Pasta with chicken in an onion and cream suace is simple and quick pasta full of rich flavours, brilliant for side dishes and main meals!

Number Of Ingredients 14

1 tbsp olive oil
2 tbsp butter
4 boneless, skinless chicken breast
1 garlic clove, finely chopped
1 onion, chopped finely
1 chicken bouillon cube
125ml water
175ml milk
300ml double cream
6 spring onions, sliced diagonally
35g freshly grated Parmesan cheese
450g dried fettuccine
fresh leaf parsley, chapped to garnish
salt and pepper to season

Steps:

  • Using a heavey based frying pan, heat the oil and the butter and add the garlic to a low heat. After a minute add the chicken breasts to the pan and cook for 5 minutes on each side, or until the juices are no longer pink.
  • When ready, remove the chicken breast from the pan and slice diagonally into thin strips and set aside.
  • Meanwhile, add the onions to the used pan and cook gently for 5 mintues until they become soft.
  • Crumble the bouillon cube over the top and add the water. Bring to the boil and leave to simmer for around 10 minutes.
  • Once the liquid has reduced stir in the cream, milk, Parmesan and spring onions. Season to taste with salt and pepper. Boil once again then leave to simmer for around 10 minutes until the sauce has thickend.
  • While the sauce is thickening boil a pan of lightly salted water with a little olive oil. Add the fettuccine and cook for 5 minutes till tender yet still firm or to the guidlines on the packet. Drain and transfer to a warmed bowl. Layer the chicken slices over the top and once the sauce is ready pour over the top of the chicken. Garnish with parsely and serve.

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
  • Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a large skillet over medium-high heat, heat oil, then cook chicken until browned on both sides and cooked through. Dice chicken, set aside, and cover to keep warm.
  • Wipe skillet clean, then melt butter over medium-high heat. Stir in garlic and cook, 1 to 2 minutes. Sprinkle flour over butter and garlic and stir until thick.
  • Gradually whisk in heavy cream until a smooth sauce is formed, then add salt and pepper and stir in Parmesan until melted.
  • Stir in chicken and penne, then top with pepper, thyme or parsley, and more Parmesan. Serve immediately.

1 lb chicken ((skinless, boneless chicken breasts or tenderloins))
1 teaspoon paprika
1 teaspoon Italian seasoning ((thyme, oregano, basil - combined))
salt (to taste)
1.5 cups heavy cream
1/2 cup Parmesan cheese (shredded)
5 tomatoes ((medium, chopped in large cubes))
3 cups fresh spinach (or 1 cup cooked spinach)
5 garlic cloves (minced)
1/4 teaspoon red pepper flakes (crushed)
6 bacon strips (cooked, drained off fat, and chopped)
10 oz penne pasta ((for gluten-free version, use gluten-free brown-rice penne))
1/2 cup Parmesan cheese (shredded, for serving)

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet, on medium-high heat. Add chicken and cook on one side on medium-high heat for 4 minutes. While it cooks, sprinkle the uncooked sides of the chicken with paprika, Italian seasoning, and salt. Flip the chicken over, and cook on the other side for 3 more minutes on medium-high heat. Reduce heat to low-medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.
  • To the same pan (but without chicken), add heavy cream and bring to boil. Only after the heavy cream starts boiling, add shredded Parmesan cheese. Immediately reduce to simmer (low-medium heat) and stir, while simmering, until the cheese melts and the sauce is creamy, for about 1 or 3 minutes.
  • To the same pan with the creamy sauce, add chopped tomatoes, fresh spinach, garlic, crushed red pepper. Stir in the sauce on medium heat just until the spinach starts to wilt and sinks into the sauce. Add 1/3 of the cooked chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Remove from heat.
  • In the meantime bring a large pot of water to boil, add pasta, and cook according to instructions (usually 10 to 15 minutes). Drain the pasta.
  • Add cooked pasta to the skillet with the sauce and reheat on low heat. When ready to serve, top the pasta with the remaining half of bacon (cooked, drained of fat, chopped, gently reheated) and the remaining 2/3 of the cooked chicken (sliced into small strips, gently reheated). This is done for presentation purposes.
  • When serving, top the pasta with 1/2 cup of shredded Parmesan cheese.

