1 medium onion, sliced
2 tablespoons olive oil, divided
8 garlic cloves, thinly sliced
3 cups uncooked penne pasta
6 cups chopped fresh kale
1/2 teaspoon salt

Steps:

  • In a large skillet, cook onion in 1 tablespoon oil over medium heat for 15-20 minutes or until onion is golden brown, stirring frequently and adding the garlic during the last 2 minutes of cooking time. , Meanwhile, in a large saucepan, cook penne according to package directions. In a Dutch oven, bring 1 in. of water to a boil. Add kale; cover and cook for 10-15 minutes or until tender; drain., Drain penne; drizzle with remaining oil. Stir the salt, penne and kale into the onion mixture; heat through.

1 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 tablespoon olive oil
1 large garlic clove, minced
1/4 cup white wine
1 cup heavy whipping cream
1/4 cup chicken broth
2 cups crumbled Gorgonzola cheese
6 to 8 fresh sage leaves, thinly sliced
Salt and pepper to taste
Grated Parmigiano-Reggiano cheese and minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, brown chicken in oil on all sides. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan., Add cream and broth; cook until sauce is slightly thickened and chicken is no longer pink. Stir in the Gorgonzola cheese, sage, salt and pepper; cook just until cheese is melted., Drain pasta; toss with sauce. Sprinkle with Parmigiano-Reggiano cheese and parsley.

1/2 pound onions (sliced)
1 tablespoon butter
1 tablespoon flour (rice flour or masa harina for gluten-free)
1/2 cup milk
1/4 cup gorganzola
1/4 cup parmigiano-reggiano
2 tablespoons parsley (chopped)
salt & pepper to taste

Steps:

  • Melt the butter in a sauce pan.
  • Add the onions and cook at med-low temperature until the onions are brown and caramelized, about 1 hour.
  • Melt the butter in a small sauce pan.
  • Add the flour and mix.
  • Add the milk, cheese, and onions and heat until the cheese is melted and the sauce is thick.

2 tbsp olive oil
2 large red onions , halved and very thinly sliced
1 tbsp chopped thyme leaf
large pinch chilli flakes
75ml red wine vinegar
1 tbsp caster sugar
200ml vegetable stock
400g wholewheat spaghetti
200g kale , chopped
100g gorgonzola , crumbled

Steps:

  • Heat the oil in a large frying pan. Add the onions, thyme and some seasoning. Sauté for 10 mins until softened, then add the chilli flakes, vinegar, sugar and stock. Increase the heat and cook for another 10 mins.
  • Meanwhile, boil a large pan of water, add some salt and cook the spaghetti following pack instructions, adding the kale for the final 4 mins of cooking. Drain and return to the pot with a little of the cooking water. Tip in the onion mixture and half the cheese, and toss together. Serve topped with the remaining cheese.

3 tablespoons olive oil
1 medium onion, chopped
4 garlic cloves, chopped
1 14 1/2-ounce can Italian plum tomatoes, drained, chopped
1/2 cup chopped fresh basil or 1 tablespoon dried, crumbled
1/2 cup (1 stick) butter, room temperature
6 ounce Gorgonzola cheese
1 pound penne pasta
1 cup freshly grated Romano or Parmesan cheese

Steps:

  • Heat oil in heavy large skillet over medium heat. Add chopped onion and garlic and sauté until translucent, about 8 minutes. Stir in chopped tomatoes and basil. Cook until mixture thickens, stirring occasionally, about 20 minutes.
  • Meanwhile, using spoon, beat butter with Gorgonzola until blended.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return pasta to pot.
  • Whisk Gorgonzola mixture into tomato sauce. Add sauce to pasta and stir to coat. Season with salt and pepper. Sprinkle with Romano and serve.

CARAMELIZED ONION AND GORGONZOLA PIZZA

2 pounds onions, sliced
2 tablespoons olive oil
Pinch sugar
1/2 cup tomato sauce
2 prepared pizza crusts
1 cup grated mozzarella
1/2 pound gorgonzola cheese, crumbled

Steps:

  • Put the onions, olive oil, and sugar into a skillet over medium heat and cook, stirring frequently, until the onions are wilted and brown, about 15 to 20 minutes. Reduce the heat if the onions are browning too quickly. Set aside to cool a bit.
  • Heat the oven to 450 degrees F.
  • Spread half the tomato sauce onto 1 of the crusts. Top with half the caramelized onions and half the mozzarella. Repeat with the other crust. Bake the pies until the mozzarella is browned and bubbling, about 10 to 15 minutes. As soon as the pies come out of the oven, sprinkle over the gorgonzola. Slice and serve.

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a separate large pot over medium-high heat. Add the kale and cook, stirring, until wilted and the liquid evaporates, 2 to 3 minutes; remove to a bowl. Add the heavy cream and 1/2 teaspoon salt to the pot. Bring to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
  • Add the pasta, reserved cooking water and parmesan to the sauce and stir until creamy. Season with salt and pepper and stir in the kale. Divide among bowls and season with pepper.

200g kale
3 large onions, peeled
3 tbsp olive oil
2 tbsp balsamic vinegar
Salt and pepper
300g pasta
80g gorgonzola, crumbled
Extra virgin olive oil to serve (optional)

Steps:

  • Place the kale in a large saucepan and cover with water. Bring to the boil and cook for 5 minutes, then drain really well and set aside. Halve the onions lengthways then cut each half into crescent moon shaped slices, about 1cm thick at the thickest part. Toss these in a roasting tin with 2 tbsp of the olive oil, the balsamic vinegar, and season to taste. Roast in a preheated oven at 200 degrees celsius, gas mark 6 for 30-35 minutes, stirring occasionally. The onions should be tender and slightly charred. While the onions are roasting cook the pasta in plenty of boiling salted water for about 15 minutes (it should be al dente). Drain and return the pasta to the saucepan. Add the drained kale along with 1 tbsp of olive oil and adjust the seasoning if required. Cook over a medium heat until the kale has warmed through. Gently stir in the onions and cheese then drizzle with extra virgin olive oil if required and serve immediately.

1/2 lb hot Italian turkey sausage, casings discarded and sausage crumbled
1 garlic clove, minced
1 small onion, diced
1 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb penne
2/3 cup reduced-sodium chicken broth
1/2 cup parmesan cheese, grated

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Add garlic, onion and sausage, breaking up any lumps with a spoon, until browned, 5 to 7 minutes.
  • Meanwhile, blanch kale in a 6-quart pot of boiling salted water, uncovered, 5 minutes. Remove kale with a large sieve and drain. Return cooking water in pot to a boil, then cook pasta in boiling water, uncovered, until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • While pasta cooks, add kale to sausage in skillet and sauté, stirring frequently, until just tender, about 5 minutes. Add broth, stirring and scraping up any brown bits from bottom of skillet, then add pasta and 1/2 cup reserved cooking water to skillet, tossing until combined. Stir in cheese and thin with additional cooking water if desired.
  • Serve immediately, with additional cheese on the side.
