PENNE WITH A SAGE CREAM SAUCE
I got this recipe from the "Shut up and Mangia" website. The author writes: "This recipe is my absolute favorite. I apologize, but I love cream sauce recipes. I know I'm getting up there and should slow down a bit but I can't seem to help myself especially when it comes to this recipe. Enjoy!" Feel free to add sautéed shrimp, chicken or broccoli to this sauce.Serves 4 people.

Steps:
- In a large frying pan sauté the garlic, onions and mushrooms in the oil and butter until tender.
- Deglaze the pan with the wine.
- Add the cream and sage and simmer for a few minutes.
- Stir in the cheese.
- Season with pepper.
- In a large pot bring 6 quarts of salted water to a boil. Cook the penne for about 10 to 12 minutes until al dente.
- Drain and add the penne to the sage cream sauce.
- Plate and garnish with parsley.

Steps:
- Melt butter with oil in heavy large skillet over medium-high heat.
- Add sausage, onion and garic and saute until golden brown and tender, about 7 minutes.
- Drain any excess dripping from skillet.
- Add wine to skillet and boil until almost all liquid evaporates, about 2 minutes.
- Add tomatoes with juices and simmer 3 minutes.
- Add cream and simmer until sauce thickens slightly, about 5 minutes.
- Stir in 4 tablespoons parsley.
- Season to taste with salt and pepper.
- Remove from heat.
- Cook pasta in large pot of boiling, salted water until firm to bite.
- Drain; transfer to large bowl.
- Bring sauce to simmer.
- Pour sauce over pasta.
- Add 3/4 cup cheese and toss to coat.
- Sprinkle remaining 1/4 cup cheese and 2 tablespoons parsley.
PENNE WITH BUTTER, SAGE, AND PARMESAN
This simple recipe makes a great accompaniment to grilled chicken. The quality of Parmesan really matters here; avoid the stuff in the green container for this preparation!

Steps:
- Bring a large pot of water to a boil, and salt it. Cook the pasta until it is tender but just short of the point at which you want to eat it.
- Meanwhile, place butter and olive oil in a saucepan large enough to hold the cooked pasta; turn the heat to medium and add the sage. Cook until the butter and oil begin to brown and the sage shrivels.Turn heat down to low.
- When pasta is almost done, scoop out a cupful of the cooking water and set aside. Drain the pasta, immediately add it to the sage mixture, and raise the heat to medium.
- Add 1/2 cup of the reserved water, and stir. Cook about 30 seconds or until some of the water is absorbed and the pasta is perfectly done.
- Stir in the cheese until the sauce becomes creamy. Thin it with a little water if necessary.
- Season liberally with pepper, and salt to taste.

- 3 minutes. Add cream and simmer until sauce thickens slightly, about 5 minutes. Stir in 4 tablespoons parsley. Season to taste with salt and pepper. Remove from heat. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
- Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain pasta; transfer to large bowl.
- Bring sauce to simmer. Pour sauce over pasta. Add 3/4 cup cheese and toss to coat. Sprinkle with remaining 1/4 cup cheese and 2 tablespoons parsley.