2 tablespoons olive oil
1 1/2 pounds boneless skinless chicken breast (cut into small pieces)

1 cup chicken broth
1 teaspoon Italian seasoning

Steps:

  • Cook pasta to al dente according to package directions. Drain and set aside until ready to use.
  • In a large, deep skillet, heat olive oil. Add chicken and season with a pinch or two of salt and pepper. Cook until chicken is no longer pink, about 5 minutes. Transfer to a plate and set aside with the pasta.
  • Add 3 tablespoons of butter to the skillet and melt, then stir in garlic and cook for 1 minute. Stir in flour and italian seasoning cook for about 1 minute or until golden. 1 pound skinless, boneless chicken breast halves - cubed

½ tablespoon cornstarch
2 tablespoons butter
¼ cup chopped prosciutto
1 tablespoon chopped fresh garlic

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain, and set aside.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Cook and stir chicken cubes, reducing heat if necessary, until no longer pink in center and juices run clear. Set aside.

1 pkg penne pasta
3/4 c heavy cream
2 boneless chicken breasts, cut into cubes
4-5 piece of bacon, roughly chopped
1 c asiago cheese, grated
1 c onion, chopped
2 clove garlic, roughly chopped
1 can(s) diced tomatoes (approx 15 oz, but add more if you like more tomatoes)
1 Tbsp basil, dried
1 Tbsp parsley flakes
1 Tbsp oregano, dried
3 tsp sugar
1/4 tsp pepper
2 Tbsp butter
2 Tbsp olive oil

  • 1. Cook pasta noodles according to instructions. Strain and set aside in a large bowl.
  • 2. Heat oil in large skillet. Add chicken and cook until done. Place in bowl and set aside.

CHICKEN PESTO PENNE

We had a wonderful pasta dish at a local restaurant and I have spent time recreating and (blush blush) I think improving on it. This is not low fat, but it is nice for a once in a while treat. If you want to indulge even more, perhaps for company, (and make it taste even better) use full fat cream instead of the half and half! I use bought, jarred pesto but homemade would be even better. I hope you enjoy it!

1 lb penne rigate (the kind with ridges, 4 cups dry)
1 lb boneless chicken breast, sliced 1/4 inch thick and in pieces
1 cup onion, minced
1 cup mushroom
2 garlic cloves
2 cups half-and-half cream
2/3 cup pesto sauce
1 cup sun-dried tomato, chopped
1/2 cup parmesan cheese, fresh grated (only the real stuff, not in the green can!)
1/4 cup fresh basil, chopped (optional)

Steps:

  • Season and saute the chicken breast. Remove from the pan and keep warm.
  • Meanwhile, cook the penne in salted boiling water.
  • In the same pan as the chicken breast, saute mushrooms and onion. When almost done, add garlic and saute until fragrant.
  • Add cream and pesto and bring to a boil. Put the chicken back in the pan and add the sun-dried tomatoes Simmer gently for 5 to 10 minutes to thicken.
  • Add most of the parmesan (reserving a little for the top).
  • Drain the penne saving some of the water.
  • Add the penne to the sauce and stir. Add reserved water if needed to thin the sauce.
  • Serve penne topped with the saved parmesan and basil if using.
  • Serve.

  • Place the oil in a sauce pan on medium heat.
  • Add the chili rub, garlic/shallots and cook until soft.
  • Add the wine and cook until reduced by half.
  • Add the chicken stock and bring to a simmer.
  • Add the heavy cream, milk, salt and pepper and bring to a simmer. With a mixer running on medium speed, add the roux, cheese and basil. (Make sure to add the roux a little at a time so that it will fully incorporate into the sauce.)
  • Strain mixture.
  • Chill until use.

  • Heat sauté pan and add olive oil.
