stirring, until lightly thickened.   • Fill a 4-quart kettle three-fourths full with salted water and bring to a boil for pasta.
